BUCKWHEAT, OAT, HONEY WHEAT SANDWICH BREAD

Buckwheat, Oat, Honey Wheat Sandwich Bread image

This is great, not dense like some whole grain breads can be. Can hardly tell its not a buttery white loaf. Yum

Provided by PrincessPage

Categories     Yeast Breads

Time 3h5m

Yield 1 loaf

Number Of Ingredients 12

1 cup whole wheat flour
1/2 cup buckwheat groats
1/2 cup barley flour
1 cup whole oats
4 1/2 cups white flour
3 tablespoons canola oil
3 teaspoons yeast
2 teaspoons salt
1 cup water, warm
1 1/2 cups buttermilk
1/3 cup honey
3 tablespoons melted butter, for the tops after they've cooked

Steps:

  • Mix warm water, yeast, honey, buttermilk, salt, oil together.
  • Mix all flours and buckwheat together.
  • Add half the flour mix to the wet mix and blend on a low speed of your mixer until combined
  • Add the second half of the flour mixture a cup at a time until completely blended. You may need a little more or little less flour. It should form a nice ball and not creep up your dough hook.
  • Let the mixer knead the dough for 7 or 8 minutes.
  • Place in an oil bowl, turn dough to cover with oil. Cover and rest in a warm draft free place for around an hour (may need longer). Dough should double, you will know when you push a finger in the center and it does not come back up.
  • Punch down, form into two loaves and put in two loaf pans -- I do a big and small 9x5 pan and 8 1/2 by 4 /12. Be careful to shape as you want it, they will not smooth out as they rise.
  • Cover and rise again until the dough is rounded over the tops of the pans.
  • Cook at 375 for 35 minutes or until they sound hollow when tapped on the bottom.
  • Remove to wire racks to cool to avoid the bottoms getting soggy. Top with the melted butter.

MACHINE MIXED WHOLE WHEAT SANDWICH BREAD

Machine Mixed Whole Wheat Sandwich Bread image

I tried about eight different bread recipes before finding the one that I now make weekly for my sandwiches. This is it. It's a modification of a recipe from a Bob's Red Mill Flour bag. It was written for bread machines, but I bake it in the oven instead because I don't like the shape of the loaves in my bread maker. You could also mix it by hand, but using the bread machine or stand mixer is much easier.

Time 1h25m

Yield 1 1.5-lb loaf

Number Of Ingredients 9

1 1/2 cups plus 2 tablespoons warm water
2 tablespoons oil
1 tablespoon honey
1 1/2 teaspoons salt
3 3/4 cups whole wheat flour
2 tablespoons powdered milk
2 tablespoons sugar
1 1/2 tablespoons gluten (see Note)
3 teaspoons active dry yeast

Steps:

  • Add the ingredients to the bread machine in the order listed (or according to manufacturer's instructions).
  • Select the dough cycle on the machine. Be sure that a 1.5-lb loaf is selected.
  • Start the machine. When it begins the fast mix (after about 5 minutes), lift the lid and use a rubber scraper to push down any dough or flour that is not being mixed into the dough ball.
  • Once the first mix is done (about 15 minutes on my machine), turn off the machine. Allow the bread to rise in the machine for about 20 minutes, or until it is roughly doubled in size.
  • Turn out the bread onto a well-oiled surface. Flatten the dough somewhat, then fold it. Begin by bringing the edge closest to you into the center, then fold down the top. Repeat with the left and right sides. If needed, stretch the loaf to make it more oblong.
  • Place the loaf into a greased 9 x 5 loaf pan.
  • Preheat the oven to 375.
  • While the oven is heating, allow the loaf to rise until it has just crested the top of the pan.
  • Bake at 375 for 20 minutes. Tent the bread with foil, and bake for an additional 20 minutes.
  • Cool on a wire rack before slicing.
  • Note: The gluten is a very important ingredient. It helps give the bread its light, fluffy texture. You can find it at Whole Foods or in the bulk bins at WinCo.

OVERNIGHT BUCKWHEAT OATS

Overnight Buckwheat Oats image

A variation from overnight oats recipe from Alli Shircliff. This is for anyone who doesn't/can't eat oatmeal but wants a delicious, fast, and healthy breakfast. This uses buckwheat flakes--not the cereal flakes but rolled and flaked buckwheat. They look very similar to oatmeal flakes but are much smaller. Mix in agave and berries. Eat and enjoy!

