1 cup chopped pecans
2 cups packed dark brown sugar
1 cup butter, melted
2 eggs, slightly beaten
2 teaspoons vanilla
2 cups Gold Medal™ all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3 cups chopped peeled Granny Smith apples (about 1 1/2 lb)

Steps:

  • Heat oven to 350°F. Spread pecans in ungreased shallow pan. Bake uncovered 8 to 10 minutes, stirring occasionally, until golden brown.
  • Grease 13x9-inch pan with shortening; lightly flour. In large bowl, stir together brown sugar, melted butter, eggs and vanilla. Stir in flour, baking powder and salt until blended. Stir in apples and toasted pecans. Spread in even layer in pan.
  • Bake 35 to 45 minutes or until toothpick inserted in center comes out clean. Cool completely in pan on cooling rack, about 1 hour. Cut into 6 rows by 4 rows.

I was in the mood to make something with butterscotch in it, and this is what came of it! I meant to make these for my friends, but my family got to them first! Enjoy! If you don't have apple jelly, use apricot preserves, its also really yummy!

1 ½ cups self-rising flour
1 ½ cups old-fashioned oats
½ cup white sugar
⅔ cup brown sugar
1 cup butter, softened
⅔ cup apple jelly
¼ cup chopped cashews
1 (11 ounce) package butterscotch chips

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease the bottom of a 9 inch square baking dish.
  • Mix the flour, oats, white sugar, and brown sugar in a large bowl. Cut the butter into the flour mixture until the mixture is crumbly. Set aside 3/4 cup of the mixture and press the rest into the bottom of the prepared dish. Spread the top with the apple jelly.
  • Stir the reserved flour mixture and the cashews together in a bowl; sprinkle over the apple jelly. Scatter the butterscotch chips over the cashew mixture.
  • Bake in the preheated oven until golden brown; 30 to 35 minutes. Allow to cool completely before cutting into bars.

2 cups sugar
1 cup canola oil
3 large eggs, room temperature
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
4 medium tart apples, peeled and chopped (4 cups)
1 cup chopped pecans
1 package (11 ounces) butterscotch chips

Steps:

  • In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. In another bowl, combine the flour, baking powder, baking soda, salt and cinnamon; gradually beat into sugar mixture until blended. Stir in apples and pecans., Pour into a lightly greased 13x9-in. baking dish. Sprinkle with chips. Bake at 325° for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cover loosely with foil during the last 10-15 minutes to prevent overbrowning if necessary. Cool on a wire rack.

I was in a baking mood tonight and thought of apple crisp. But then I wanted something like date squares without the date filling. So I created this and.... WOW!! These are sooooo yummy. Soft & Chewy & Crispy = WOW!

1 apple
1 pear
1 tablespoon brown sugar
1 tablespoon cinnamon
1 tablespoon butter
1/4 cup walnuts
1/4 cup pecans
0.5 (225 g) bag butterscotch chips
1 cup flour
1/2 teaspoon baking soda
1/8 teaspoon salt
3/4 cup butter
1 cup brown sugar
2 cups oats

Steps:

  • Preheat oven 350°F.
  • Peel, core and dice up the apple and pear. Place in a fryin pan on med high heat, add in 1 tbsp brown sugar, cinnamon, and 1 tbsp butter. Once the apple/pears goes soft, turn down the stove to medium heat and simmer for 10 minutes. Add in nuts.
  • Meanwhile in a bowl, blend flour, baking soda, and salt. Cut in butter with pastry blender until mixture resembles course crumbs. Stir in brown sugar and oats. Do not over mix. Mixture should stay crumbly.
  • Press half of crumb mixture over bottom of a 8x8-inch pan to form bottom crust.
  • Turn off the stove and stir in the butterscotch chips to the apple/pear filling. Gently spread apple/pear filling over bottom crust. Sprinkle remaining oat mixture over apple/pear filling. Lightly pat with palm of hand to even out.
  • Bake for 25 minutes at 350F or until crust is golden brown. Cool completely and cut into squares.

1 ½ cups graham cracker crumbs
2 small all-purpose apples, pared and chopped
1 cup butterscotch-flavored chips
1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk
1 ⅓ cups flaked coconut
1 cup chopped nuts

Steps:

  • Preheat oven to 350 degrees F (325 degrees F for glass dish). In 13x9-inch baking pan, melt butter in oven. Sprinkle crumbs evenly over butter; top with apples.
  • In heavy saucepan, over medium heat, melt butterscotch chips with sweetened condensed milk. Pour butterscotch mixture evenly over apples.
  • Top with coconut and nuts; press down firmly. Bake 25 to 30 minutes or until lightly browned. Cool. Cut into squares. Garnish as desired. Store leftovers covered in refrigerator.
