BUBBA GUMP'S GREENBOW COUNTY OKRA GUMBO

Steps:
- Cook okra in 2 Tbsp butter in a large skillet over medium-high heat, stirring constantly, until lightly browned.
- Set aside.
- Combine remaining butter and flour in a large dutch oven, cook over medium high, stirring constantly until roux is chocolate colored-around 20-25 min (I say have a beer while doing this) Stir in green onions, celery and garlic, cook stirring constantly until veg is tender.
- Add okra, water and the next 6 ingredients.
- Bring to a boil, reduce and simmer uncovered 2 hours, stirring occasionally.
- Peel and devein shrimp, add that and crab to okra mixture.
- Simmer an additional 10 minutes, stirring occasionally.
- Remove and discard bay leaf.
- Serve gumbo over rice.
- Sprinkle with file if desired.
BUBBA GUMP SOUTHERN HUSH PUPPIES
These are really good hush puppies. This recipe is quite different than most recipes I have tried. The cream corn, cheese and jalapeno peppers really make these hush puppies special. I got this recipe from an old church cookbook I found one day in the attic.

Steps:
- Combine first 4 ingredients in a large bowl.
- Combine eggs and milk; add to dry ingredients, stirring just until moistened.
- Stir in cheese, pepper, corn, and onion.
- Do not overstir.
- Pour oil to depth of 2 inches into a small dutch oven.
- Heat to 375°F.
- Carefully drop batter by rounded tablespoons into oil.
- Fry hush puppies a few at a time 3 minutes or until golden brown, turning once.
- Drain on paper towels.

Steps:
- Melt butter in Gumbo Pot.
- Incorporate Flour with a whisk and cook over Medium to Medium high heat, whisking constantly, until roux resembles the color of peanut butter (6-8 minutes). Remove pot from heat.
- Add Onions, Celery and Green Pepper and saute over medium low heat until soft.
- Add Diced Chicken, and continue to saute until cubes of meat are cooked through.
- Add Ham and Andouille and saute a few more minutes.
- Add Okra, Tomatoes, Water, Vegetable Broth and Tony Chachere's seasoning and bring to a rolling boil.
- Reduce heat and simmer 1-2 hours until thickened.
- Serve over 1/4 Cup Cooked Rice (or finely chopped cooked Cauliflower if you are a strict low carber).

OKRA GUMBO
I got this recipe from a relative back in the early '70's we've been enjoying ever since. It won 1st place in our cooking contest at my family reunion. You may want to add a little water or chicken broth to this.

- Saute' onion and peppers in margarine until tender.
- Add remaining ingredients including cooked chicken.
- Cook on low for about 2 hours to blend flavors.
- This can be served over steamed rice.
