This is very simple and comforting sandwich you can serve with hot soup or a salad. Let your imagination run wild as to what other toppings you would like to add but this is yummy just the way it is.

2 French rolls
1/2 cup refried beans
1/4 cup shredded cheddar cheese (1 ounce)

Steps:

  • Set oven control to broil. Cut rolls horizontally in half. Broil cut sides up 2 to 3 inches from heat about 1 minute or until golden brown.
  • Spread each roll half with 2 tablespoons beans. Sprinkle each with 1 tablespoon cheese.
  • Broil with tops 2 to 3 inches from heat about 1 1/2 minutes or until cheese is melted.
  • Enjoy.

1 cup refried beans
8 slices white bread
8 KRAFT Singles
1 large tomato, cut into 4 slices
8 tsp. butter or margarine, softened

Steps:

  • Spread beans onto 4 bread slices. Top each with 1 Singles and 1 tomato slice. Cover with remaining Singles and bread slices to make 4 sandwiches.
  • Spread outsides of sandwiches with butter.
  • Cook in skillet on medium heat 4 min. on each side or until sandwiches are golden brown on both sides and Singles are melted. Cool 2 min. before cutting in half.

I had some leftover canned refried beans that I wanted to eat, but not cold and not out of the can, so I came up with this truly tasty sandwich!

1 cup refried beans (Old El Paso)
1 teaspoon olive oil
2 garlic cloves, chopped
1 small white onion, coarsely chopped
2 tablespoons canned jalapeno slices, quartered
1 ounce white cheddar cheese
1/8 teaspoon salt
1/4 teaspoon black pepper
4 -8 romaine lettuce leaves, washed and trimmed
1 teaspoon French dressing, per sandwich
4 sandwich buns

Steps:

  • In a medium size skillet, heat the olive oil, saute the onion until slightly cooked, add the garlic, cook 1 minute.
  • Add the refried beans, cook and stir until heated, reduce heat to low.
  • Add the cheese. Stir to melt through.
  • Toss in the jalapeno slices. Leave on low heat until heated through. Meanwhile, toast the sandwich rolls, open faced, under the broiler, until golden.
  • Prepare the lettuce.
  • When time for assembling the sandwich, season the beans with salt and pepper. Spread the bean mixture onto the sandwich roll. Top with lettuce and the French dressing.

This little sandwich will make you want to slap somebody...probably me! I should have shared this little darling a long time ago. It's not my recipe but my dear friend, Babs. The combination of pepper jack cheese and black beans with purple onion on rye is about all one could ask for in a quick fix that tastes utterly divine.

8 slices rye bread, German rye, the lighter type with grains
1 (15 ounce) can black beans, drained
1 medium purple onion, chopped rather fine
1 (8 ounce) package monterey jack pepper cheese, the hot kind
2 tablespoons butter or 2 tablespoons margarine, softened

Steps:

  • Sandwich prep:.
  • Heat griddle or other skillet to medium heat.
  • Lightly spread butter or margarine on all 8 slices of bread, one side only.
  • Place black beans on several layers of paper towels and pat them dry.
  • Cut pepper jack cheese into medium-thick slices as you would for a grilled cheese sandwich. You will need enough slices to make your required number of sandwiches.
  • Have your chopped onions handy.
  • To build your sandwich:.
  • Make grilled cheese sandwich as you normally would -- but add black beans and purple onions in with the cheese.
  • Grill on each side until golden brown and check to see that the cheese is nicely melted on the inside.
  • ENJOY!

A simple and easily adjusted broiled open face sandwich concoction. You can use beef, ham, turkey, chicken, etc. You can also adjust the veggies. Just make sure the cheese is always on top to pull it together. The combined flavors of the ingredients that I've listed blows my mind every time I make this. Eat with a knife and fork!

2 tablespoons mayonnaise
2 teaspoons prepared coarse-ground mustard
1 pound deli sliced roast beef

Steps:

  • Preheat oven on broiler setting.
  • Cut rolls in half, and toast in a bread toaster. Place on a baking sheet. Spread each half with mayonnaise and mustard. Layer with roast beef, tomato, red onion, Provolone, salt and pepper.
