This is one of my favorite cookies. They are sweet and buttery and addicting!!

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Grease a cookie sheet with cooking spray.
- Beat the butter and white sugar with an electric mixer in a bowl until smooth. Add the egg yolk and vanilla extract, then mix in the flour until just incorporated. Press the dough into the prepared cookie sheet, and spread with the beaten egg white. Sprinkle with brown sugar and pecans.
- Bake in the preheated oven until golden and set, about 30 minutes. Cool completely before cutting into squares.

BROWN BUTTER CRISPIES

- Cream the Brown Butter with both sugars in a stand mixer until well combined.
- Beat the eggs in a separate bowl. Add the vanilla and stir to combine. Add to the butter/sugar mixture and mix well.
- Combine the flour, salt and baking soda in a separate bowl. Mix carefully into the egg/butter mixture until well combined. Add the quick-cooking oats and mix well again. Add the finely chopped pecans and mix well to combine.
- Divide the dough in half and place each half of the dough on a sheet of waxed paper. Roll the dough into a log and wrap it tightly in the waxed paper. Now you can either chill or freeze the dough until later, or you can go ahead and slice and bake the dough.
- When you are ready to bake, preheat the oven to 350 degrees F.
- Slice the dough 3/4-inch-thick, then place on a cookie sheet about 2 inches apart. Bake until they are golden brown, about 10 minutes. Let cool on the cookie sheets.
- Add the butter to a medium skillet over medium heat. Allow it to melt and bubble up, swirling the pan to keep the butter moving around, for 3 to 4 minutes. When the butter is a medium golden brown, remove the pan from the heat (it will continue browning in the pan over the next 30 seconds or so!). Pour the butter (and any solids in the bottom of the pan) into a heatproof bowl and allow it to cool completely, about 30 minutes.
EASY BAKED CHICKEN CORDON BLEU (NUWAVE/FLAVORWAVE OVENS)
This is a fast and easy way to make dinner in your Nuwave/Flavorwave Oven. Made it tonight for my friends and have raves. Made up of "pre made" Garlic Mash potatoes and you have a great dinner in under 25 min (cooking time). 6-10 min to bread & roll them up. Note; You can defrost the chicken for 5 min on 1/2 power or 5 on Nuwave oven. I used defrosted chicken. Note: if your chicken is frozen you and defrost in your Nuwave oven/fFlavorwave oven. I have used 5-8 mins to defrost. Also, a quick way is to put your chicken breast into a full sized freezer bag prior to pouding it thinn. I hope this helps. Note: I use italian style bread crumbs, I also add some granulated garlic, salt & pepper, and some assiago cheese if I have some on hand. Enjoy!

- Cook on high heat for 10 -12 minutes. (can also use chicken tenders). Lay out the pounded chicken breasts on a clean surface. Place a slice of ham on each piece, then one stick of cheese. Roll the chicken up around the cheese and ham, and secure with toothpicks. Dip each roll in melted butter, then roll in bread crumbs. Place on wire rack (lowest). Cook until Outiside of chicken is is browned (crispy) and juices run clear.
- Cook until chicken starts to become golden brown but not too dark! Remove lid asap. As it will keep cooking!

- Wash the potatoes and slice thinly. It's tricky to get slices of the right thickness: either use a knife, slicing as thinly as you can without breaking, or a mandolin if you have one. Put the slices in a dish, cover with the vinegar and 1 tsp sea salt, and leave for 20 mins. Heat oven to 180C/160C fan/gas 4.
- Drain the slices, pat dry gently with a tea towel and put them in a plastic food bag. Add the olive oil and 1 tsp sea salt. Jiggle the bag gently, then arrange the slices on two baking trays. Bake for about 30 mins, but check after 15 mins: you might need to swap the trays' positions or turn them around if one side is browning too quickly.
- While the potato slices are cooking, butter the bread and spread half the slices with a thin layer of ketchup. When the crisps are beautifully golden, remove from the oven, lay them on kitchen paper and sprinkle with more sea salt. Pile the crisps onto the ketchup-ed slices of bread in a double or triple layer. Add the top layer of buttered bread, cut off the crusts and eat immediately.

