HOMEMADE TACO SEASONING MIX
Much lower salt than pre-made. Salt can be omitted. Great with half ground buffalo and half ground turkey breast or whatever you prefer. Buy bulk spices and you can make 5-plus batches for under $1.00!! Increasing black pepper and adding optional ingredients will increase heat. Using mild or regular chili powder and omitting optional ingredients will reduce heat. To keep salt content low make sure chili powder does not contain salt.

Steps:
- Combine all the ingredients in a small container.
- Brown one pound of ground beef or turkey and drain fat away. (I prefer ground turkey. There is no fat to drain away and it crumbles into tiny pieces very easily.).
- Throw in seasoning mix and 3/4 cup of water and mix well with your ground meat.
- Simmer until thick --
- Note: combine your taco meat with about half of a can of refried beans for a delicious burrito or chimichanga filling.

- Place all ingredients in blender and blend on high till well mixed and powdered.
- Spoon 6 even portions of mix into plastic snack bags.
- Label, store in spice cabinet. Keeps indefinitely. (OR, measure the whole thing--I haven't--and park it altogether in a covered jar, using 1/6 of the mixture each time you need taco spice.

This is the spice mix from a taco recipe that I got from Redbook's Wise Woman's Diet Cookbook. Whenever I have a recipe that calls for a package of taco seasoning mix, this is what I use. The great thing about it is that it has no MSG or preservatives. *Update* This recipe is equal to one packet of taco seasoning mix -- enough to season one pound of ground meat.
