A friend of mine, who picks pecans every year, brought me some of these yummy bars along with a sack of pecans. They are incredibly rich and gooey, and freeze like a dream. Easy and perfect for the holiday season.

¾ cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
1 cup pecan halves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch square baking pan.
  • In a medium bowl, cream together the butter, brown sugar, and white sugar. Beat in the eggs and vanilla. Stir in the flour and pecans until just blended. Spread the mixture evenly into the prepared pan.
  • Bake for 35 to 40 minutes in the preheated oven, or until edges begin to pull away from the sides of the pan. Allow bars to cool in the pan before cutting.

1/2 cup butter, softened
3 tablespoons confectioners' sugar
1 cup all-purpose flour
3 eggs
3/4 cup packed brown sugar
3/4 cup corn syrup
Dash salt
3/4 cup chopped pecans

Steps:

  • In a small bowl, cream butter and confectioners' sugar. Gradually add flour, mixing until blended. Pat into an ungreased 9-in. square baking pan. Bake at 350° for 20-22 minutes or until golden., In another small bowl, beat the eggs, brown sugar, corn syrup and salt until smooth. Pour over crust; sprinkle with pecans. Bake 40-45 minutes longer or until set. Cool on a wire rack. Cut into bars.

1/2 cup light brown sugar, packed
1 egg
1 teaspoon vanilla extract
3/4 cup all-purpose flour
2 cups milk chocolate chips, divided (11.5-oz. pkg.)
3/4 cup pecans, chopped, divided

Steps:

  • Heat oven to 350°F
  • Grease 8-or 9-inch square baking pan.
  • Beat butter, brown sugar, egg and vanilla in medium bowl until fluffy; stir in flour.
  • Stir in 1 cup milk chocolate chips and 1/2 cup pecans.
  • Spread batter evenly into prepared pan.
  • Bake 25 to 30 minutes or until lightly browned.
  • Remove from oven.
  • Immediately sprinkle remaining 1 cup chips over surface.
  • Let stand 5 to 10 minutes or until chips soften; spread evenly.
  • Immediately sprinkle remaining 1/4 cup pecans over top; press gently onto chocolate.
  • Cool completely in pan on wire rack.
  • Cut into squares.

1 1/4 cups flour
1/2 cup butter, room temperature
1/3 cup sugar
2/3 cup sugar
1/2 cup honey
1 tablespoon butter, melted
2 tablespoons flour
1 1/2 teaspoons vanilla
1 teaspoon lemon juice
1/4 teaspoon salt
1 cup pecan halves

Steps:

  • Preheat oven to 375-degrees F.
  • Combine crust ingredients (1 1/4 cups flour - 1/3 cup sugar) in a small bowl of an electric mixer and beat on low until mixture resembles corse meal (this can be done also in a food processor if desired).
  • Press dough into the bottom of an 8-inch square baking pan. Bake for 10-15 minutes or until edges are light brown. Remove from oven but keep oven on at 375-degrees F.
  • Combine filling ingredients (2/3 cup sugar - salt) in a small bowl of an electric mixter and beat on low for 1-2 minutes or until blended.
  • Pour filling over crust and arrange pecan squares over filling.
  • Bake for 15-20 minutes or until fillng is set.
  • Cool completely before cutting into 1 1/2 inch bars.

We make these all year long and when we want to go "over the top" we dip half of each square in warm chocolate.

1 1/4 pounds unsalted butter, room temperature
3/4 cup granulated sugar
3 extra-large eggs
3/4 teaspoon pure vanilla extract
4 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 pound unsalted butter
1 cup good honey
3 cups light brown sugar, packed
1 teaspoon grated lemon zest
1 teaspoon grated orange zest
1/4 cup heavy cream
2 pounds pecans, coarsely chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • For the crust, beat the butter and granulated sugar in the bowl of an electric mixer fitted with a paddle attachment, until light, approximately 3 minutes. Add the eggs and the vanilla and mix well. Sift together the flour, baking powder, and salt. Mix the dry ingredients into the batter with the mixer on low speed until just combined. Press the dough evenly into an ungreased 18 by 12 by 1-inch baking sheet, making an edge around the outside. It will be very sticky; sprinkle the dough and your hands lightly with flour. Bake for 15 minutes, until the crust is set but not browned. Allow to cool.
  • For the topping, combine the butter, honey, brown sugar, and zests in a large, heavy-bottomed saucepan. Cook over low heat until the butter is melted, using a wooden spoon to stir. Raise the heat and boil for 3 minutes. Remove from the heat. Stir in the heavy cream and pecans. Pour over the crust, trying not to get the filling between the crust and the pan. Bake for 25 to 30 minutes, until the filling is set. Remove from the oven and allow to cool. Wrap in plastic wrap and refrigerate until cold. Cut into bars and serve.

  • In a large bowl, combine flour and brown sugar; cut in butter until crumbly. Press into an ungreased 13-in. x 9-in. baking dish.Top with pecans. Drizzle caramel topping evenly over pecans., Bake at 350° for 15-20 minutes or until caramel is bubbly. Remove to a wire rack. Sprinkle with chocolate chips. Let stand for 5 minutes. Carefully spread chips over caramel layer. Cool at room temperature for at least 6 hours or until chocolate is set. Cut into bars.

1/2 cup butter, melted
2 large eggs, room temperature
1 tablespoon vanilla extract

ICING:
3 tablespoons butter
1/4 cup packed dark brown sugar
1 tablespoon 2% milk
1/2 cup confectioners' sugar

Steps:

  • Preheat oven to 350°. In a large bowl, beat brown sugar and butter until blended. Beat in eggs, then vanilla. In another bowl, whisk flour and salt; gradually beat into sugar mixture. Stir in 3/4 cup pecans. Pour into a greased 13x9-in. baking pan; sprinkle with remaining 1/4 cup pecans., Bake until a toothpick inserted in center comes out clean (do not overbake). Cool completely in pan on a wire rack., For icing, in a small saucepan, melt butter over low heat. Stir in brown sugar; cook and stir 30 seconds. Add milk; cook and stir 30 seconds. Remove from heat; whisk in confectioners' sugar until smooth. Immediately drizzle over bars; let stand until set. Cut into bars.

A lovely presentable bar that is not too sweet and never fails to please. Takes little time to put together and less than 35 minutes to bake. The time for setting and cooling is longer but well worth the wait.

2 cups all-purpose flour (levelled)
1/2 cup sugar
3/4 cup softened butter (levelled)
4 eggs
1 cup dark corn syrup
1 cup dark brown sugar
1/4 cup butter, melted
1 cup butterscotch chips or 1 cup Skor English toffee bit
1 1/2 cups pecans (chopped)

Steps:

  • Preheat oven to 350*.
  • Grease well, a 13"x9" cake pan.
  • Combine flour, sugar and softed butter until crumbly.
  • Press firmly into pan and bake in oven for 15 min or until golden.
  • While crust is baking, beat eggs, sugar, corn syrup and melted butter until well blended, 5 minute.
  • Stir in chips or bits and fold in pecans.
  • Pour evenly over the crust and return to oven.
  • Bake for 30 min or until golden in colour and setting has occurred. (when pan is shook filling does not run).
  • Place on cooling rack and run a spatula around outer edge before cooling. Leave on rack until completely cool then cut into bars.
  • Keeps well in the refrigerator if you can keep your hands out of it.
  • May be frozen for up to 2 months.
