Insanely Easy Vegetarian Chili image

This chili is SO easy to make. You can pretty much throw whatever you have into the pot and it'll be great. (I added some leftover salsa once.) It's very colorful, not to mention delicious.

1 tablespoon vegetable oil
1 cup chopped onions
¾ cup chopped carrots
3 cloves garlic, minced
1 cup chopped green bell pepper
1 cup chopped red bell pepper
¾ cup chopped celery
1 tablespoon chili powder
1 ½ cups chopped fresh mushrooms
1 (28 ounce) can whole peeled tomatoes with liquid, chopped
1 (19 ounce) can kidney beans with liquid
1 (11 ounce) can whole kernel corn, undrained
1 tablespoon ground cumin
1 ½ teaspoons dried oregano
1 ½ teaspoons dried basil

Steps:

  • Heat oil in a large saucepan over medium heat. Saute onions, carrots, and garlic until tender. Stir in green pepper, red pepper, celery, and chili powder. Cook until vegetables are tender, about 6 minutes.
  • Stir in mushrooms, and cook 4 minutes. Stir in tomatoes, kidney beans, and corn. Season with cumin, oregano, and basil. Bring to a boil, and reduce heat to medium. Cover, and simmer for 20 minutes, stirring occasionally.

1 small onion, diced
1 (28 ounce) can diced tomatoes
2 (15 ounce) cans black beans, drained
1 tablespoon chili powder, or to taste

Steps:

  • Heat olive oil in a large saucepan over medium heat. Add onions and saute until transparent, 5 to 7 minutes.
  • Add tomatoes, beans, and chili powder; bring to a simmer. Cook, stirring occasionally, for 20 minutes or longer.

1/2 TEASPOON KOSHER SALT
1 1/2 TEASPOONS GROUND CUMIN
1 1/2 TEASPOONS CHILI POWDER
1 TEASPOON GARLIC POWDER
1 CAN (8.5 OZ.)SWEET GOLDEN CORN, WHOLE KERNEL, DRAINED
1/4 TEASPOON CHIPOTLE CHILI PEPPER (OPTIONAL)
OPTIONAL TOPPINGS: SHREDDED CHEDDAR CHEESE, SOUR CREAM, FRESH DICED TOMATOES, TORTILLA STRIPS, AND ONIONS

Steps:

  • IN A SAUCEPAN, COOK ONIONS AND PEPPERS IN OIL FOR 10 - 15 MINUTES OVER MEDIUM HEAT. STIR IN REMAINING INGREDIENTS AND BRING TO A BOIL. REDUCE HEAT TO MEDIUM-LOW OR LOW AND COVER; SIMMER FOR 20 MINUTES STIRRING EVERY FEW MINUTES. SERVE WITH OPTIONAL TOPPINGS, AS DESIRED.

2 stalks celery, chopped
2 green bell peppers, chopped
2 jalapeno peppers, chopped
3 cloves garlic, chopped
2 (4 ounce) cans chopped green chile peppers, drained
2 (12 ounce) packages vegetarian burger crumbles
3 (28 ounce) cans whole peeled tomatoes, crushed
¼ cup chili powder
1 tablespoon ground black pepper
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can garbanzo beans, drained
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn

Steps:

  • Heat the olive oil in a large pot over medium heat. Stir in the onion, and season with bay leaves, cumin, oregano, and salt. Cook and stir until onion is tender, then mix in the celery, green bell peppers, jalapeno peppers, garlic, and green chile peppers. When vegetables are heated through, mix in the vegetarian burger crumbles. Reduce heat to low, cover pot, and simmer 5 minutes.
  • Mix the tomatoes into the pot. Season chili with chili powder and pepper. Stir in the kidney beans, garbanzo beans, and black beans. Bring to a boil, reduce heat to low, and simmer 45 minutes. Stir in the corn, and continue cooking 5 minutes before serving.
