MINI BBQ MEATLOAF
Mini BBQ Meatloaf is an easy meal with big bbq flavor without having to fire up the grill. These meatloaves are filled with bbq sauce, pepper jack cheese and caramelized shallots for a flavorful dinner.

Steps:
- Heat a skillet over medium heat and add the butter. When the butter is melted, add the shallots and season with a pinch of salt. Reduce the heat to medium-low and stir to coat the shallots with butter and continue to cook over medium low heat (stirring occasionally) for about 10-15 minutes or until the shallots are golden brown.
- Heat oven to 425 degrees and line a baking sheet with aluminum foil and spray with non-stick spray.
- In a large bowl, add the ground beef and bread crumbs and mix them together a bit. In a small bowl, whisk together 1/4 C bbq sauce, the egg, Worcestershire sauce and season with salt and pepper. Pour the mixture over the beef and mix well to incorporate then mix in the shredded cheese.
- Divide the meat into 6 portions and shape into mini loaves. Top each meatloaf with 1 tablespoon bbq sauce and bake at 425 degrees for 20 minutes or until the meatloaves are cooked through.

BUTTERMILK MEAT LOAF
Barbecue sauce is a Southwestern staple, so I use it in meat loaf instead of ketchup. The buttermilk and garlic also lend a tangy flavor. Whenever I serve this, it gets rave reviews, even from those who don't ordinarily care for meat loaf.

- Preheat oven to 350 F and line a baking sheet with parchment paper.
- Combine the beef, pork, bread crumbs, barbecue sauce, egg, onion, bell pepper, garlic powder, salt, and pepper together in a bowl.
- Transfer the mixture to the prepared sheet pan and shape by hand into a loaf, about 8x4 inches.
- Whisk together the sauce ingredients and set aside 3 tablespoons. Brush the remaining sauce over the top of the meatloaf.
- Bake for 1 hour.
- Remove the meatloaf and brush the reserved sauce on top. Bake for 15-20 more minutes.

MINI MEATLOAVES WITH BBQ GLAZE
I love meatloaf but don't always have time to wait the hour and change a regular loaf takes to cook. This recipe makes great individual-size meatloaves for the family in about half the time. I like to bake a batch of these, then wrap and freeze them for a perfect make-ahead entrée.

- Preheat the oven to 400 degrees F. Spray a 6-cavity mini loaf pan with nonstick spray.
- Melt the butter in a large skillet over medium-high heat. Add the onions, celery, carrot and garlic and cook, stirring occasionally, until the vegetables are lightly browned, 4 to 5 minutes. Add the thyme and cook for an additional minute. Remove from the heat and allow to cool.
- Beat the eggs until combined in a large bowl. Add the ground chuck, sausage, cream, ketchup, breadcrumbs, Worcestershire, salt and pepper. Pour in the cooked vegetables. Use your hands to massage the meatloaf mix together until well combined (glove up for this if you like!).
- For the glaze: Stir the ketchup, barbecue sauce and mustard together in a small bowl until well mixed. Set aside.
- Divide the meat mixture evenly between the loaf pans, pushing down and flattening the tops of the meatloaves. Top each loaf with about 1/4 cup of the glaze. Bake until cooked through (an instant-read thermometer inserted into the loaves should register 160 degrees F), 25 to 35 minutes.
- Remove the meatloaves from the oven and allow to rest for 5 minutes. Remove the loaves from the pans and serve warm.
