This is the best chicken that I have ever had! I purchased a Big Green Egg Smoker and was looking for new recipes and discovered this. I found the recipe on the website The Smoker King (smokerking.com). I think the key part of this recipe is the injection. It makes the chicken so tender and juicy. The chicken is injected with a butter mixture. Leave it to me to find the only unhealthy recipe for chicken on the internet!

one whole chicken (3 or 4 lbs.)
3 garlic cloves
3 pieces of chopped onions
one 12 oz. beer
1/2 cup melted butter (room temperature)
2 tablespoons Tony Chachere's Seasoning (I used dizzy pig)
1 teaspoon garlic powder
1/2 cup vinegar
olive oil
tony chachere's seasoning to cover the outside of the chicken
1 cup apple cider
1/2 cup olive oil
spray bottle

Steps:

  • Directions:
  • 1. Whisk all injection ingredients together.
  • 2. Using a kitchen syringe, inject the liquid into various spots on the chicken. Try to be even as possible, injecting about 1/2 of the mixture into the breasts, and the other 1/2 throughout the rest of the chicken.
  • 3. Rub the chicken down with olive oil, and apply an even layer of Tony's Cajun Seasoning to the bird.
  • 4. Drink half of the beer, widen the opening at the top of the can, then put the garlic and onion in the can.
  • 5. Place the bird on the can. It should sit up by itself. You may have to prop the legs forward to make it sit up.
  • 6. Preheat your smoker to about 250 F degrees. I use hickory for chicken; charcoal works well too.
  • 7. Mix the mop ingredients in the spray bottle and shake before each use.
  • 8. Put the chicken on the smoker and spray the chicken with the mop about every 30 minutes to keep it moist.
  • 8. Smoke the chicken for 3-4 hours, or until the internal temperature of the thickest meat reaches 175 F Degrees.

If you don't yet have the Pampered Chef roasting set, you can still use any large roasting pan for the grill and a can of beer with or without a holder. You may also improvise by using an empty soup tin. If not using a beer can holder, prop the chicken up with the beer can inserted into the cavity and use the legs in tripod fashion. 1 medium green bell pepper, cut into 1-inch pieces (2.5 cm)
1 medium red bell pepper, cut into 1-inch pieces
1 medium yellow squash, cut into 1-inch pieces
1 medium zucchini, cut into 1-inch pieces

1 tablespoon smoked paprika (15 mL)
1 tablespoon garlic powder
1 teaspoon onion powder (5 mL)

1 whole broiler-fryer chicken, 3 1/2-4 pounds (1.6-1.8 kg)

Steps:

  • Prepare grill for indirect cooking over medium heat.
  • Combine seasonings in small mixing bowl and mix well.
  • In large mixing bowl, combine vegetables, oil and ½ tablespoon (7 mL) of the seasoning; toss to coat.
  • Trim excess fat from chicken, if necessary. Sprinkle remaining seasoning all over chicken.
  • Pour out or drink about one-fourth of the beer. Place beer can in can holder (if using) in the BBQ Roasting Pan & Can Holder, if using. Place chicken over can holder so that the can is upright in the cavity of the chicken. If not using the beer can holder, simply shove the chicken cavity over the beer can and prop upright using its legs to create a tripod effect. Arrange vegetables around chicken.
  • Place roasting pan on grid of grill. Grill, covered, 65-75 minutes or until thermometer registers 165°F (74°C) in thickest part of breast, rotating pan once during grilling. NOTE: if necessary when using charcoal, add 12 new coals on each side of grill after 30 minutes.
  • Remove roasting pan from grill. Carefully remove chicken from can holder.
  • Discard canned beverage and serve chicken with vegetables.

1 (16 ounce) can beer (tall boy)
2 tablespoons salt
1 teaspoon black pepper
3 tablespoons dry rub seasonings (your favorite)
2 tablespoons vegetable oil

Steps:

  • Set up your grill for indirect cooking.
  • On a charcoal grill, this means spreading the coals around the outer edges, but not directly below the food.
  • On a gas grill the outer burners are lit, but not the middle one.
  • Once the grill is covered (which it should always be for indirect grilling) the circulating heat works like a convection oven, so there is no need to turn the food.
  • Remove neck and giblets.
  • Discard.
  • Rinse chicken inside and out; pat dry with paper towels.
  • Rub chicken lightly with oil, then rub inside and out with salt, pepper and dry rub.
  • Set aside.
  • Open beer can and take several gulps (make them big gulps so that the can is half full).
  • Place beer can on a solid surface.
  • Grabbing a chicken leg in each hand, plunk the bird cavity over the beer can.
  • Transfer the bird-on-a-can to your grill and place in the center of the grate, balancing the bird on its two legs and the can like a tripod.
  • Cook chicken over high indirect heat, with the grill cover on for approximately 1 1/4 hours or until the internal temperature registers 165°F in the breast area and 180°F in the thigh, or until the thigh juice runs clear when stabbed with a sharp knife.
  • Remove from grill and let rest for 10 minutes before carving.

