HOMEMADE BAKED BEANS WITH BACON (SOUTHERN)



Homemade Baked Beans with Bacon (Southern) image

(Recipe video above) Southern baked beans in a thick savoury sauce with a touch of sweet and hint of tang. Loaded with BACON! Serve as a side, or have it for breakfast with bacon and eggs. It even makes a hearty meal itself - great for slopping up with bread!

1 tbsp oil
150g/ 5 oz bacon (, chopped)
1 medium onion (, finely chopped)
3 cloves garlic (, minced (or 1 1/2 tsp garlic paste))
3 x 400g / 14oz cans red kidney or other beans, drained and rinsed ((Note 1))
3/4 cup ketchup ((Note 2))
3/4 cup tomato passata / US tomato puree ((Note 3))
1/4 cup molasses ((Note 4))
2 tbsp cider vinegar
3/4 cup water
2 tsp mustard powder ((or 1 tbsp Dijon or American mustard))
1 1/2 tsp Worcestershire sauce
1/2 tsp cayenne pepper
3/4 tsp EACH salt & pepper (, plus more to taste)

Steps:

  • Heat oil over high heat (can skip oil if bacon is super fatty). Add bacon and cook for 2 minutes.
  • Add onion and garlic. Cook for 3 minutes until onion and bacon are golden.
  • Add remaining ingredients. Stir, bring to simmer, then place lid on.
  • Then either turn down heat to medium low (simmering gently) and cook on the stove for 1 hour, stirring every now and then so the bottom doesn't catch. OR bake at 160°C/325°F for 60 minutes.
  • SLOW COOKER option: Reduce water to 1/4 cup, transfer to slow cooker and cook for 6 hours on low.
  • The sauce should be thickened (cook with lid off for a bit if not thick enough) and glossy. Adjust salt and pepper to taste at the end. See notes for serving suggestions!

A classic Southern-style baked beans recipe made with brown sugar topped with bacon.

2 28-oz. cans plain pork n' beans
1/2 cup ketchup
1/2 cup barbeque sauce
1/4 cup brown sugar
1 tablespoon yellow mustard
1 tablespoon worcestershire sauce
A few drops Liquid Smoke (optional)
1/4 teaspoon garlic powder
1/4 teaspoon pepper
5-6 slices thick-cut bacon

Steps:

  • Combine ketchup, barbeque sauce, brown sugar, mustard, worcestershire sauce, Liquid Smoke, garlic and pepper in a medium-sized bowl then mix well; set aside.
  • Open each can of beans and pour off all the standing liquid in the top of the can. Discard liquid then add beans to the ketchup mixture. Mix beans gently with the ketchup mixture until thoroughly combined then pour into a shallow 2-quart baking dish.
  • Cut bacon into 1/2 inch pieces then place pieces evenly in a single layer on top of beans. I like to kinda crumple each piece a bit instead of laying them flat - like little inchworms. The cute ride-on toys from the 80's not actual worms. Bake beans, uncovered, at 350 degrees for 1 to 1.5 hours or until bacon is cooked through and starting to crisp. Enjoy!

I never realized my mom had something special with her homemade baked beans until I got older and tasted the inlaws, and other restaurants version of baked beans. I have yet to find anyone that can duplicate or make better. so I hope you enjoy it as much as we have. Also if you add whole or sliced hot dogs, you will have awesome homemade beenie weenies. (Southern slang for hotdogs and beans)

4 (16 ounce) cans van kamps beans
1/3 cup ketchup
1/2 cup yellow mustard
1/2 cup vermont pure maple syrup
5 slices of uncooked bacon (chopped)
1 medium onion (chopped)

Steps:

  • preheat oven to 350 degrees, use large baking dish. Be sure to foil line and parchment paper line with non stick spray on the parchment paper ( this is for easy clean up and the parchment lining is for non metal taste).
  • mix all the above ingredients together in a large bowl, pour into baking dish, bake covered with once again, parchment paper then aluminum foil.
  • bake for 45 minutes to 1 hour.
  • before removing cover, let stand approximately 20 minutes due to dangerous heat. remove cover, stir and let stand another 10 minutes, this allows the sauce to thicken.
  • Great hot or cold.
  • If preparing this as a main dish, just add one pack of good name brand, beef hot dogs (such as Boar's Head) before baking and you will have a great main dish called "Beenie Weenies".

1/2 pound bacon crumbles
1 large onion, chopped
1 16-ounce) can pork and beans
3 tablespoons yellow mustard
5 tablespoons maple syrup
4 tablespoons ketchup

Steps:

  • Preheat the oven to 325 degrees Fahrenheit.
  • In a skillet over medium heat, fry the bacon until crispy.
  • Add the chopped onion and saute in the bacon grease until translucent. Add the beans, mustard, maple syrup, and ketchup. Mix to combine.
  • Transfer the beans into a shallow baking dish or casserole. Cover the dish with foil and bake for 45 to 60 minutes, or until bubbly. Serve and enjoy!

My grandmother made these her entire life, where we all grew up, in the North Georgia Mountains. It's one of the few things I learned from her before she passed on. I have always just eyeballed the ingredients, and tasted it for flavor before popping it in the oven (before putting the bacon on, of course), so toy with it a little bit yourself if you'd like.

1 tablespoon prepared mustard
2 tablespoons ketchup
