- In 3 1/2- to 4-quart slow cooker, mix all ingredients. Cover; cook on Low heat setting 8 to 9 hours or until lentils are tender. Stir well before serving.

CROCK POT SPLIT PEA AND LENTIL SOUP
For a truly vegetarian soup, substitute vegetable bouillon for the chicken soup base. This recipe almost overflowed my 4-quart crockpot, you might want to halve the ingredients. I cooked it on high for the entire 8 hours because it was so full, but if you halve it, cooking it on low for the same amount of time will work fine.

Steps:
- Dump it all in the crock pot.
- Cook on high for 8 hours or until beans are soft.
- If you like it creamy, puree some or all of it with an immersion (hand held stick) blender.
- If you don't have Italian seasoning, any combination of oregano, basil, sage, rosemary, thyme and marjoram will work.
- Serve with crispy French or Italian bread.

- Cover and cook on low heat setting 8 to 10 hours or until peas and vegetables are tender.
- Place 2 cups of the soup in blender or food processor. Cover and blend on medium speed until smooth; pour into bowl. Repeat with 2 more cups soup. Stir all blended soup into soup in slow cooker.

SLOW COOKER SPLIT PEA SOUP WITH BACON AND HASH BROWNS
I use bacon instead of ham and frozen hash brown potatoes in this pea soup. It's a good winter comfort food and smells wonderful while cooking. It freezes well, so when my husband and I are busy all day, its a quick dinner for us. I add a sprinkle of red pepper flakes to spice it up a bit. You can also cook whole bacon strips in the microwave until lightly browned. Transfer to paper towels and let cool; crush or tear into small pieces.

- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until lightly browned, about 5 minutes. Drain on paper towels.
