BURRATA FLATBREAD WITH GARLICKY GREENS, PEAS AND PROSCIUTTO



Burrata Flatbread with Garlicky Greens, Peas and Prosciutto image

Burrata has become a staple in many Italian restaurants and is a great way to elevate any dish at home. Here, store-bought dough is turned into an easy flatbread topped with garlicky sauteed greens, lemony peas, creamy burrata, salty-sweet prosciutto and fresh herbs.

Extra-virgin olive oil
All-purpose flour, for dusting
1/2 pound store-bought pizza dough, at room temperature
Kosher salt and freshly ground black pepper
1/4 cup plus 1 tablespoon grated Parmigiano-Reggiano (see Cook's Note)
1 bunch Tuscan kale, stemmed, leaves finely chopped into thin strips
2 cloves garlic, finely chopped
1 lemon
1 cup fresh or frozen peas
One 8-ounce ball fresh burrata cheese
1/2 cup fresh herbs, such as basil and mint
1/4 pound thinly sliced prosciutto
Balsamic vinegar, such as Villa Manodori, for serving

Steps:

  • Preheat the oven to 450 degrees F. Lightly grease a rimmed baking sheet with the olive oil.
  • Put the pizza dough on a lightly floured surface. Using your hands or a rolling pin shape the dough into a very thin, 12-inch round. Place the dough on the prepared baking sheet.
  • Coat the top of the dough with some olive oil and sprinkle with salt and pepper. Sprinkle about 1/4 cup grated Parmigiano-Reggiano over the dough and bake until the flatbread is golden and crisp, 8 to 10 minutes.
  • While the crust is baking, add 2 tablespoons olive oil to a large skillet over medium-high heat. Add the kale and cook, stirring and tossing continuously, until it starts to wilt, about 2 minutes. Add the garlic and reduce the heat to low. Cook, stirring often, until the garlic is tender, 2 to 3 minutes. Remove from the heat.
  • Zest the lemon using a rasp grater and set aside.
  • Squeeze the juice of 1/2 of the lemon over the kale. Transfer the lemony kale to a bowl and set aside.
  • Add 1/2 cup water and 1 teaspoon salt to a small saucepan and bring to a boil over medium-high heat. If using fresh peas, cook until tender, about 1 minute. If using frozen peas, stir them in, reduce the heat to low, cover and cook until tender, 5 to 6 minutes.
  • Combine 1/2 cup of the cooked peas, the remaining 1 tablespoon grated Parmigiano-Reggiano, 2 tablespoons pea-cooking water, the reserved lemon zest and the juice of the remaining 1/2 of the lemon in a mini food processor and pulse, scraping down the sides with a rubber spatula as necessary, until evenly processed and smooth, 1 to 2 minutes.
  • To assemble, spread the pea puree over the flatbread, leaving a 1-inch border around the edge. Top with the garlicky kale. Cut the burrata into six pieces and add to the flatbread. Top with the remaining 1/2 cup cooked peas, fresh herbs and prosciutto. Sprinkle with salt and pepper, and drizzle with a little balsamic vinegar and extra-virgin olive oil. Enjoy.

Nancy Silverton, of Mozza fame, is a culinary idol of mine, and she makes an appetizer with burrata, speck, and peas in "The Mozza Cookbook." This sauce is a pasta homage to her dish, to spring, and to the old-world Italian combination of peas, Parmigiano-Reggiano, and prosciutto. The big flavors and bold ingredients will overpower a wispy, lithe noodle, so thing textured and craggy, such as farfalle or fusilli, when deciding on a pasta pairing for this one. Labneh is just yogurt that has been drained to remove the whey, resulting in a thick and tangy cream. If you can't find it, substitute drained whole milk yogurt.

