2 tablespoons olive oil
1 cup diced onion
1 cup diced green bell pepper
1 tablespoon minced fresh garlic
1 pound ground beef, 80/20
½ teaspoon dry mustard
2 teaspoons chili powder
2 teaspoons kosher salt
¼ teaspoon freshly ground black pepper
½ cup uncooked long grain white rice
2 tablespoons tomato paste
1 14.5-ounce can diced tomatoes with juice
1 cup water
1 teaspoon Worcestershire sauce
1 cup shredded cheddar cheese, optional and not shown in our photo

Steps:

  • In a skillet that has a tight fitting cover, heat olive oil over medium high.
  • Add onion, peppers, garlic, ground beef, dry mustard, chili powder, salt and pepper. Sauté until ground beef is no longer pink, breaking up beef as you cook.
  • Add rice and cook for two minutes letting rice absorb liquid.
  • Add tomato paste and cook for one minute.
  • Add canned tomatoes with juice, water and Worcestershire sauce. Stir, cover and simmer for 20 minutes covered.
  • After 20 minutes, remove lid and fluff the mixture then serve. If the mixture is too wet, cook for another few minutes with lid off.
  • If you are using the cheese, sprinkle on top for last few minutes of cooking time with lid on.

Campfire Girls' Texas Hash image

My mom was a Campfire Girl from Bluebirds until adulthood, when she was a summer camp counselor for several years. On some of those Bluebird overnights, they used to make this simple version of "Texas Hash". Transposed to the kitchen, it became a family favorite with her kids, and now I make it for my family. It's easy, cheap, fast, and satisfying. I add garlic and use no-salt-added tomatoes because I'm on a reduced-sodium diet due to pregnancy, and it turns out okay for us, but you may do as you wish, of course. This recipe would, of course, adapt easily to be a camp-out recipe.

1/2-1 lb lean ground beef
1 medium onion, chopped
2 -3 cloves garlic, minced (optional)
1 cup long-grain white rice, uncooked
1 (14 1/2 ounce) can peeled diced tomatoes
1 -2 tablespoon dark chili powder
water

Steps:

  • In a deep-sided saute pan, dutch oven, or other deep pan with tight-fitting lid, brown beef over medium-high heat.
  • (If not using lean ground beef, you will need to drain off all but a few Tbsp. of the fat at this point.) Add onion and garlic.
  • Saute until onion begins to get transparent.
  • Add rice.
  • Stir in and saute a little more, just until rice starts to get opaque.
  • Reduce heat to low.
  • Add tomatoes, with their liquid.
  • Stir well.
  • Stir in chili powder.
  • Add half the tomato can or so of water, and stir.
  • Cover and cook for 15 minutes.
  • Remove lid and stir again.
  • Add 1/3 to 1/2 can more water, as necessary.
  • Make sure you stir thoroughly so that none burns to the sides.
  • Cook another 10 to 15 minutes, or until rice is done and all water is absorbed.

1 large onion, chopped
2 tablespoons canola oil
2 garlic cloves, minced
4 large potatoes, peeled and cubed (about 2 pounds)
1 pound smoked kielbasa or Polish sausage, halved and sliced
1 can (4 ounces) chopped green chiles
1 can (15-1/4 ounces) whole kernel corn, drained

Steps:

  • In a large ovenproof skillet over medium heat, cook and stir onion in oil under tender. Add garlic; cook 1 minute longer. Add potatoes. Cook, uncovered, for 20 minutes, stirring occasionally. , Add kielbasa; cook and stir until meat and potatoes are tender and browned, 10-15 minutes. Stir in chiles and corn; heat through.

2 -3 large onions, chopped
1 garlic clove, minced
1 green bell pepper, seeded & chopped
1 (28 ounce) can diced tomatoes
1 (10 ounce) can Rotel Tomatoes
1 cup uncooked long-grain rice
2 teaspoons chili powder (or more to taste)
1 -2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Lightly grease a 2-quart casserole dish.
  • Brown beef and onions in a large skillet over medium-high heat.
  • When onions are translucent, add garlic and green pepper; cook until green pepper is softened.
  • Remove from heat.
  • Stir in remaining ingredients.
  • Transfer mixture to the casserole dish and cover with lid or foil.
  • Bake at 350 degrees F for 45 minutes.
  • Remove cover and bake for 15 minutes longer.

1 cup cooked rice

  • Add chuck and stir until pink has gone from meat.

1 -1 1/2 lb ground beef
1 green bell pepper, chopped
dried onion flakes (about a TBLS more or less, to taste)
1 (1 lb) can tomatoes (more or less to taste)
1 beef bouillon cube (more or less to taste)
1/2 cup raw rice

Steps:

  • Brown ground beef in large skillet.
  • Drain.
  • Add green pepper, onion flakes, tomatoes, bouillon, and rice.
  • Break up tomatoes if using whole.
  • Cover and cook over low heat until rice is done and mixture is thick.
  • May have to add water and more bouillon to taste.

1 lb lean ground beef
1/2 onion, chopped
1 celery, chopped
15 ounces canned tomatoes, diced
1/2 green pepper, chopped
1/2 cup uncooked rice
1 teaspoon minced garlic
1/2 teaspoon chili powder
2 teaspoons salt
1/4 teaspoon pepper
1 1/2 teaspoons parsley

Steps:

  • Lightly spray a 9x13-inch baking dish with a cooking spray (Pam, or similar); set aside. Preheat oven to 375º.
  • Sauté the beef, onion and celery in a large skillet over medium heat until no pink remains in the beef and the onions are clear. Place the meat mixture in a colander to let the excess grease drain.
  • Return the meat mixture to the skillet. Add the tomatoes, green pepper, rice, garlic and all remaining ingredients (spices/herbs) to the skillet. Stir well.
  • Pour the meat/rice mixture into the prepared 9x13-inch baking dish. Cover the baking dish, and bake in a 375º oven for 30 minutes, or until the rice is cooked and soft.

A very delicious, yet simple comfort food that everyone enjoys. Many, many ago, we were invited for dinner. As the hostess served this from the crock pot, I kicked my "meat and potatoes" DH under the table, knowing he was wondering "What is that???" He licked his plate clean, commented how good it was, and went back for seconds...and thirds. The 4 of us ate the entire 6 servings! On cold winter evenings, DH still requests this often. POTLUCK SUGGESTION: When "hash" is done and still very hot, spread in 9x13-inch casserole dish, top with spring onions and cheese; cover with foil or lid. Cheese will be melted by the time you arrive. You'll return with an empty dish!