2 cups hickory chips or 2 cups oak chips
2 (12 ounce) cans beer (plus additional if needed)
1/2 cup your favorite barbecue rub
2 whole chickens, fat removed washed and blotted dry (3 1/2 to 4-pound)

Steps:

  • Place wood chips in bowl.
  • Pop tabs of each beer can, and make 2 additional holes in each top, using a church-key opener.
  • Pour half the beer from each can over the chips.
  • Add additional beer or water to cover the chips, soak them for 1 hour and drain.
  • Set up grill for indirect grilling.
  • Sprinkle 1 teaspoon barbecue rub in neck cavity and 2 teaspoons in main cavity of each chicken.
  • Add 1 tablespoon rub to each open, half-full can of beer.
  • (Don't worry if it foams up.) Season outside of each bird with 2 tablespoons rub.
  • Stand beer cans on work surface. Holding each chicken upright, lower it over can so that can goes into main cavity.
  • Pull chicken legs forward to form a sort of tripod.
  • The chicken should sit upright over the can.
  • Carefully transfer chickens to grill in this same position, placing them in center over drip pan away from heat. If using charcoal, toss half the wood chips on each mound of coals.
  • If using gas, place chips in smoker box.Barbecue chickens until nicely browned and cooked through, About 1 1/2 hours, keeping temperature about 350 degrees F.
  • (If using charcoal, replenish coals as needed.) The internal temperature of the birds (taken in thickest part of thigh) should be 165°F.
  • Carefully transfer birds to platter in same position.
  • To carve lift bird off of can, and discard can.
  • You can use any seasoning on the birds and other flavorful liquids - not just beer in the can.

This is the best chicken I have ever had done on the grill. It is to die for chicken. So moist and tender and the flavor...oh my... Someone on Zaar asked for my recipe a while ago. But I am just getting to input my recipes now, was way too busy. So every day I am starting to add a few. But if you want a delicious grilled drunken chicken this is the recipe to use. This chicken MUST BE marinated overnight in its spices. This makes a world of difference trust me.

2 whole chickens (3-4 lbs each)
2 (12 ounce) cans beer (your brand choice)
2 ounces Jack Daniels Whiskey
2 tablespoons dried rosemary (chopped)
2 tablespoons dried thyme (chopped)
2 tablespoons garlic (minced)
1 tablespoon paprika
1 tablespoon salt
1 tablespoon cracked black pepper
jack daniels barbecue sauce
4 aluminum foil, pie plates

Steps:

  • Wash your chickens inside and out with cold water and pat dry with paper towels.( I prefer Perdue chickens ).
  • Mix together the herbs, garlic, paprika, salt and pepper. Rub the chicken inside and out with this mixture. Cover and refridgerate overnight minimum This is a definate must --
  • GRILLING TIME:.
  • Preheat grill to medium heat.
  • Open cans of beer and take a sip or two but no more. Add one oz of Jack Daniels whiskey to each beer can ( you can take a sip of this too while your at it, but no more or chickens may not get cooked.
  • Put 2 foil pie plates together to make it a bit more sturdier. Place one beer can on the pie plate and place one chicken over the beer can so that the beer can is in the butt of the bird and the bird is standing up right. Tuck the wing tips under to keep them from burning or cover wings with aluminum foil. Repeat for the other chicken.
  • Carefully place the 2 chickens into the grill. Close the lid and grill for 60 to 70 minutes. Don't open too often you don't want to lose that nice heat. Baste with Jack Daniels BBQ Sauce 2 or 3 times during the last 20 minutes of grilling. You may have to loosely cover with aluminum foil if skin is getting too burned towards the end. I personally love the skin of this chicken when it is crispy but not burnt. Such flavor hiding in there. Chicken is cooked when it has reached an internal temp of 180°F.
  • Turn off the grill and remove the chickens. Very carefully now remove the chickens off the beer cans.Be very careful as there is probably still hot liquid inside the cans. We usually do it with 2 people, one holds down the can with mitts on of course and the other gently lifts off the chicken. Now carve and enjoy. Depends what you are serving with the chickens, serving portions can vary.

1 whole roasting chicken
butter
lemon pepper
garlic salt
3 garlic cloves
3 ounces beer

Steps:

  • Remove Innards from chicken and wash thoroughly.
  • Spread Butter all over outside of chicken (I can't believe it's not Butter spray works best) Coat chicken well with Garlic Salt and Lemon Pepper.
  • Place chicken standing up on beer can inserted in the bottom and place in a roasting pan uncovered.
  • Put Garlic Cloves up under the skin at top of Chicken and at bottom.
  • Place a few cloves inside cavity Put a few drops of Hot Sauce inside the cavity if desired.
  • Bake at 325 degrees for 4-5 hours.
  • The beer will keep chicken from drying out.
  • Check occasionally to make sure chicken is still standing upright on beer can and has not fallen over.
