Spicy Greek Cabbage with Rice -Lahanorizo image

Creamy and Comforting Traditional Greek Rice and Cabbage.

¼ cup olive oil
1 medium onion diced (about 1 cup or 4 oz or 115 grams)
½ of a small cabbage (about 10 oz or 300 grams sliced (not too thin)
½ tablespoon tomato paste
salt/pepper
About ½ teaspoon cayenne pepper
½ cup medium grain rice (uncooked)
Lemon and parsley for serving

Steps:

  • Heat olive oil in a medium pot
  • Add the onion and sauté until soft about 5-7 minutes
  • Add the cabbage and mix until cabbage is coated with the olive oil. Heat for 2-3 minutes (stirring) until cabbage has wilted somewhat.
  • Add about 1 cup hot water hot water and simmer for 20-30 minutes with pot covered until cabbage is soft. Add more water if needed.
  • Once cabbage is soft add the tomato paste that has been dissolved in 2-3 tablespoons of water, and ½ teaspoon salt, freshly ground pepper and cayenne pepper and mix.
  • Add ½ cup (uncooked) medium grain rice, stir so that rice is coated with the oil.
  • Add 1 ¼ cup hot water and simmer (pot covered) until rice is almost cooked (about 15 minutes). Add more hot water in small amount if needed. Once rice is ready, but there is still a bit of water left in the pot, remove from heat and keep covered until rest of water is absorbed. Rice should be somewhat creamy.
  • Serve with plenty of lemon and sprinkle with parsley.

3 cups coleslaw mix (from 16-oz bag)
2 cups refrigerated or frozen shredded hash brown potatoes
1 1/4 cups uncooked instant rice
1 package (8 oz) cream cheese, softened
2 tablespoons chopped fresh or 1 teaspoon dried basil leaves
1 sheet frozen puff pastry (half of 17 1/4-oz package), thawed
1 can (10 3/4 oz) condensed tomato soup
2 tablespoons chopped fresh or 1 teaspoon dried basil leaves
1/4 cup water

Steps:

  • Heat oven to 400°F. Grease 9-inch deep-dish pie plate with shortening. In 3-quart saucepan, heat 1 1/2 cups water to boiling. Stir in bouillon cube, coleslaw mix and potatoes. Return to boiling. Reduce heat to medium; cover and cook 5 minutes.
  • Stir in rice, cream cheese and 2 tablespoons basil. Remove from heat; cover and let stand 5 minutes. Stir cabbage mixture; spoon into pie plate.
  • Unfold puff pastry sheet; place over coleslaw mixture. Trim pastry to fit pie plate; with fork, press edge of pastry onto edge of pie plate.
  • Bake uncovered about 25 minutes or until golden brown. During last 5 minutes of baking, in 1-quart saucepan, heat sauce ingredients over medium-low heat. Serve pie with warm sauce.

1 (10 3/4 ounce) can tomato soup

1 (29 ounce) can diced tomatoes with juice
1 tablespoon allspice
1 whole head of cabbage, fresh and chopped
1 lemon, juice of, fresh

Steps:

  • In deep metal rectangular pan or 9x13 pan,cover the inside of pan with tinfoil, bottom and sides so there is enough lap over the sides to fold together in the middle to form a cover.
  • Remove core and chop cabbage.
  • Place in pan.
  • Sprinkle with 1 tsp salt.
  • In large mixing bowl, mix meat, 1 tsp salt, pepper, diced onions, 2 eggs, cilantro, rice, and brown sugar. Mix well.
  • Distribute evenly over the chopped cabbage.
  • Squeeze the lemon over the meat mixture.
  • In bowl mix soup water, tomatoes with juice and allspice.
  • Pour over the top. Take a fork and gently fork down in the layer of ingredients to make sure sauce goes down into the bottom to the cabbage. Do not rip tinfoil.You can refrigerate overnight but use more cooking time.
  • Remember to close the tin foil and make a fold in the top. This creates a steam pocket for the rice and vegetables to cook.
  • Bake 350°F 50 minutes or extra 10 minutes if refrigerated.

20 outer leaves of Napa cabbage
16 large vine-ripened red tomatoes
1 teaspoon vegetable oil
3/4 pound dry-aged goat cheese, crumbled
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups basil broth (see recipe)

Steps:

  • Preheat the oven to 300 degrees. Remove the stems from the cabbage and plunge them into boiling water for 45 seconds. Drain and cool completely under cold water. Pat the leaves dry and set aside.
  • Use a sharp knife to cut the tomatoes into 1/4-inch slices. Lightly oil a baking sheet; put the tomatoes on the sheet and put in the oven for 35 minutes. Remove and set aside. Increase oven to 350 degrees.
  • Use the remaining oil to grease an 8-by-12-inch baking pan; line the pan with foil. Line the bottom of the pan with the cabbage leaves. Sprinkle a layer of crumbled goat cheese on top of the cabbage. Put a layer of tomatoes on the cheese, and repeat with layers of goat cheese and tomatoes until all ingredients are used. Top with additional cabbage leaves. Cover with foil and bake 40 minutes.
  • Remove pan from oven. Put a pan of equal size on top of this pan, bottom side down, weigh it down with several bricks or heavy cans of food and refrigerate for several hours. Remove weights and foil and cut the pie into 3-inch diamonds. To serve, put 1 diamond in the bottom of each of 4 oven-proof serving dishes and warm in oven. Ladle in 1/2 cup of basil broth and serve immediately.

1 medium head cabbage
1 pound ground beef
½ pound ground pork
½ pound ground veal
1 cup cooked rice
½ cup chopped onion
¼ cup minced fresh parsley
1 large egg
2 large cloves garlic, minced

¼ teaspoon ground black pepper
1 ½ teaspoons dried thyme, divided
1 ½ teaspoons dried basil, divided
1 ½ teaspoons dried oregano, divided
1 (28 ounce) can crushed tomatoes with tomato puree

Steps:

  • Place cabbage, core-side down, in an 8- to 10-cup microwave-safe casserole dish. Add 1/2 cup water, cover, and microwave on high until outer leaves are soft, 10 to 15 minutes. Drain and cool.
  • While the cabbage is cooling, preheat the oven to 350 degrees F (175 degrees C).
  • Combine ground beef, pork, veal, rice, onion, parsley, egg, garlic, salt, and pepper in a large bowl. Add 1 teaspoon each of thyme, basil, and oregano; mix until well combined.
  • Remove 12 outer leaves from the cooled cabbage and trim the thick stems to make them easier to roll.
  • Divide meat mixture into 12 equal portions. Place 1 portion on the stem end of each cabbage leaf. Roll up the leaves and fold in the ends. Place rolls, seam-sides down, in a single layer in a casserole dish.
  • Combine crushed tomatoes with remaining thyme, basil, and oregano and pour over cabbage rolls.
