Filled with eggs, cheese, bacon, and diced potatoes, this Breakfast Quiche is hearty and filling. It's the perfect breakfast, brunch, lunch or dinner.

1 ready-made deep pie crust or homemade pie crust
6 large eggs
1 cup milk or half-n-half
1 large russet potato (, diced small and parboiled or 1 (15-ounce) can diced potatoes, drained)
1/2 pound bacon (, cut into pieces)
2 green onions (, sliced)
1/8 cup onion (, diced)
2 tablespoons fresh parsley (, minced)
1/2 teaspoon ground cayenne pepper [See Note 1]
1/4 teaspoon smoked paprika [See Note 2]
1/2 cup shredded cheddar cheese
Kosher salt/pepper

Steps:

  • Preheat oven to 350 degrees F
  • In a deep pie pan, roll out pie crust to cover pan with 1/4 inch excess, rolled down to form an edge.
  • In a skillet brown bacon to desired doneness, drain on paper towels reserving 1-2 tablespoons grease.
  • Add potatoes to bacon grease, brown on all sides add onions, salt & pepper to taste and cayenne pepper (optional).
  • Layer potato/onion mixture then meat, parsley, cheese into pie plate, spread evenly to make sure all surface is even.
  • Whisk eggs with milk or half-n-half, pour over mixture, tilting pan, if necessary, to fill all space.
  • Place pie in preheated oven, bake for 30 to 45 minutes or until eggs are set and cheese is golden brown.

1/2 g (15 oz.) ready-to-use refrigerated pie crusts (1 crust)
3 KRAFT Big Slice Swiss Cheese Slices, cut into quarters
6 g Canadian bacon, cut into bite-sized pieces
4 g eggs
3/4 g milk
1/4 g green onion slices
1/4 g KRAFT Shredded Sharp Cheddar Cheese
1 g Roma tomato, thinly sliced

Steps:

  • Preheat oven to 400°F. Prepare pie crust as directed on pkg. for unfilled 1-crust pie, using 9-inch pie plate sprayed with cooking spray. Arrange Swiss cheese pieces evenly on bottom of pie crust; top with the Canadian bacon.
  • Beat eggs and milk with wire whisk until well blended; pour into crust. Sprinkle with onions and shredded cheese; top with tomato slices.
  • Bake 15 min. Reduce heat to 350°F; continue baking 25 to 30 min. or until center is set and top is lightly browned. Let stand 10 min. before cutting into 6 wedges to serve.

1 cup all-purpose flour
3/4 teaspoon salt, divided
1/2 cup plus 3 tablespoons cold butter, divided
1/2 cup 4% small-curd cottage cheese
3 large sweet onions, sliced (about 6 cups)
4 ounces Canadian bacon, diced
1/4 teaspoon pepper
3 large eggs, lightly beaten
1 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350°. In a small bowl, mix flour and 1/4 teaspoon salt; cut in 1/2 cup butter until crumbly. Gradually add cottage cheese, tossing with a fork until dough holds together when pressed. Shape into a disk., On a floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge., In large skillet, heat remaining butter over medium heat. Add onions; cook and stir until golden brown. Stir in Canadian bacon, pepper and remaining salt. Remove from heat; add eggs and cheddar cheese. Pour into crust., Bake on a lower oven rack 40-45 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting.

Nonstick vegetable oil spray
1 1/4 pounds russet potatoes, peeled, sliced into 1/4-inch rounds
1 tablespoon olive oil
1 cup chopped onion
1 cup chopped red bell pepper
1/2 teaspoon dried thyme
1 cup diced Canadian bacon
8 large eggs
1/4 teaspoon salt
1/4 teaspoon ground black pepper
4 ounces smoked cheddar cheese, grated (about 1 cup packed)

Steps:

  • Preheat oven to 350°F. Spray 10-inch glass pie dish with vegetable oil spray. Steam potato rounds until just tender, about 6 minutes. Transfer to rack and cool. Line prepared pie dish with enough potato rounds to cover, overlapping slightly (reserve any remaining potatoes for another use).
  • Heat olive oil in heavy large saucepan over medium-high heat. Add onion, red bell pepper and thyme and sauté 5 minutes. Add Canadian bacon; sauté until heated through, about 1 minute. Spoon bacon mixture over potatoes in pie dish.
  • Whisk eggs, salt and pepper in large bowl to blend. Mix in cheese. Pour egg mixture over bacon mixture in dish. Bake quiche until set in center, about 35 minutes. Cool 20 minutes. Cut into wedges. Serve warm or at room temperature.

vegetable oil cooking spray
6 slices bread, your choice
1 cup diced Canadian bacon or 1 cup lean ham
1/2 cup red bell pepper, finely diced
2 green onions, thinly sliced
1 cup low-fat milk
1/2 cup egg substitute (or 2 more eggs)
2 whole eggs
1/2 cup grated parmesan cheese
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 350°F.
  • Spray a 9-inch pie dish with vegetable oil spray.
  • With a rolling pin, flatten each slice of bread on a cutting board or flat surface.
  • Cut 5 slices in half vertically (from top crust to bottom crust).
  • Cut a 3-inch circle from the remaining slice with a round cookie cutter or a knife (this will go in the center of the crust).
  • Place slices of bread in the bottom of the pie dish, slightly overlapping each piece to form a crust, gently pressing in the bottom and partially up the side of the pie dish.
  • Place the reserved bread circle in the center and gently press down into the other slices of bread.
  • Bake for 10 minutes, or until bread is toasted and golden brown. Remove from oven and place on a cooling rack.
  • Scatter Canadian bacon evenly in the bottom of the crust. Top evenly with red bell pepper and green onions.
  • In a medium bowl, whisk together the milk, egg substitute, eggs, Parmesan cheese, oregano, salt, and pepper, until blended.
  • Carefully pour egg mixture over the meat and vegetable filling and place the pie dish on a baking sheet.
  • Bake for 35 to 40 minutes, or until center is set. Remove from oven and let mixture rest 5 minutes before cutting into wedges.

8 large eggs
1 ¼ cups heavy cream
1 cup milk
1 teaspoon garlic powder

1 cup shredded Cheddar cheese
5 slices bacon, cooked crisp and chopped

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a deep dish pie pan with nonstick cooking spray and set aside.
  • Combine eggs, cream, milk, garlic powder, pepper, and salt in a large bowl. Whisk together until well blended. Dice baked potatoes. Stir potatoes and Cheddar cheese into egg mixture. Pour the mixture into the prepared pie pan.
  • Bake in the preheated oven for 45 minutes. Remove and sprinkled the cooked, chopped bacon over the top. 3 shallots, peeled and minced
2 cloves garlic, peeled and minced

1 1/2 teaspoons salt
Freshly ground pepper to taste
1/2 cups grated Gruyere cheese

Steps:
