BROWN SUGAR OATMEAL MUFFINS



Brown Sugar Oatmeal Muffins image

Brown sugar oatmeal muffins have all the spicy and sweet warming flavors that you love in baked goodies, and they're moist, super simple, and full of natural fiber!

Number Of Ingredients 11

2 cups rolled or old-fashioned oats
1 cup milk (I used whole milk)
1/3 cup light oil (like avocado, vegetable, or melted coconut)
1 cup light brown sugar, packed
2 large eggs
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon cloves
1/2 teaspoon salt

Steps:

  • Preheat the oven to 400 degrees F. and grease 14 to 18 muffin cups well. (I grease a whole set of 12 on one pan and then grease the middle 6 on a second pan. This recipes makes 14 to 18 muffins depending on size OR you can do 12 regular sized muffins and about 24 mini muffins.)
  • In a medium bowl, add the oatmeal and the milk, stir to combine, and set aside.
  • In a second medium bowl, add the oil and brown sugar, and mix to combine until the sugar looks smooth, about 1 minute.
  • Add the eggs and mix well to combine.
  • Add the flour, baking powder, baking soda, ground cinnamon, cloves, and salt to the egg mixture, and fold to combine.
  • Add the oat and milk mixture to the flour and egg mixture, and fold until just combined, careful to not over-stir.
  • Place the batter into the prepared pans, filling the cups 1/2 full.
  • Bake for 20 to 25 minutes or until the centers are cooked through and nothing comes out on a toothpick when you insert it into the center. (Mini muffins will bake in 14 to 16 minutes.)
  • Remove from the oven and allow to cool for 10 minutes before removing the muffins from the pan to finish cooling on a wire rack (if you leave them in the muffin tin they sweat and the bottoms get soggy).
  • Enjoy warm or at room temperature.
  • This recipes freezes well.

1 cup old-fashioned oats
1 cup whole wheat flour
3/4 cup packed brown sugar
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 large eggs, room temperature
3/4 cup 2% milk
1/4 cup canola oil
1 teaspoon vanilla extract
Peanut butter and honey, optional

Steps:

  • Preheat oven to 400°. Mix first 6 ingredients. In another bowl, whisk together eggs, milk, oil and vanilla. Add to oat mixture; stir just until moistened. , Fill greased or paper-lined muffin cups two-thirds full. Bake until a toothpick inserted in center comes out clean, 15-17 minutes., Cool 5 minutes before removing muffins to a wire rack. Serve warm. If desired, spread with peanut butter and honey.

3 tablespoons all-purpose flour
3 tablespoons brown sugar
¼ teaspoon ground cinnamon
2 tablespoons butter
1 ¾ cups all-purpose flour
⅓ cup white sugar
2 teaspoons baking powder
¼ teaspoon salt
2 packets instant maple and brown sugar oatmeal
1 egg, beaten
1 cup milk
¼ cup vegetable oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups.
  • Combine 3 tablespoons flour, brown sugar, and cinnamon in a small bowl. Use a pastry blender or two knives to cut in the butter until the mixture resembles coarse crumbs. Reserve.
  • Combine 1 3/4 cup flour, white sugar, baking powder, salt, and the instant oatmeal in a large bowl. Make a well in the center of the flour mixture; pour in the egg, milk, and oil. Stir just until moistened. Spoon batter into prepared muffin cups, filling each 2/3 full. Evenly sprinkle streusel topping over muffins.
  • Bake in preheated oven until toothpick inserted in center of muffin comes out clean, about 15 minutes. Cool on wire rack for 5 minutes before serving.

½ cup white sugar
1 teaspoon gluten-free baking powder
1 cup milk
¼ cup vegetable oil

2 cups pitted and chopped fresh cherries (including any juice from chopping)
¼ cup gluten-free rolled oats
¼ cup brown sugar
¼ cup white sugar
2 tablespoons cold butter, cut into pieces

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line 24 muffin cups with paper liners.
  • Mix flour, 1/2 cup sugar, and baking powder in a large bowl. Whisk milk, vegetable oil, egg, vanilla extract, and almond extract together in a separate bowl. Make a well in the center of the flour mixture; pour in milk mixture. Stir until batter is just blended and slightly lumpy; gently fold in cherries and cherry juice. Fill muffin cups 2/3 full with batter.
  • Mix oats, brown sugar, 1/4 cup white sugar, and butter together in a bowl until crumbly; sprinkle oat mixture over batter.

Number Of Ingredients 10

1 cup oatmeal
1 cup oat bran
2/3 cup brown sugar
1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup vegetable oil
1 cup buttermilk
2 eggs
1 1/2 cups fresh cherries (do not thaw if frozen) or 1 1/2 cups frozen cherries, halved and pitted (do not thaw if frozen)

Steps:

  • Preheat oven to 375°F
  • Line muffin tins with paper liners.
  • In large bowl, combine oats, oat bran, brown sugar, flour, baking powder and baking soda and mix well.
  • In another bowl, combine oil, buttermilk, and eggs and mix with fork until blended.
  • Add wet ingredients to dry ingredients and mix 20-30 strokes just until dry ingredients disappear.
  • Gently stir in cherries.
  • Batter should be lumpy.
  • Fill prepared muffin tins 2/3 full with batter.
  • Bake for 17-20 minutes until light golden brown.
  • Remove from pan and cool on a wire rack.
