- Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8x8 inch pan.
- In a small saucepan over medium heat, melt margarine and cocoa together, stirring occasionally until smooth. Remove from heat and set aside to cool. In a large bowl, beat eggs until frothy. Stir in the sucrolose sweetener. Combine the flour and salt; stir into the egg mixture then mix in the cocoa and margarine. Finally stir in the 1/4 cup of milk and if desired, the walnuts. Pour into the prepared pan.
- Bake for 25 to 30 minutes in the preheated oven, until a toothpick inserted into the center, comes out clean. To make frosting, Mix together the sugar free chocolate pudding mix and 1 cup skim milk using an electric mixer. Mix for about two minutes or until thick. Spread over cooled brownies before cutting into squares.

COCONUT BROWNIES (NO GRAINS, NO SUGAR)
We don't eat grains or refined sugar, so I'm always on the lookout for tasty homemade treats with top notch ingredients. I came up with this recipe after finding that organic dessicated coconut (no sweetener added) was affordable! I started with the idea of a pie crust recipe I had from someone else and evolved it into these brownies. Preparation time includes the stewing of the dates.

Steps:
- Preheat the oven to 175°C / 350°F.
- Place dates and water in a saucepan and leave them to gently warm until the dates are soft and some water is absorbed.
- In a mixing bowl, beat the eggs, then add the dry ingredients. Stir to combine.
- Press the dates and water through a strainer, or process the dates until smooth, and add to the mixture.
- Stir until well combined.
- Press into a small baking dish and bake for 15 minutes.

- Place baking pan on a cooling rack and allow the brownies to cool for at least 1 hour before slicing. If you really can't wait to eat them, let them rest at least 15 minutes - they will still be delicious, just know they will fall apart much easier and will be better eaten with a fork or spoon (which my family usually does) or crumbled over homemade ice cream.

- Line an 9 x 9 baking dish with parchment paper. Combine seeds and cocoa powder in a food processor. Mix on high for 30-45 seconds, until seeds are finely chopped.
