This is a tradition at the table when my girlfriends and I go up north for a girls' weekend. The husbands and kids are left at home, but the slow cooker comes with us! -Julie Butsch, Hartland, Wisconsin

Number Of Ingredients 10

1 pound lean ground beef (90% lean)
1 large sweet onion, chopped
1/2 cup packed brown sugar
1/4 cup ketchup
3 tablespoons cider vinegar
2 tablespoons yellow mustard
1 can (16 ounces) butter beans, drained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) pork and beans
1 can (15-1/4 ounces) lima beans, rinsed and drained

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain., Transfer to a 3-qt. slow cooker. Combine the brown sugar, ketchup, vinegar and mustard; add to meat mixture. Stir in the beans. Cover and cook on low until heated through, 4-5 hours.

In the winter months I try to cook a pot of something every week. I love making soups, stews and stick to your ribs meals that will last for more than one meal. This week it's my Calico Chili. You can easily change this up and use ground turkey or no meat at all, just add a few more beans.

Number Of Ingredients 15

1 lb lean ground beef, or ground turkey (omit for vegan)
4 celery stalks diced
1 onions, yellow, medium diced
1 can(s) 14.5 oz. diced tomatoes
1 can(s) 46 oz tomato juice
5 can(s) 15.5 oz beans - i use 2 dark red kidney, 1 black bean,1 great northern, 1 pinto. but you can use any combo you like
1 Tbsp fresh cilantro - chopped finely
2 Tbsp fresh parsley - choppen finely
1 tsp salt -or to taste
1/2 tsp pepper - or to taste
1 Tbsp chili powder
1/4 tsp ground cumin
1 pinch ground cinnamon - don't over do on this - you only need a hint of the cinnamon flavor
1 Tbsp sugar
shredded cheese & sour cream for garnish

Steps:

  • 1. In a large dutch oven, brown meat with celery & onion, cilantro & parsley on high heat. Add salt, pepper, and about half of the other spices (excluding sugar). Stir and chop up meat while browning.
  • 2. While meat is browning, open beans and rinse and drain in a colander. When meat is brown, add all of the beans, the diced tomatoes and most of the tomato juice. Stir in the remainder of the spices and the sugar. Add the remaining tomato juice if there is enough room in the pan. Stir, bring to a boil, turn heat down to low and simmer for at least 1 hour.
  • 3. If making the vegan version add 2 more cans of beans. The more variety the better.
  • 4. Like anything made with tomatoes, the longer this cooks, the better! Consider making it a day ahead. Serve with a sprinkle of shredded cheese (cheddar is best) and a dollop of sour cream. Corn bread is a great side dish.

½ cup bacon, chopped
1 pound lean ground beef
1 (15 ounce) can pork and beans
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can butter beans
1 (15 ounce) can lima beans, drained
½ cup ketchup
1 cup packed brown sugar
1 cup chopped onion
3 tablespoons white wine vinegar
1 teaspoon mustard powder
½ cup chopped celery

Steps:

  • Preheat oven to 350 degrees F (175 C).
  • Place bacon and ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
  • In a four quart casserole dish, mix together the bacon, ground beef, pork and beans, kidney beans, butter beans, lima beans, ketchup, onion, vinegar, dry mustard and celery.
  • Cover and bake for 1 hour.

CHILI INGREDIENTS
2 medium (or large) steaks (grilled and chilled, cut up small )
3 c water (or tomato juice)
3 large onions (chopped)
6 - 8 large tomatoes (cut up)
2 large (or 1 huge) zucchini (chopped)
1 large red bell pepper (chopped)
1 large green bell pepper (chopped)
4 clove garlic (minced)
1 bunch cilantro, fresh (chopped)
1 can(s) (15-16 ounces) whole kernel corn
2 Tbsp basil, dried
1 Tbsp ground cumin
1 tsp salt (optional)
1 tsp ground black pepper
2 tsp garlic powder (do not use garlic salt!)
1/4 tsp ground cayenne pepper
2 can(s) (large) favorite cheap spaghetti sauce
2 can(s) black beans
2 can(s) kidney beans
3 can(s) chili beans (already seasoned)
OPTIONAL INGREDIENT
1 large can tomato paste (for a thicker chili)