THE ORIGINAL NANAIMO BARS
Nanaimo Bars are a traditional Canadian bar cookie whose origins are in Nanaimo, British Columbia. My Mom used to make these when I was a child. She was from Canada & this is not your normal desert! Very rich and wonderful!

- BOTTOM LAYER: Melt first 3 ingredients in top of a double boiler.
- Add egg and stir to cook and thicken Remove from heat.
- Stir in crumbs, coconut and nuts.
- Press firmly into an ungreased 8 X 8 pan.
- SECOND LAYER: Cream butter, cream, custard powder and icing sugar together well.
- Beat until light.
- Spread over bottom layer.
- THIRD LAYER: Melt chocolate and butter over low heat.
- Cool
- When cool, but still liquid, pour over second layer and chill in refrigerator.

- Tear bread into pieces and in a food processor pulse until finely ground.
- In a large bowl stir together 2 cups bread crumbs, Parmesan, sage, and salt and pepper to taste.

- Combine the baking mix, milk and cheddar cheese in a medium bowl.
- Mix by hand until well combined.
- Divide the dough into 12 equal portions (about 3 tbsp each) and spoon onto a lightly greased or nonstick cookie sheet.
- Flatten each biscuit a bit with your fingers.
- Bake in Nuwave for 8 -10 mins on 8 (or 80 percent heat). Until the tops of the biscuits begin to brown.
- In a small bowl, combine the buttery spread with the garlic powder and the parsley flakes.
- Heat this mixture for 30 seconds in the microwave, then brush a light coating over the top of each biscuit.

NUTELLA-BROWN BUTTER CRISPIES
For a smaller batch and an easier time mixing the cereal, divide the recipe in half (but use an 8x8" pan).

- Lightly butter a 13x9" baking dish, then line with parchment paper, leaving a 2" overhang on long sides. Lightly butter parchment. Cook 3/4 cup butter in a large pot over medium heat, swirling, until butter foams, then browns (be careful not to let it burn), 5-7 minutes. Add marshmallows and salt. Reduce heat to low and cook, stirring constantly, until marshmallows are melted and mixture is smooth, about 3 minutes. Add Nutella and stir until completely incorporated into marshmallow mixture, about 2 minutes.
- Remove pot from heat and add half of puffed rice to marshmallow mixture; stir with a nonflexible heatproof spatula or wooden spoon, scraping bottom of pot and folding, until cereal is coated. Add remaining cereal and fold until mixture is homogenous. (It's a lot of cereal, so you'll need to exert some effort.) If mixture is too stiff, heat over low while continuing to fold in cereal. Scrape into prepared pan; let cool slightly, then cover with a sheet of parchment paper. Press down firmly to make an even, compact layer (you want the top to be as flat as possible; a smaller pan, like a loaf or an 8x8" pan, works great for this). Cover crispies loosely with plastic and let sit until cool, about 2 hours.
- Just before serving, using parchment paper overhang, lift crispies out of pan and place upside down on a cutting board; remove parchment. Using a serrated knife, trim about 1/2" from all sides to make a squared-off rectangle, then cut into a 6x4 grid to make 24 squares. Place crispies on a wire rack, spacing at least 1" apart.
- To make half the crispies red, if desired, pulse freeze-dried strawberries in a food processor until finely ground; add luster dust and pulse just to combine. Using a fine-mesh sieve, dust 12 squares with strawberry powder, then, using a dry, clean sieve, dust remaining 12 squares with powdered sugar. Or feel free to dust all 24 squares with powdered sugar instead.
- Do Ahead
- Crispies can be made 1 day ahead. Leave in pan. Store tightly wrapped at room temperature. Cut into squares and coat just before serving.

- Combine the cracker crumbs, bread crumbs and spices in a Ziploc bag. (add any spices you wish).
- Dredge the frozen chicken strips in the egg/milk mixture and then drop into the ziploc with the cracker/spice mixture.
- Shake well to coat the chicken strips.
- Place chicken in a baking dish ( that will fit into the NuWave oven) that has been sprayed with Pam.
- Set NuWave oven to cook for 9 minutes at power 9.
- Turn chicken over and continue cooking for another 9 minutes.
- The chicken will be very moist and tender, and it will also be browned to perfection!
- Enjoy!
