CAESAR SALAD WITH GRILLED VEGETABLES



Caesar Salad with Grilled Vegetables image

Number Of Ingredients 22

1 head of romaine lettuce, torn apart or chopped
2 cloves of garlic, chopped
6 tablespoons olive oil
4 tablespoons lemon juice
2 tablespoons Worcestershire sauce
2 hard boiled eggs, mashed
6 tablespoons Parmesan cheese, grated
2 medium zucchini, grilled and chopped
1 cup of eggplant, grilled and chopped
1 small onion, grilled and chopped
1 large onion, sliced
2 zucchini, sliced
2 yellow squashes, sliced
1 eggplant, sliced
1/2 cup soy sauce
Juice of 2 medium oranges
1/2 stick (2-ounces) butter, melted
3 slices day-old bread, toasted and broken into bite-size pieces
1/2 teaspoon garlic salt
1/4 teaspoon dried rosemary
1/4 teaspoon dried sage
1/4 teaspoon dried thyme

Steps:

  • Place the romaine in a large wooden bowl. In a mixing bowl, combine the garlic, olive oil, lemon juice, Worcestershire sauce, eggs and cheese. Mix well and pour over the greens. Add grilled vegetables, cooled. Toss and serve with homemade croutons.;
  • Combine all of the vegetables except the eggplant in an airtight plastic bag. If you marinate the eggplant with the other vegetables, it will absorb all of the liquid, so marinate the eggplant separately in another bag. Mix the soy sauce and orange juice together and pour over the vegetables and seal the bags. Marinate at least 30 minutes.
  • Place the vegetables on a vegetable rack or on foil into which holes have been punched and place them on the grill. Cook until tender.
  • Melt the butter in a saute pan. Add the bread. Sprinkle the garlic salt and herbs on top of the bread. Toss the bread pieces constantly, until all of the butter has been absorbed.;

3/4 pound green beans, trimmed
1 pint grape tomatoes, halved
1 tablespoon olive oil, plus more for grill grates
Kosher salt and freshly ground pepper
2 strip steaks (about 1-inch thick), about 1 1/2 pounds total, trimmed of excess fat and halved
Chimichurri sauce, recipe follows
1/2 small garlic clove
1 tablespoon red-wine vinegar
1/4 cup fresh herbs, such as parsley, mint and cilantro
1 tablespoon extra-virgin olive oil
1 tablespoon water
Kosher salt and freshly ground black pepper

Steps:

  • Place a double layered piece of heavy-duty foil on a tray or cutting board; fold and gather edge to form a rim. Toss the green beans and tomatoes on foil with 1 tablespoon olive oil; season with salt and pepper.
  • Preheat a grill to medium. Lightly oil the grill grates and season the steak with salt and pepper. Slide the foil tray onto the grill; cook, tossing occasionally, until the beans char slightly and cook through, about 15 minutes.
  • Meanwhile, add the steaks to the grill; cook until desired doneness, about 5 minutes per side for medium-rare. Remove steaks to cutting board to rest 5 minutes. Slice, and serve steak and the vegetables with the Chimichurri Sauce.
  • Chimichurri Sauce:
  • Combine the garlic, vinegar, herbs, olive oil and water in small food processor; pulse until herbs are coarsely chopped. Season with salt and pepper.

1/4 cup olive or vegetable oil
1/4 cup fat-free cholesterol-free egg product
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1 teaspoon anchovy paste
1 large clove garlic, finely chopped
1 lb boneless beef top sirloin steak, 1 inch thick
1 tablespoon freshly ground pepper
1 head romaine lettuce, torn into bite-size pieces
1 cup garlic-flavored croutons
1/2 cup shredded Parmesan cheese (2 oz)

Steps:

  • Heat coals or gas grill for direct heat. In tightly covered container, shake all dressing ingredients until well blended. Refrigerate until serving time.
  • Sprinkle beef with pepper. Cover and grill beef over medium heat 15 to 18 minutes for medium doneness (160°F), turning once. Cut beef across grain into thin slices.
  • In large bowl, toss romaine, croutons, cheese and dressing. Top with beef slices. Serve with additional shredded Parmesan cheese if desired.

4 hard-boiled large egg yolks
4 anchovy fillets or 2 tablespoons anchovy paste
4 garlic cloves, minced
3 tablespoons Dijon mustard
2 tablespoons lemon juice
2 tablespoons red wine vinegar
1 tablespoon Worcestershire sauce
2 teaspoons coarsely ground pepper
1 teaspoon sugar
1 cup olive oil
1 beef top sirloin steak (about 1-1/4 pounds)
1 large bunch romaine, torn
2/3 cup shredded Parmesan cheese, divided
2 medium tomatoes, cut into wedges
2 cups Caesar salad croutons

Steps:

  • In a blender, combine the first 9 ingredients; cover and process until blended. While processing, gradually add oil in a steady stream. Cover and refrigerate., Grill steak, covered, over medium heat for 5-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., In a large bowl, toss the romaine, 1/3 cup Parmesan cheese and salad dressing. Divide among salad plates. Slice the steak; arrange steak and tomatoes on salads. Top with croutons and remaining Parmesan cheese.

2 packages (20 ounces each) refrigerated red potato wedges
3/4 teaspoon salt, divided
1 beef top sirloin steak (1-1/2 inches thick and 2 pounds)
2 tablespoons plus 2/3 cup creamy Caesar salad dressing, divided
1/4 teaspoon pepper
2/3 cup shredded Parmesan cheese
8 cups torn romaine
4 green onions, chopped

Steps:

  • Sprinkle potatoes with 1/2 teaspoon salt; divide between two double thicknesses of heavy-duty foil (about 18 in. square). Fold foil around potatoes and seal tightly. Grill, covered, over medium heat for 20-25 minutes or until tender, turning once. , Brush steak with 2 tablespoons dressing; sprinkle with pepper and remaining salt. Grill, covered, over medium heat for 22-26 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), turning once., Open foil carefully to allow steam to escape; transfer potatoes to a large bowl. This is one of my fathers favorite dishes in the world that he came up with about 2 years ago. It was a little different then, but it has only improved over the years.

Number Of Ingredients 7

2 porterhouse steaks (about 1 1/2 pound steaks)
salt
fresh cracked black pepper
2 red bell peppers or 2 yellow bell peppers
2 medium zucchini
1 lb cremini mushrooms or 1 lb button mushroom, cleaned
1/2 cup creamy caesar salad dressing

Steps:

  • Heat grill to 400F.
  • If using a gas grill, leave it on high the whole cooking time.
  • Season the steaks well with the salt and crack pepper, set aside Cut the peppers and zucchini in half, cutting the seeds out of the peppers, and throw them into a big bowl with the clean mushrooms.
  • Pour the Caesar dressing over them and toss to coat evenly, you may need more dressing depending on taste.
  • Season with salt and crack pepper.
  • Place everything on the grill and let cook for 2 minutes, give everything a 1/2 turn to get grill marks; cook for another 2-3 minutes.
  • Flip the steaks, peppers, and zucchini and repeat the cooking times.
  • Toss the mushrooms to cook evenly.
  • Remove everything from the grill, let the steaks rest for 2 minutes at least before serving.
  • Serve with a side of Caesar or Ranch dressing for dipping.
