Provided by Ellie Krieger

Categories     appetizer

Time 24m

Yield 12 servings (1 serving is 2 pieces)

Number Of Ingredients 10

1 dozen eggs
2/3 cup silken tofu, drained
1 tablespoon mayonnaise
1 tablespoon Dijon mustard
1/2 teaspoon hot sauce, plus more to taste
2 teaspoons prepared horseradish
2 tablespoons chopped chives
Salt
Freshly ground black pepper
1/4 teaspoon paprika

Steps:

  • Place the eggs in a large saucepan and cover with water. Place over high heat and bring to a boil. Reduce the heat to low and simmer for 9 minutes. Remove the eggs from water and run under cold water for about 1 minute or until cool enough to touch. Peel eggs under cold running water.
  • Slice the eggs in half lengthwise. Scoop out the yolks and discard 6 of them or save for another use. Set aside the whites.
  • Place the remaining yolks in a medium bowl and mash with the tofu, mayonnaise, mustard, hot sauce, horseradish and chives. Season with salt and pepper.
  • Spoon the mixture into the corner of a plastic bag and snip off the end. Pipe the yolk mixture into the egg whites. Arrange on a platter and sprinkle with paprika.

DELICIOUS DEVILED EGGS

Delicious Deviled Eggs image

From holiday parties to warm weather barbeques and potluck suppers, these classic deviled eggs will spice up any occasion.

Provided by Food Network

Categories     appetizer

Time 10m

Yield Makes 6 (2 halves) servings

Number Of Ingredients 6

6 hard-cooked eggs, peeled
1/4 cup mayonnaise
1/2 teaspoon McCormick® Mustard, Ground
1/2 teaspoon McCormick® Parsley Flakes
1/4 teaspoon seasoned salt
McCormick® Paprika

Steps:

  • 1. Slice eggs in half lengthwise. Remove yolks; place in small bowl. Mash yolks with fork or potato masher.
  • 2. Stir in mayonnaise, mustard, parsley and seasoned salt until smooth and creamy. Spoon or pipe yolk mixture into egg white halves. Sprinkle with paprika.
  • 3. Refrigerate 1 hour or until ready to serve.
  • Gently place eggs in single layer in medium saucepan. Add enough cold water to cover eggs with 1 inch of water. Bring just to boil on medium-high heat. Remove from heat. Cover and let stand about 15 minutes for large eggs. (Adjust time up or down by 3 minutes for each size larger or smaller.) After 15 minutes, pour off the hot water and rapidly cool eggs by running them under cold water (or place in ice water) until completely cooled. Refrigerate and use within a week.

NO-YOLK DEVILED EGGS

No-Yolk Deviled Eggs image

The unhealthy parts of deviled eggs are the yolks and the devilish amounts of fat-usually in the form of mayonnaise-that most recipes call for mixing into the yolks. These deviled eggs are yolkless. The traditional seasoned mashed yolks have been replaced with seasoned mashed sweet potatoes mixed with mustard. They look just like the real thing. No one will miss the yolks-or the fat and cholesterol, either.

Yield serves 6

Number Of Ingredients 9

6 large eggs
1 small sweet potato
1 medium shallot, chopped very fine
4 cornichons, chopped fine
1 tablespoon Dijon mustard
1 teaspoon smoked paprika, plus more for dusting
Dash of Tabasco sauce
Salt and freshly ground black pepper
2 tablespoons fresh flat-leaf parsley, chopped fine

Steps:

  • Place the eggs in a medium saucepan and cover with water by 1 inch. Bring to a full rolling boil over high heat. Then turn the heat down slightly and cook the eggs at a rapid simmer for 5 minutes. Remove the pan from the heat and allow the eggs to sit in the hot water for 8 minutes. Drain the eggs and cover them with ice water. When the eggs have cooled, peel them and cut them in half; discard the yolks.
  • To make the filling, prick the skin of the sweet potato with a fork. Microwave it on high until it is tender, about 6 minutes, turning it once during cooking if you don't have a turntable. When the potato has cooled slightly, cut it in half and scoop the flesh into a medium bowl. Mash the sweet potato with a fork or potato masher until it is smooth. When the sweet potato has cooled completely, stir in the shallot, cornichons, mustard, 1 teaspoon smoked paprika, and Tabasco sauce. Season with salt and pepper to taste.
  • Spoon the sweet potato mixture into a pastry bag. (If you don't have a pastry bag, you can use a resealable plastic bag with one corner snipped off.) Pipe a mound of filling into each egg half. Place the eggs in the refrigerator, covering them very loosely with plastic wrap, and chill until cold.
  • Right before serving, sprinkle the egg halves with the smoked paprika and the parsley.

Time 20m

Yield 4 to 6 servings

Number Of Ingredients 15

12 large eggs
1/2 cup mayonnaise
1/4 cup dill pickle relish
1/4 cup finely diced celery
1/4 cup red or yellow pepper, finely diced
1/4 cup thinly sliced scallions
2 tablespoons Dijon mustard
1 teaspoon red wine vinegar
1 teaspoon Worcestershire sauce
1/2 teaspoon smoked paprika
1/2 teaspoon celery salt
Sriracha, as needed
Kosher salt and freshly cracked black pepper
Toast, vegetables, lettuce or radicchio, for serving
Fresh basil and cilantro, for serving

Steps:

  • Bring a large pot of water to a boil. Add the eggs, bring the temperature down to a simmer and set a timer for 12 minutes.
  • Combine the mayonnaise, relish, celery, peppers, scallions, mustard, vinegar, Worcestershire, vinegar, paprika and celery salt in a medium bowl. Season with sriracha to your preference and salt and pepper.
  • Run the eggs under cold water until cool enough to handle. Peel the eggs and place them in a large bowl. Use scissors to roughly chop them into chunks.
  • Add the mayonnaise mixture and season with salt and pepper. Fold in the sauce while mashing the eggs with a fork, like you would guacamole. You may want more or less sauce depending on the desired consistency.
  • Serve on toast, with vegetables or spooned into lettuce or radicchio cups. Top with basil and cilantro if desired.

  • Buffalo and blue cheese. Let's start off with a classic food combo—buffalo sauce and blue cheese! To make a dozen of these, mix together 1 tablespoon with the basic deviled eggs mix.
  • Ranch and bacon. Who doesn't love a good ranch and bacon combo? This deviled egg is like a cobb salad but without the salad. Mix in 1 tablespoon with the basic deviled eggs mix.
  • Dijon mustard and dill. A small twist on the usual classic! Adding mustard to deviled eggs is a common mixture, so let's take it up a notch by bringing some dijon to the mix.
  • Sriracha and lime. Who loves spicy? These deviled eggs are great to serve with some chips, salsa, and margaritas, of course! Add 1 tablespoon of Sriracha and the juice of 1 lime.
  • Goat cheese. Anyone else a huge goat cheese fan? Add in 2 ounces of goat cheese to the basic deviled eggs mix. You may want to pull out the electric mixer for this again because the cheese is firmer than the other sauces these recipes call for.
