There is nothing ho-hum about these Eggless Oven Fried Chicken Tenders! The chicken has the same crispy, golden texture as the fried version. Plus, no greasy mess to clean up.

1 lb (450 g) chicken breast, (boneless and skinless (about 2 -3 medium-size chicken breasts))
1 cup (240 ml) buttermilk
1 cup (80 g) cornflakes
1 cup (100 g) seasoned bread crumbs or panko ((see notes))
1 tablespoon garlic powder
1 teaspoon black pepper
1 teaspoon paprika
1/4 teaspoon ground cayenne pepper ((optional))

Steps:

  • Use a sharp knife to trim the fat from the chicken breasts and cut it into tenders.
  • Dip the chicken into buttermilk and let soak for at least 30 minutes or up to overnight.
  • Place corn flakes, seasoned breadcrumbs, garlic powder, black pepper, paprika, and cayenne pepper into a small food processor. Pulse until well combined.

For those that have family members that suffer from allergies, this is an alternative to fried chicken or even regular oven fried chicken that incorporates egg.

4 chicken breasts (or thighs, legs, etc.)
1/2 cup cornmeal flour, mixture (or either one separately)
1/4 cup apple juice
1/4 cup canola oil
1 tablespoon paprika
1/2 teaspoon salt
1/2 teaspoon thyme
black pepper
garlic powder
onion powder

Steps:

  • Preheat oven at 350 degrees.
  • Season chicken breasts to taste with garlic powder, onion powder, salt, black pepper. Marinate pieces in apple juice. Set aside.
  • Mix flour, paprika, salt, thyme, paprika, thyme, black pepper in large bowl. In smaller bowl, pour canola oil.
  • Remove one chicken breast at a time from marinade and let drip dry. Set in oil, drip dry. Then coat in flour mixture. Place on greased cookie sheet or tray.
  • Bake for 30 minutes, turn over, and bake for 20 minutes more.

I experimented for many years before developing this recipe. It's bits and pieces of hints I had heard over the years. I have had many compliments on this chicken. Most of this recipe is dependant on your own taste. It's more a matter of preparation and cooking method!

1 (4 pound) chicken, cut into pieces
1 cup buttermilk
2 cups all-purpose flour for coating
1 teaspoon paprika
salt and pepper to taste
2 quarts vegetable oil for frying

Steps:

  • Take your cut up chicken pieces and skin them if you prefer. Put the flour in a large plastic bag (let the amount of chicken you are cooking dictate the amount of flour you use). Season the flour with paprika, salt and pepper to taste (paprika helps to brown the chicken).
  • Dip chicken pieces in buttermilk then, a few at a time, put them in the bag with the flour, seal the bag and shake to coat well. Place the coated chicken on a cookie sheet or tray, and cover with a clean dish towel or waxed paper. LET SIT UNTIL THE FLOUR IS OF A PASTE-LIKE CONSISTENCY. THIS IS CRUCIAL!
  • Fill a large skillet (cast iron is best) about 1/3 to 1/2 full with vegetable oil. Heat until VERY hot. Put in as many chicken pieces as the skillet can hold. Brown the chicken in HOT oil on both sides. When browned, reduce heat and cover skillet; let cook for 30 minutes (the chicken will be cooked through but not crispy). Remove cover, raise heat again and continue to fry until crispy.
  • Drain the fried chicken on paper towels. Depending on how much chicken you have, you may have to fry in a few shifts. Keep the finished chicken in a slightly warm oven while preparing the rest.

1 1/4 cups buttermilk
1/4 cup olive oil
3 tablespoons Dijon mustard
2 cloves garlic, minced
3 tablespoons hot pepper sauce (louisiana is good)
2 teaspoons salt
1/2 teaspoon pepper
1 large onion, sliced
12 chicken pieces
1 cup unseasoned breadcrumbs
1/3 cup parmesan cheese
1/4 cup flour
2 teaspoons thyme
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
1/2 cup melted butter

Steps:

  • Whisk buttermilk, oil, hot pepper sauce, mustard, garlic, 1 tsp salt and 1/2 teaspoon pepper in a large bowl.
  • Add the onion and then the chicken turning to coat each piece with the marinade.
  • Cover; chill at least three hours or up to one day turning the chicken occasionally.
  • Combine breadcrumbs, cheese, flour, thyme, paprika, cayenne and 1 tsp salt in a large baking dish.
  • Remove the chicken from the marinade and roll in the breadcrumb mixture.
  • Set chicken on a rack to dry for about 30 minutes.
  • Preheat oven to 400F degrees.
  • Place chicken in large baking dish and pour butter over the chicken.
  • Bake until crisp and brown, approximately 50 minutes.
