SPICY GRILLED CORN ON THE COB



Spicy Grilled Corn on the Cob image

This grilled corn on the cob is a real summertime treat. It's basted with a spicy butter blend and grilled to perfection in about 20 minutes. This recipe is easily doubled to serve a larger gathering. This recipe is part of our Juneteenth Family Cookout Menu.

5 ears corn with husks
6 tablespoons unsalted butter, melted
½ teaspoon garlic powder
½ teaspoon paprika
½ teaspoon cayenne pepper
½ teaspoon salt
½ teaspoon ground pepper

Steps:

  • Carefully pull back cornhusks, remove the silk and fold the husks back over the cobs. Soak the corn in a large bowl of water for at least 1 hour.
  • Preheat grill to low heat (300°F). Combine butter, garlic powder, paprika, cayenne, salt and pepper in a small bowl.
  • Remove the corn from the water and pat dry with a clean towel. Pull the husks back and brush the kernels with the butter mixture, then cover again with the husks. Grill the corn, turning a few times, until tender and slightly charred, 15 to 20 minutes. To serve, pull back the husks and tie them together with kitchen twine.

6 to 8 ears of corn, shucked
1 tablespoon salt
1 tablespoon freshly ground black pepper
1 whole Scotch bonnet pepper (any color) or 1 teaspoon hot sauce
3 tablespoons butter
4 cloves garlic

Steps:

  • Cut each shucked ear of corn into 2-inch pieces and place in a pot just large enough to fit the corn snugly. Add enough water to cover the corn.
  • Add the salt, black pepper, Scotch bonnet pepper, butter, and garlic. Bring to a boil over high heat, cover, and reduce the heat to medium-low. Simmer for 30 minutes. Check periodically to make sure the water level remains the same. Add more water as needed. Rotate the corn in the pot for even cooking.

1 tablespoon butter
1 jalapeno pepper, seeded and minced
1/4 teaspoon ground cumin

  • Fill a large saucepan half full with water; bring to a boil. Add corn; cover and cook for 5-7 minutes or until tender. , Meanwhile, in a small saucepan, heat oil and butter over low heat until butter is melted. Stir in the jalapeno, cumin and pepper. Drain corn; brush with butter mixture.

2 teaspoons dried thyme
1 tablespoon hot pepper sauce
1 teaspoon chicken bouillon granules
1/4 cup chopped seeded jalapeno peppers

Steps:

  • Place each ear of corn on a double thickness of heavy-duty foil (about 18x12 in.). Combine butter, thyme, hot pepper sauce and bouillon granules. Brush over corn; sprinkle each with 1 tablespoon jalapenos. Seal tightly., Grill, covered, over medium heat until corn is tender, 15-20 minutes. Open carefully to allow steam to escape.

A spicy summer time treat that adds a different approach to your average corn on the cob. I found this recipe in "Woman's World" Magazine with a little of my own changes, and use it almost every time I make corn. Very adjustable, quick & easy to make. Great for picnics or BBQ's, and gives you that "your-on-vacation" feeling. If you know someone who doesn't like corn-on-the-cob, this just might make a believer out of them. Enjoy! =^_^= P.S. This is even good drizzled over microwaved frozen or canned corn if you don't have time to cook cobs.

8 ears corn, with husks on
1/2 cup melted butter
1 tablespoon garlic hot pepper sauce (Rooster Brand Chili Garlic sauce)
2 teaspoons brown sugar (white sugar can be substituted)
1 teaspoon seasoning salt (normal salt can be substituted)
1 teaspoon paprika
1 teaspoon celery salt
1/2 teaspoon ground allspice
1/4 teaspoon chili powder
1 tablespoon chopped fresh cilantro (optional)

Steps:

  • Preheat oven to 350'F.
  • Rinse the ears of corn.
  • Put corn cobs directly on the middle rack of the oven.
  • Bake for 30 Minutes.
  • Remove husks & cut cobs in half.
  • Transfer to a large serving bowl.
  • In a separate bowl mix all of the ingredients together.
  • Pour over corn & toss to coat.
  • Sprinkle Cilantro if desired.

This came from one of my Mexican co-workers who had brought it for a carry in. It is very simple to make. I was a little skeptical about the mayonnaise but when I ate it, I devoured it.

mayonnaise
shredded parmesan cheese
cayenne pepper, depends on how hot you like it (to taste)
1 piece bread (this is for ease of putting mayo on corn)

  • Roast the corn on a charcoal grill just until tender and you have nice grill marks.
  • Liberally spread mayo on piece of bread.
  • Roll hot ears on the bread.
  • Sprinkle parmesan cheese on.
  • Sprinkle cayenne pepper on (to taste).

I tried this corn for the first time at a family dinner. The corn was roasted on the grill but I have made it with boiled corn and it still tasted great! I make this dish a lot and everyone who tries it loves it. This dish is super easy but tastes wonderful.

Steps:

  • Grill or boil corn until tender.
  • Drain corn, place on plate and cover with melted butter.
  • Next coat ear of corn with a light layer of mayo.
  • Then cover ear with cayenne pepper and lemon pepper. I like the seasonings a little heavy but you can go as light as you like.

4 large fresh corn on the cob, shucked
6 tablespoons butter, softened
1 tablespoon minced fresh parsley
2 teaspoons chili powder
1 teaspoon garlic salt
1 teaspoon ground cumin

Steps:

  • In a small bowl combine the butter, parsley, chili powder, garlic salt, and cumin; set aside.
  • To pot of boiling water add 1 tablespoons granulated sugar, and 1 tablespoons lemon juice. Add corn. Boil for 3 to 5 minutes, uncovered. Remove from heat, cover and let stand for 15 minutes. Remove from hot water, spread ears of corn with seasoned butter.
