CAJUN CRAB DIP

I was looking for a recipe similar to the dip we purchase at the grocery store. This is fairly close. Be careful your Cajun Seasoning is not too salty.

1/2 lb imitation crabmeat
8 ounces cream cheese, softened
1/3 cup sour cream
1 tablespoon hot sauce
1/2 tablespoon Worcestershire sauce
1/2 tablespoon cajun seasoning
1/2 cup shredded cheddar cheese
1 bunch green onion, thinly sliced
1/2 teaspoon garlic powder
1/2 teaspoon italian seasoning

Steps:

  • Mix cream cheese, sour cream, hot sauce, Worcestershire Sauce, Cajun Seasoning, garlic and Italian Seasoning in processor or with electric mixer.
  • Gently fold in cheddar cheese, onions and crab.
  • Refrigerate at least 2 hours and adjust seasonings as desired.

This is one of my favorite snacks. It can be served with crackers, or I like to eat it with the big corn chips (Scoops) or serve it in jumbo pasta shells. It's easily doubled if you want to use a whole brick of cream cheese and a pound of imitation crabmeat. This is fairly chunky; if you want it to be more spreadable, increase the amount of cream cheese/mayonnaise. Cook time is chill time.

4 ounces cream cheese, softened
1/4 cup mayonnaise
1 teaspoon paprika
1/4 teaspoon black pepper
1/8 teaspoon garlic powder
1/8 teaspoon ground red pepper
8 ounces imitation crabmeat or 8 ounces surimi
1 roma tomato, chopped
1/4 cup chopped green onion

Steps:

  • In a small mixing bowl, beat cream cheese, mayonnaise, paprika, black pepper, garlic powder and ground red pepper with an electric mixer on medium speed till well combined.
  • Stir in the imitation crab, chopped tomato and green onions.
  • Cover and chill for 3-24 hours.

1/2 c mayonnaise
3 scallions chopped
2 clove garlic minced
1 tsp salt
2 tsp each worcestershire sauce, and prepared horseradish
2 Tbsp cajun seasoning
1 Tbsp sweet vermouth
1 lb lump crab meat
1/4 c each fresh parsley chopped and slivered almonds

Steps:

  • 1. Mix all ingredients together and let sit in fridge overnight to have flavors meld. Serve with crackers or veggies

1 tablespoon nonfat plain yogurt
3/4 cup fat-free cottage cheese
1/2 teaspoon paprika
3/4 teaspoon ground red pepper
1/4 teaspoon garlic powder
1/4 teaspoon thyme
1 (6 ounce) can crabmeat, drained
1/4 cup fine chopped green pepper
chili pepper, as garnish if desired
bread or cracker

Steps:

  • In a large bowl, beat the cream cheese, yogurt, cottage cheese, paprika, red pepper, garlic powder and thyme till well blended.
  • approximately 1 minute .
  • Stir in crab meat and green pepper.
  • Place in serving bowl, cover and chill.
  • Before serving, garnish with chili peppers, if you like.

This makes a lot, but it's so good, and a little different from most cheese dips. If you can't find crawfish tails, sub with lump crabmeat drained and rinsed and drained. Sure to be a hit at your next get together with family and friends

2 garlic cloves, grated
1/2 cup scallion, thinly sliced, divided
1 tablespoon butter
1 lb crawfish tail
1 lb processed cheese, block
20 ounces diced tomatoes with green chilies, drained
1/2 teaspoon kosher salt (to taste)
1/4 teaspoon black pepper, freshly ground, to taste

Steps:

  • In medium pot over medium high heat, saute garlic and white parts of scallions in butter until slightly tender.
  • Mix in crawfish or crab and cook for about 5 minutes on low.
  • Pour mixture in bowl and set aside.
  • Add cheese and tomatoes to empty pot and cook over medium low heat until melted and combined.
  • Stir in reserved scallion mixture.
  • Heat on low until well blned and very warm.
  • Season with salt and pepper to taste.
  • Garnish with sliced green scallion tops.