WHITE WHOLE WHEAT SANDWICH BREAD

White Whole Wheat Sandwich Bread image

This bread makes great sandwich bread or toast and my kids have no idea that it isn't just "White Bread"! I usually make the dough in the bread machine and bake it in the oven. It is light enough to slice thinly, if you can wait to eat it and cut cool!

OATMEAL WHEAT SANDWICH BREAD

Oatmeal Wheat Sandwich Bread image

Delicious and healthy whole grain bread. This bread has a soft easily sliceable texture.Slightly sweet and great for sandwiches, toast or french toast. If you like a softer whole grain bread you will love this bread! I wanted a softer healthy bread that my family would eat so I developed this recipe. Hope you love it as much as we do.

Categories     Yeast Breads

Time 2h35m

Yield 2 loaves, 32 serving(s)

Number Of Ingredients 10

1 (12 ounce) can evaporated milk (warmed to 95-100 degrees)
3/4 cup warm water (95-100 degrees)
4 1/2 teaspoons instant yeast
1/2 cup dark brown sugar
1 cup quick oats
1 cup whole wheat flour
5 cups bread flour
2 teaspoons salt
1/3 cup vegetable oil
2 teaspoons butter

Steps:

  • Using bread machine:
  • Add first 6 ingredients together in bread machine pan, let sit for 10 minutes until bubbly.
  • Add vegetable oil, bread flour and salt. Let the bread machine mix and knead the dough. If dough is too stiff or too wet add a little more flour or water to make a smooth slightly sticky dough. Turn off bread machine before the rise cycle begins and put dough into a large oiled bowl to rise. Cover and let double in size ( about 35-45 minutes).
  • Note: This recipe can be made by hand or mixed and kneaded with a kitchen-aid mixer. * If using all-purpose flour add 1 Tablespoon Vital wheat gluten.
  • After first rise punch dough down and divide into two equal pieces. On a lightly oiled or floured surface; punch out air bubbles and shape each piece of dough into a loaf and place into two oiled 9x5 bread pans, cover and let rise again until double or until dough is about 1 inch over tops of pans.
  • Bake at 350 degrees for 30-35 minutes. ( if getting too brown on top cover with foil last 15 minutes of baking) Remove from bread pans and turn out onto cooling rack. For softer crust spread butter over tops of loaves while still warm. Let cool at least 1 hour before slicing.

BUCKWHEAT OAT WHOLE WHEAT BREAD

Buckwheat Oat Whole Wheat Bread image

My family has a real love affair going with this one. So far, the loaf has not survived to see room temperature--we scarf the whole thing while it's still warm. It would be great for toast or sandwiches....but so far it hasn't made it long enough to see those iterations. It's a dense loaf, but not heavy, and has a certain natural sweetness and toothiness to it that is really seductive. Prep time includes time for rising.

  • (9:00 p.m., night before mixing)In a small bowl, mix and knead the Levain ingredients. Transfer to a small container, cover, and keep it at a warm temperature for 5 hours.
  • (8:00 a.m.)Finely mill 330g of white wheat flour. In a heat-resistant bowl, add the porridge ingredients and mix. Set the flour and porridge aside to cool until mixing.
  • (9:00 a.m.)To the bowl of a stand mixer fitted with the dough hook attachment, add the flour, ripe levain, honey, oil, Water 1, and salt. Turn on the mixer to low and mix until all the ingredients are incorporated, about 2-3 minutes. Depending on your flour, you might need to add additional water to help the ingredients come together, but be conservative with these additions. Then, turn the mixer up to speed 2 and mix for 2-3 more minutes until the dough strengthens and smooths. Finally, turn the mixer off and let the dough rest for 10 minutes. After the 10 minute rest, add a small portion of the porridge with a splash of Water 2 and mix at low speed for a minute. Continue to add the rest of the porridge in small increments while the mixer runs, adding a splash of water as needed. Once all the porridge is added, mix until the dough is homogenous. This could take up to 3-4 minutes.
  • (9:15 a.m. to 12:15 p.m.)This dough needs 2 sets of stretches and folds during bulk fermentation, where the first set starts after 30 minutes into bulk fermentation, and the subsequent sets are at 30-minute intervals. After the second set of stretches and folds, let the dough rest, covered, for the remainder of bulk fermentation.
