1 can (2.8 oz) French-fried onions
2 bags (24 oz each) frozen broccoli & three cheese sauce
1 package (3 oz) cream cheese, cut into cubes
1/4 cup chopped red bell pepper, if desired
1/2 teaspoon red pepper sauce

Steps:

  • Heat oven to 350°F. Reserve 1 cup French-fried onions for topping.
  • In 5-quart Dutch oven, mix remaining onions, the broccoli, cream cheese, bell pepper and red pepper sauce. Cover; cook over medium-low heat about 20 minutes, stirring once halfway through cooking, until sauce chips are melted. Transfer to ungreased 2- to 3-quart casserole.
  • Bake uncovered 20 to 25 minutes or until vegetables are tender. Sprinkle reserved onions around outer edge of casserole; bake 5 minutes longer.

This is a great casserole that I threw together one day when a friend requested Broccoli au Gratin for her birthday dinner. This is a great idea for those who aren't big fans of bread crumbs. Also, the eggs can be taken out for a great sauce and using skim milk and fat-free cheese works well, too. It's basically a great recipe that can be easily altered according to taste. Enjoy!

8 cups fresh broccoli
½ cup butter
2 tablespoons all-purpose flour
1 small onion, chopped
1 ¼ cups milk
salt and pepper to taste
4 cups shredded Swiss cheese
2 eggs, beaten

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain.
  • Melt butter in a medium saucepan over medium heat and add flour; cook until bubbly. Stir in onion and gradually add milk, stirring well. Bring to a boil and cook for 1 minute. Remove from heat and season with salt and pepper. Stir in cheese and eggs; mix well. Combine mixture with broccoli and transfer to a 9 x 13 inch casserole dish.
  • Bake in preheated oven for 30 minutes.

My mom used to make this easy recipe every Thanksgiving when I was little. We kids could never get enough! It was our very favorite Thanksgiving vegetable. If you have children, or have some coming to visit you as guests this Thanksgiving, I guarantee that they will eat (and enjoy) this veggie dish! Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

1 (10.75 ounce) can condensed cream of mushroom soup
1 cup mayonnaise
1 egg, beaten
¼ cup onions, chopped
3 (10 ounce) packages frozen chopped broccoli
8 ounces shredded sharp Cheddar cheese
salt and pepper to taste
1 dash paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
  • In a medium mixing bowl, whisk together condensed soup, mayonnaise, egg and onions.
  • Place frozen broccoli into a very large mixing bowl. (I like to use my large stainless steel bowl to mix this recipe thoroughly.) Break up the frozen broccoli. Using a rubber spatula, scrape soup-mayonnaise mixture on top of broccoli, and mix well. Sprinkle on cheese, and mix well. Spread mixture into prepared baking dish, and smooth top of casserole. Season with salt, pepper and paprika.
  • Bake for 45 minutes to 1 hour.

2 (16 ounce) packages fresh broccoli florets
3 -4 tablespoons butter
1 medium onion, chopped
2 (8 ounce) cans sliced water chestnuts
salt and pepper
1 (2 ounce) jar diced pimentos, drained (can use 2 jars if desired)
2 cups grated old cheddar cheese, shredded (can use more or less)
6 tablespoons butter
6 tablespoons flour
3 cups half-and-half cream
1 pinch salt
1/8 teaspoon cayenne pepper
1 cup old cheddar cheese, shredded
2 large eggs

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch baking dish.
  • Boil or steam the broccoli florets in a small amount of water until just fork tender; drain very well (this can be done hours or up to 1 day in advance).
  • In a skillet melt butter over medium heat; add in the onion and saute for about 6-7 minutes or until very soft.
  • Place the cooked broccoli, onion, water chestnuts and pimientos; mix to combine and season with salt and pepper; set aside while preparing the cheese sauce.
  • For the cheese sauce; melt butter in a heavy saucepan over medium heat.
  • Whisk in flour until smooth.
  • Gradually whisk in half and half cream and cayenne; bring to a boil whisking constantly for about 1 minute.
  • Remove from heat and add in the cheddar cheese; stir until melted and smooth.
  • In a bowl beat the eggs with a fork until thick and pale.
  • Gradually stir about one-forth of the hot cheese/cream mixture into the eggs; add egg mixture to the remaining hot cheese mixture stirring constantly.
  • Pour the cheese sauce into the broccoli mixture in the bowl; stir with a wooden spoon to combine thoroughly.
  • Season with more black pepper if desired.
  • Spoon the mixture into prepared baking dish.
  • Bake uncovered for about 15 minutes.
  • Remove from oven and sprinkle with grated cheddar cheese; return to oven and bake for another 30-35 minutes more.
  • Let stand for 10-15 minutes before serving.
  • Delicious!

2 (24 ounce) green giant frozen cut broccoli in cheese sauce
1 (2 7/8 ounce) durkee French-fried onions
1 (3 ounce) cream cheese, cut into cubes
1/4 cup red bell pepper, diced up (optional)
1/2 teaspoon red pepper sauce
2 cups mozzarella cheese, shredded
2 chicken bouillon cubes, crushed up
1 cup whipping cream
1/2 teaspoon black pepper
salt, to taste

Steps:

  • Preheat oven to 350°F.
  • Reserve 1 cup french fried onions in a bowl for topping.
  • In a large saucepan on medium-low heat, add cream cheese cubes, 2 bags of Green Giants Broccoli 3 cheese sauce, red peppers,(dry)chicken bouillon cubes,red pepper sauce, rest of the french fried onions, mozzarella cheese and whipping cream, black pepper and salt to taste.
  • Simmer 20 minutes and transfer to a 2-3 quart casserole dish.
  • Add the reserve 1 cup of French fried onions to top of casserole.
  • Place casserole in oven and bake 20-25 minutes or until vegetables are tender.