Steps:

  • 1. Cut up the chilled steak into very small pieces. Place in large kettle with the water (or tomato juice). Bring to a boil. Simmer for about 10 minutes while chopping veggies up.
  • 2. Chop up the onion, tomato, peppers and zucchini. Add to the kettle with the steak (you can add more water or juice if desired). Bring to a full boil. Reduce heat and simmer until all the veggies are cooked (about 15 minutes).
  • 3. Chopped Zucchini can be chopped large or small.
  • 4. Add the pasta sauce.
  • 5. Add canned beans and corn.
  • 6. Add the spices. Simmer for 10 minutes
  • 7. Serve! *** If you like a thinner chili, add more liquid. If you want a thicker chili add a large can of tomato paste.

LORI'S CALICO CHILI

This is a hearty, spicy chili,perfect for winter nights. Cornmeal Cheddar biscuits are a great combination.

2 lb lean ground chuck
1 lb breakfast sausage
2 medium onions, chopped
1 medium bell pepper, chopped
2 stalk(s) celery, chopped
1- 15 oz can(s) kidney beans
1 large can(s) pinto beans
1 can(s) whole kernel corn, drained
1 can(s) tomatoes with green chilies
1 can(s) chili ready diced tomatoes
1 can(s) tomato paste
3-4 Tbsp steak sauce (i used an a-1 type)
seasoned salt (to taste)
ground red pepper (to taste)
2 pkg chili seasoning
2 Tbsp chili powder
1 tsp cumin
hot sauce to your liking!

Steps:

  • 1. Brown meat with onions, pepper, and celery. Drain. I put it in a dutch oven at this point.
  • 2. Add all other ingredients. Allow to simmer until the flavors marry. About 30 minutes-1 hour.

CALICO CHICKEN CHILI

2 Tbsp olive oil, extra virgin
1 lb chicken breasts, boneless and skinless, cut into small cubes
1 medium onion, chopped
3 clove garlic, minced
1 (16-oz) can garbanzo chick peas, drained
1 (15.5-oz) can black beans, drained and rinsed
1 (15.5-oz) pinto beans, drained
1 (15-oz) can whole kernel sweet corn, drained
1 (10-oz) can diced tomatoes and green chiles (i used mild rotel)
1 (14.5-oz) canned diced tomatoes
1 (4-oz) can diced green chiles
3 c chicken broth
1/2 to 1 Tbsp oregano, dried
1 Tbsp chili powder
1 tsp cumin
salt and pepper to taste

Steps:

  • 1. Over a medium heat; cook chicken, onions and garlic until onions are transparent and there is no pink showing on chicken.
  • 2. Add remaining ingredients and bring to a slow boil. Reduce heat and simmer for at least 30 minutes.
  • 3. Taste test and add additional seasonings if desired.

CROCK POT CALICO CHICKEN CHILI

1 cup onion (chopped)
1 tablespoon cumin
3 chicken breasts (cut in strips)
1 (15 ounce) can white beans
1 (15 ounce) can chickpeas
1 (15 ounce) can white corn (drained)
1 (15 ounce) can black beans (rinsed)
1 (8 ounce) canned diced green chiles (chopped)
3 cups water
3 chicken bouillon cubes

Steps:

  • Heat butter in a skillet over medium heat, saute onion and cumin until soft; add chicken; saute cooked through; transfer to a slow cooker.
  • Add white beans,chick-peas,corn,black beans, chiles, water & bouillon cubes, mix well.
  • Cook on High for 4 hours ( or on stove top at a simmer for 1 1/2 hrs.).
  • Garnish with chopped tomatoes, sour cream, avocado, chopped cilantro, shredded cheese or tortillas.
