OVEN BAKED CAJUN STICKY RIBS



Oven Baked Cajun Sticky Ribs image

These full-flavored ribs are marinated with a Southern-inspired rub, then baked in the oven and slathered with a basting sauce until they are juicy and tender.

2 tablespoons paprika
4 teaspoons kosher salt
1 tablespoon dried thyme
1 tablespoon garlic powder
1 tablespoon onion powder
2 teaspoons black pepper
1 teaspoon cayenne pepper
3 slabs pork baby back spareribs
3 cloves garlic (minced)
3 scallions (trimmed and chopped, white and green parts)
1 cup ketchup
¼ cup molasses
¼ cup (½ stick) unsalted butter
½ cup cider vinegar
¼ cup Dijon mustard
1 tablespoon Tabasco or other hot sauce
½ teaspoon coarse or kosher salt

Steps:

  • In a small bowl mix together the paprika, salt, thyme, garlic powder, onion powder, black pepper and cayenne pepper. Remove the membranes from the bone side of all of the racks of ribs using a sharp knife and peeling the membrane off. Rub the seasoning all over the ribs. Place the ribs in a container or a bowl, loosely covered, and refrigerate for 4 to 24 hours.
  • Before you're ready to cook the ribs, make the basting sauce. In a medium saucepan combine the garlic, scallions, ketchup, molasses, butter, vinegar, mustard, or hot sauce and stir over medium heat until the butter is melted. Let simmer for another 15 minutes or so. You can make this ahead of time and reheat.
  • Preheat the oven to 350°F. Line two rimmed baking sheets with aluminum foil. Place the ribs bone side down in a roasting pan and pour 1 cup of water into each pan. Roast until the meat starts to pull away from the bones, about 1 1/2 hours.
  • Remove the pans from the oven and drain off any remaining water. Baste the ribs generously with the sauce. Baste them on all sides with the sauce and bake for another 1/2 hour in the oven, bone side down. You can put them under the broiler for the last 2 minutes or so to give them a nicely caramelized top (watch them carefully so they don't burn!).
  • Let the rib racks sit for 10 minutes before cutting them into individual ribs and serving.

½ rack baby back ribs
3 tablespoons cajun seasoning
1 cup BBQ sauce

Steps:

  • Preheat oven to 250°F (120°C).
  • Rub the Cajun seasoning evenly over the top and bottom of the ribs.
  • Bake for 2 hours, until ribs are tender.
  • Increase oven temperature to 500°F (260°C).
  • Brush the BBQ sauce evenly over the top and the sides.
  • Bake for an additional 15 minutes, until the sauce is bubbly and caramelized.
  • Serve with the extra BBQ sauce!

2 cups baby carrots
1 large onion, coarsely chopped
1 large green bell pepper, cut into 1 inch pieces
1 large red bell pepper, cut into 1 inch pieces
2 teaspoons garlic, minced
2 tablespoons cajun seasoning, divided (or Creole Seasoning)
3 1/2-4 lbs pork ribs (country-style)
1 (14 1/2 ounce) can stewed tomatoes, undrained
2 tablespoons water
1 tablespoon water
1 tablespoon cornstarch
hot cooked rice

Steps:

  • Combine carrots, onion, bell peppers, garlic, and 2 tsp Cajun or Creole seasoning in slow cooker; mix well.
  • Trim excess fat from ribs. Cut into individual riblets. Sprinkle 1 tbsp Cajun or Creole seasoning over ribs; place in slow cooker over vegetables. Pour tomatoes with juice over ribs (slow cooker will be full.) Cover; cook on LOW 6 to 8 hours or until ribs are fork tender.
  • Remove ribs and vegetables from cooking liquid to serving platter. Let liquid stand 5 minutes to allow fat to rise. Skim off fat. Blend water, cornstarch, and remaining 1 tsp Cajun or Creole seasoning until smooth; stir into slow cooker. Cook, uncovered, on HIGH 15 to 30 minutes or until sauce is thickened. Return ribs and vegetables to sauce; carefully stir to coat. Serve with rice.

1 cup hickory smoke-flavored barbecue sauce
1/2 teaspoon hot pepper sauce

1 lb pork spareribs, cut 1/4 pound portions
3/4 cup paprika
6 tablespoons onion powder
6 tablespoons garlic powder
1/4 cup black pepper
3 tablespoons salt
3 tablespoons cayenne pepper
3 tablespoons thyme, crushed
3 tablespoons oregano, crushed

Steps:

  • Place ribs in a pan of boiling water. Simmer, covered 45 minutes and drain.
  • Combine seasonings in a bowl and sprinkle on both sides of warm ribs, rubbing in slightly.
