CHEESY BACON EGG HASHBROWN CASSEROLE

This tasty breakfast bake is loaded with crispy bacon, cheddar cheese, and of course, lots of shredded hashbrowns.

1 (30 oz.) package frozen shredded hashbrowns, thawed
1/2 pound bacon, cooked crisp and crumbled
8 eggs
1/2 cup milk
1/2 teaspoon salt
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon pepper
Pinch of cayenne pepper
8 ounces shredded cheddar cheese
Chopped green onions for garnish, optional

Steps:

  • Preheat oven to 350 degrees. Lightly grease a 9x13 inch baking dish.
  • Spread hashbrowns in an even layer in the bottom of the prepared pan.
  • In a large bowl, whisk together eggs, milk, salt, onion powder, garlic powder, pepper and cayenne. Pour over hashbrowns.
  • Sprinkle with half of the cheese, all of the bacon, then the remaining cheese. Cover tightly with foil.
  • Bake for 1 hour, then remove foil and bake for another 5-10 minutes, or until center is set and a knife inserted in the casserole comes out clean. Let stand 5-10 minutes before serving. Garnish with chopped green onions, if desired.

1 large onion, chopped
1/3 cup all-purpose flour
1/2 to 1 teaspoon salt
1/4 teaspoon pepper
4 cups 2% milk
12 lasagna noodles, cooked and drained
12 hard-boiled large eggs, sliced
2 cups shredded Swiss cheese
1/3 cup grated Parmesan cheese
2 tablespoons minced fresh parsley, optional

Steps:

  • Preheat oven to 350°. In a large skillet, cook bacon until crisp. Remove with a slotted spoon to paper towels. Drain, reserving 1/3 cup drippings. In the drippings, saute onion until tender. Stir in the flour, salt and pepper until blended. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. , Spread 1/2 cup sauce in a greased 13x9-in. baking dish. Layer with 4 noodles and a third each of the eggs, bacon, Swiss cheese and remaining sauce. Repeat layers twice. Sprinkle with Parmesan cheese. , Bake, uncovered, until bubbly, 35-40 minutes. If desired, sprinkle with parsley. Let stand for 15 minutes before cutting.

1 lb bacon, cut into 1-inch pieces
1 medium onion, chopped (1/2 cup)
1 medium red bell pepper, chopped (3/4 cup)
1 package (8 oz) sliced fresh mushrooms
2 tablespoons Dijon mustard
1/2 teaspoon salt
1/2 teaspoon pepper
3/4 cup milk
12 eggs
1 package (2 lb) frozen hash browns, thawed
2 cups shredded Cheddar cheese (8 oz)

Steps:

  • In 12-inch skillet, cook bacon until crisp. Using slotted spoon. Remove from pan to small bowl. Cover and refrigerate. Drain drippings, reserving 1 tablespoon in pan. Add onion, bell pepper and mushrooms; cook 4 minutes over medium heat, stirring occasionally. Stir in mustard, salt and pepper. In large bowl, beat milk and eggs with wire whisk.
  • Spray 13x9-inch (3-quart) baking dish with cooking spray. Spread half of hash browns in baking dish. Spread onion mixture evenly on top. Sprinkle with 1 cup of the cheese. Spread remaining hash browns over top. Pour egg mixture on top. Cover; refrigerate 8 hours or overnight.
  • Heat oven to 325°F. Uncover; bake 50 to 60 minutes or until thermometer inserted in center reads 160°F. Sprinkle with remaining 1 cup cheese and the bacon. Bake 3 to 5 minutes longer or until knife inserted in center comes out clean, top is puffed and cheese is melted. Let stand 5 minutes.

