Super yummy and easy Cajun/Creole style pork ribs. Found recipe in, "Simple 1-2-3 Slow Cooker," cookbook.

2 cups baby carrots
1 large onion, coarsely chopped
1 large green bell pepper, cut into 1 inch pieces
1 large red bell pepper, cut into 1 inch pieces
2 teaspoons garlic, minced
2 tablespoons cajun seasoning, divided (or Creole Seasoning)
3 1/2-4 lbs pork ribs (country-style)
1 (14 1/2 ounce) can stewed tomatoes, undrained
2 tablespoons water
1 tablespoon water
1 tablespoon cornstarch
hot cooked rice

Steps:

  • Combine carrots, onion, bell peppers, garlic, and 2 tsp Cajun or Creole seasoning in slow cooker; mix well.
  • Trim excess fat from ribs. Cut into individual riblets. Sprinkle 1 tbsp Cajun or Creole seasoning over ribs; place in slow cooker over vegetables. Pour tomatoes with juice over ribs (slow cooker will be full.) Cover; cook on LOW 6 to 8 hours or until ribs are fork tender.
  • Remove ribs and vegetables from cooking liquid to serving platter. Let liquid stand 5 minutes to allow fat to rise. Skim off fat. Blend water, cornstarch, and remaining 1 tsp Cajun or Creole seasoning until smooth; stir into slow cooker. Cook, uncovered, on HIGH 15 to 30 minutes or until sauce is thickened. Return ribs and vegetables to sauce; carefully stir to coat. Serve with rice.

2 tablespoons celery salt
2 tablespoons ground black pepper
2 tablespoons white pepper
2 tablespoons brown sugar
1 tablespoon garlic powder
1 1/2 teaspoons cayenne pepper
1 1/2 teaspoons dried thyme
1 teaspoon dried sage
4 -6 country-style pork ribs (about 4 to 6 10-14 ounce size each)

Steps:

  • Combine seasonings. Rub half of this on ribs the night before you plan to cook them. Refrigerate.
  • Prepare the smoker.
  • Remove ribs from refrigerator 25-30 minutes prior to when you plan on placing them on smoker. Rub in remaining seasoning mixture.
  • Cook on smoker for 2.5 to 3 hours.** They should be done and quite tender with a coating of crispy spices on the suface.
  • **As with all methods of outdoor cooking and variations of fire temperatures, cook according to your particular fire.

3 lbs spareribs or 3 lbs back ribs
1 cup hickory smoke-flavored barbecue sauce
1/2 teaspoon hot pepper sauce
1/2 teaspoon ground red pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon celery seed
1/2 teaspoon crushed thyme leaves

Steps:

  • Place ribs aside.
  • Mix remaining ingredients in a medium saucepan, bring to a soft boil.
  • Place in a glass container along with ribs.
  • Marinate for 3 to 4 hours.
  • Wipe grill with olive oil and heat.
  • Place ribs on grill.
  • Grill for 8 to 10 minutes.
  • turning once.
  • Brush with marinade.

½ rack baby back ribs
3 tablespoons cajun seasoning
1 cup BBQ sauce

Steps:

  • Preheat oven to 250°F (120°C).
  • Rub the Cajun seasoning evenly over the top and bottom of the ribs.
  • Bake for 2 hours, until ribs are tender.
  • Increase oven temperature to 500°F (260°C).
  • Brush the BBQ sauce evenly over the top and the sides.
  • Bake for an additional 15 minutes, until the sauce is bubbly and caramelized.
  • Serve with the extra BBQ sauce!
  • Enjoy!

  • Mix the dry rub ingredients in small bowl, and the barbecue sauce ingredients in a small bowl, set aside.
  • Put the ribs on a large cutting board, flip them over so the curved side is up. Remove and discard the silver skin, I do this but getting my fingers under middle edge on one side and pulling up, most of the time I can get it off in one piece. Cut the ribs into 4 even portions. I do this because it fits nicely in the slow cooker.
  • Using your hands rub the dry rub on the ribs on both sides. Place the rib pieces into the slow cooker that has been sprayed with non-stick cooking spray. Take half of the barbecue sauce and spread over the ribs (being careful not to contaminate the rest of the barbecue sauce with the raw meat, that sauce will be used later when the ribs are cooked.) Add the 1/2 cup water around the ribs.
