This bread is delicious plain or toasted. I make it at least once a week.

1 ½ cups buttermilk
½ cup warm water (110 degrees F/45 degrees C)
½ cup margarine
¼ cup white sugar
½ teaspoon baking soda
2 (.25 ounce) packages active dry yeast
2 teaspoons salt
5 ½ cups bread flour

Steps:

  • Proof yeast in warm water.
  • Place the butter or margarine and buttermilk in a small saucepan. Heat slowly until butter or margarine has melted. Cool to lukewarm.
  • Place sugar, salt, baking soda, buttermilk mixture, and yeast in large mixing bowl. Add 3 cups flour one cup at a time, and mix with the dough hook attachment of an electric mixer. Gradually add the remaining flour while continuing to mix. When dough is not sticky, turn out on a lightly floured surface. Knead for several minutes, until the dough is soft and smooth. Place in a greased bowl, and turn once. Allow to rise until doubled in size.
  • Punch down the dough. Divide, and shape into 2 loaves. Place in two well greased 8 x 4 inch bread pans. Allow to rise until dough has risen one inch above pans.
  • Bake in a preheated 375 degrees F (190 degrees C) oven for 30 to 35 minutes. Loaves are done when nicely brown and hollow sounding when thumped.

1 cup walnut halves
1 egg
1 cup buttermilk
2 tablespoons unsalted butter, melted
1 1/2 cups all-purpose flour
1 cup light brown sugar, packed
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • Coarsely chop 1/2 cup walnuts. Reserve remaining walnut halves.
  • Preheat oven to 350°F
  • Lightly coat a 5-by-9-inch loaf pan with non-stick cooking spray.
  • In a large bowl, with mixer on medium-high speed, beat to blend egg, buttermilk, and butter. Add chopped walnuts, flour, brown sugar, baking soda and powder, salt and vanilla; stir just until evenly moistened.
  • Pour into loaf pan and arrange remaining walnut halves evenly on top of batter.
  • Bake 45 to 50 minutes, until bread begins to pull away from side of pan. Let bread cool in pan on wire rack for 10 minutes. Run a knife between bread and pan sides, then turn out onto wire rack. Let cool 10 minutes.
  • Slice and serve.

1 cup packed brown sugar
2 tablespoons shortening, melted
2 cups all-purpose flour
3/4 teaspoon baking powder

Steps:

  • In a bowl, beat the egg. Gradually beat in brown sugar and shortening. Combine flour, baking powder, baking soda and salt; add to egg mixture alternately with buttermilk. Beat just until moistened. Stir in nuts. Pour into a greased 9x5-in. loaf pan. Bake at 350° for 45-55 minutes or until a toothpick inserted in the center comes out clean. We have a lot of requirements when it comes to banana bread and we finally created a recipe that ticks all the boxes. It's moist, tender, a little tangy and perfectly sweet-all around our favorite one. The best part is that it's even better the next day (if it lasts that long). Try toasting the bread and slathering with a little salted butter. We're pretty sure you'll never need another banana bread recipe.

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
  • Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.

This is from Martha Stewart's new Baking Handbook. This is just wonderful. I especially like that it has coconut in it. YUMMY! This makes 2 9 x 5 loaves or 6 mini loaves. If making mini loaves reduce the baking time to 45 minutes.

3 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
3 large eggs
2 cups sugar
1 1/3 cups canola oil
2 tablespoons pure vanilla extract
1 1/2 cups ripe mashed bananas (about 3 medium)
1 cup unsweetened dried shredded coconut
1 cup walnuts or 1 cup pecans, toasted and finely chopped
1/2 cup buttermilk
cooking spray

Steps:

  • Preheat oven to 350°. Coat pans with cooking spray; set aside.
  • In a large bowl, whisk together the flour, baking soda and salt; set aside.
  • In the bowl of an electric mixer, beat the eggs, sugar and oil on medium-low speed until combined.
  • Beat in the flour mixture. Add the vanilla, banana, coconut, nuts and buttermilk and beat just to combine.
  • Divide batter betwen prepared pans; smooth with an offset spatula.
  • Bake, rotating pans halfway through, until a cake tester inserted in the centers come out clean, 60-65 minutes. Transfer to a wire rack to cool for 10 minutes. Remove laves from pans and let cool completely.
  • Bread can be kept at room temperature, wrapped in plastic, for up to 1 week, or frozen for up to 3 months.

1/2 cup sugar
1/4 cup butter (1/2 stick), softened
1 egg
1/2 cup buttermilk
1/2 tsp. vanilla
1 cup flour
1/2 tsp. baking soda
1/2 tsp. baking powder
pinch salt
1/2 cup chopped dates
1/2 cup chopped walnuts
1 tbsp. grated orange peel
creamy orange glaze, recipe follows

Steps:

  • 1. Beat together first 5 ingredients til mixture is blended. Add flour, baking powder, baking soda and salt all at once. Beat til blended. Don't overbeat. Stir in dates, walnuts and orange peel.
  • 2. Divide batter between 2 greased 6 1/2 x 3 1/2 inch loaf pans. Place pans on cookie sheet and bake at 350 for 30 to 35 minutes or til a cake tester, inserted in center comes out clean. Allow to cool in pan for 10 minutes, remove loaves from pan and continue cooling on rack. Brush tops lightly with creamy orange glaze. Makes 2 loaves
  • 3. Creamy Orange Glaze: 1 Tbsp. cream 1/4 cup sifted powdered sugar 2 tsp. grated orange peel 2 Tbsp. finely chopped walnuts Stir together all ingredients til blended.

1 (.25 ounce) package active dry yeast
1 teaspoon white sugar
¾ cup warm water (110 degrees F/45 degrees C)

2 teaspoons salt
2 tablespoons sesame seeds
2 tablespoons flax seeds
2 tablespoons poppy seeds

4 cups bread flour

Steps:

  • In a small bowl, dissolve the yeast and sugar in the warm water. Let stand until creamy, about 10 minutes.
  • Combine buttermilk, butter or margarine, honey and the yeast mixture in a large bowl. Add the salt, all of the seeds and the whole wheat flour. Stir to combine. Add the bread flour, 1/2 cup at a time, mixing well with a wooden spoon after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 6 minutes.
  • Lightly oil a large mixing bowl, place the dough in the bowl and turn to coat with the oil. Cover with a damp cloth and put in a warm place to rise until doubled in volume, about 1 hour.
  • Preheat oven to 375 degrees F (190 degrees F). Grease two 9x5 inch loaf pans.
  • Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into two equal pieces and form into loaves. Place the loaves into the prepared pans. Cover with a damp cloth and let rise until doubled in volume, about 40 minutes.
  • Bake at 375 degrees F (190 degrees C) for about 30 minutes or until the tops are brown and the bottom of a loaf sounds hollow when tapped.

1/2 cup butter, softened

1/2 cup buttermilk

Steps:

  • Cream sugar and butter.
  • Add eggs, one at a time, mixing well after each addition - use a mixer.

  • Stir in pecans.

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a loaf pan.