1 link smoked pineapple-bacon chicken sausage, cut into slices
1 tablespoon canola oil
1 teaspoon butter
2 ½ cups frozen hash brown potatoes, thawed
½ onion, chopped
¾ teaspoon garlic powder, divided
½ teaspoon onion powder
¼ teaspoon salt
¼ teaspoon ground black pepper
1 cup shredded Cheddar cheese
6 eggs
1 tablespoon milk
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place bacon in a 10-inch skillet and cook over medium heat, turning occasionally, until crisp, about 10 minutes. Use a slotted spoon to remove bacon to a paper towel-lined small bowl. Discard half the bacon fat using a spoon.
  • Cook sausage in the hot skillet until browned on both sides, about 5 minutes. Remove to the bowl with the bacon.
  • Heat canola oil and butter in the same skillet over medium heat. Add hash browns and onion. 1/2 pound thick-cut bacon
2 Yukon gold potatoes, cut into 1/2-inch cubes
Kosher salt
2 tablespoons extra-virgin olive oil
1/2 onion, diced
1 clove garlic, minced
2 to 3 hot cherry peppers, seeds removed and chopped
1/2 small bunch chives, sliced
1 tablespoon white vinegar
2 large eggs
2 slices rye bread
Butter, for the toast

Steps:

  • Preheat the oven to 400 degrees F. Line a sheet pan with a rack.
  • Place the bacon on the prepared sheet pan and bake until crispy, 20 minutes. Drain on a paper towel-lined plate and keep warm. Reserve some of the fat for the potatoes.
  • While the bacon cooks, fill a medium saucepan with cold water. Add the potatoes and generously season with salt. Bring to a boil over high heat, then reduce to a simmer and cook until the potatoes are fork tender, about 10 minutes. Drain and set aside.
  • Add the olive oil to a large saute pan and heat over medium-high heat. Add the onions and salt to taste and saute until soft and translucent, 5 to 7 minutes. Add the garlic and cook until fragrant, 2 minutes. Add about 1 tablespoon of the reserved bacon fat, the cherry peppers and cooked potatoes and toss to combine. Season to taste with salt and toss in the chives. Keep the hash browns warm.
  • Bring a low shallow pot of water to a simmer. Set up a small ice bath and set aside. Add the vinegar to the simmering water and reduce the heat until the water is just below a simmer and there are barely any bubbles. Crack and gently drop each egg into the water. Cook for 3 to 4 minutes, then transfer to the ice bath with a slotted spoon. When ready to serve, dip the eggs back into the warm water for 5 to 10 seconds, remove with a slotted spoon and gently dab on a paper towel to remove any excess water. (Alternatively, serve the eggs right away.)
  • Toast the bread in a toaster, then spread with butter. Plate with the eggs, bacon and hash browns. Enjoy!

5 -6 large eggs
1/2-1 lb bacon, cooked and crumbled
1 cup shredded sharp cheddar cheese
1 (1 lb) package frozen hash browns (shredded "or" diced) or 1 (1 lb) package fresh hash brown potatoes (shredded "or" diced)
2 tablespoons vegetable oil
salt
pepper

Steps:

  • Have your bacon cooked and crumbled and set aside.
  • Place vegetable oil (or you can use bacon drippings) in a non-stick 12" skillet and heat over medium heat.
  • Pour potatoes into pan and press down evenly.
  • Fry about 10 minutes until underside is brown and crispy.
  • As carefully as you can flip potatoes over.
  • If you can't do this in one piece, try to do it in thirds or fourths, but try to keep them from falling apart.
  • Press potatoes down in pan evenly.
  • Make 5 to 6 two inch holes, or openings into the potatoes, evenly spaced.
  • Drop an egg into each hole.
  • You can add a little butter to each hole before dropping the eggs in, if you like.
  • Sprinkle salt and pepper over all.
  • Sprinkle bacon and then cheese evenly over top.
  • Cover until eggs are set.
  • Serve in pan with toast or bagels on the side and enjoy!

Steps:

  • Take the eggs out of the refrigerator. Place a rack in the center of the oven, and heat the oven to 450 degrees.
  • Arrange the bacon on a rimmed baking sheet in a single layer, spacing evenly. Roast in the center of the oven until the fat renders and the bacon curls, about 8 minutes. Very thin slices will cook more quickly; thick-cut ones will take longer.
  • Take the pan out of the oven and quickly flip the bacon and move to one side of the pan. Crack the eggs onto the other side, then immediately return the pan to the oven and roast until the whites are just set, the yolks are still runny and the bacon is brown and crisp, 2 to 5 minutes longer. If you prefer medium or hard egg yolks or extra-crisp bacon, cook a few minutes more, but take out the bacon before it burns.