12 ounces pasta alla chitarra, fresh or dried
1/2 teaspoon kosher salt, plus more for the pasta water
2 teaspoons olive oil
1 small shallot, julienned
3 ounces speck (about 10 thin pieces), each piece sliced into 1/4-inch strips (can substitute prosciutto)
2/3 cup freshly shelled English peas
1/2 cup labneh
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon freshly ground black pepper
2 tablespoons finely chopped fresh mint
1 1/2 cups hot, starchy pasta water
30 sugar snap peas, stringy ends removed, sliced on the bias into 1/4-inch pieces
One 8-ounce tub burrata cheese (2 balls), drained
1/2 cup pea sprouts or tender vines of young peas (optional)
Freshly grated Parmigiano-Reggiano cheese, Q.B. (optional)

Steps:

  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions. Drain and set aside.
  • Heat the oil in a large saute pan over medium heat. Fry the shallot for 2 minutes, then add the speck and fry for 2 minutes more. Increase the heat to medium-high, add the peas, labneh, lemon juice, salt, pepper, mint, and 1 cup of the pasta water. Stir and bring to a boil. Reduce the heat to a low simmer and toss immediately with pasta and half of the sugar snap peas.
  • One minute before serving, pour the remaining 1/2 cup hot pasta water over the burrata balls. Plate the pasta and top with the remaining sugar snap peas. Gently remove the burrata from the hot water and tear each ball in half using your hands. Place half a burrata on top of each serving of pasta along with the pea sprouts (if using). Top with the Parmigiano, if desired.

Burrata Ravioli with Fresh Tomato Sauce, Parmigiano and Basil image

Eight 6-by-6-inch sheets fresh pasta
1 large egg, beaten
2 balls burrata, cut into 16 pieces total
1 bunch fresh basil
Kosher salt and freshly cracked black pepper
1 1/2 cups San Marzano tomato sauce
1/4 cup extra-virgin olive oil
4 tablespoons (1/2 stick) unsalted butter
2 tablespoons grated Parmigiano-Reggiano

Steps:

  • Cut the pasta sheets into 3-by-3-inch squares. Brush one side of a pasta square with a small amount of egg, then place a piece of burrata in the center and top with a basil leaf. Season with salt and pepper, then top with one more pasta square to make a ravioli. Repeat to form a total of 16 ravioli for 3 portions. Allow the ravioli to set for 30 minutes in the fridge.
  • In the meantime, bring a pot of salted water to a boil. Bring the tomato sauce to a simmer in a separate saucepan.
  • Add the ravioli to the boiling water and cook until tender, about 3 minutes.
  • Add the olive oil to the tomato sauce and stir together. Add the ravioli to the pan with the sauce and cook for 1 more minute, adding the butter at the same time. Season with salt and pepper.
  • Divide the ravioli among 3 plates and garnish with extra basil and the Parmigiano-Reggiano.

  • Fill a large saucepan with water, salt the water to taste like the ocean, adding approximately 1 tablespoon of salt to each quart of water, and bring it to a boil over high heat. Fill a bowl with ice water and line a plate or small bowl with paper towels. Place a wire strainer in the sink. Add the English peas to the boiling water and cook them until they turn bright green but are still crunchy, about 30 seconds. Quickly drain the peas into the wire strainer and plunge them, still in the strainer, in the ice water to cool completely, about 1 minute. Transfer them to the paper towels to drain.
  • Pull the strings off the sugar snap peas, discard and slice the sugar snap peas one-eighth-inch thin on such an extreme bias that you are almost slicing them lengthwise. Put the peas, sugar snap peas and mint in a medium bowl. Sprinkle with the grated Parmigiano-Reggiano, season with salt and pepper, drizzle with the olive oil, and toss to combine the ingredients and coat the vegetables with the seasonings.
  • Drape four slices of speck in a rosette-like pattern on each of four salad plates, dropping the slices onto the plate so they stand up slightly rather than placing the slices flat against the plate. Cut the burrata into four equal segments and nestle one segment in the center of each "rosette." Pile the dressed peas on top of the burrata, allowing a bit to fall onto the speck below, and use a microplane or other fine grater to grate a light layer of Parmigiano-Reggiano over each plate, and serve.
