BROCCOLI BAKE
This easy broccoli bake with cheddar cheese and breadcrumbs is a creamy broccoli casserole that can be a main dish or a side at Thanksgiving.

- Preheat your oven to 400 degrees F. Melt 1 tablespoon butter in a wide, deep cast iron (or other ovenproof) skillet. Once melted, pour the butter into a small mixing bowl, then combine with the Panko breadcrumbs and the Parmesan cheese. Set aside.
- Meanwhile, bring a large pot of water to a boil. Add the broccoli and cook until crisp-tender, about 3 minutes. Drain and set aside.
- Melt the remaining 2 tablespoons of butter in the same skillet. Sprinkle the white whole wheat flour over the top, then whisk constantly for 1 minute, until the butter smells fragrant and the flour turns slightly golden. Very slowly pour in the milk, whisking constantly, adding a little at a time so that you break up the clumps of flour as you go. Continue whisking until the sauce thickens, about 3 minutes, allowing the mixture to bubble. Stir in the garlic powder, salt, mustard, black pepper, and cayenne (if using). Remove the skillet from the heat, then stir in the cheddar until smooth.
- Add the reserved broccoli, stir to coat, then pat the broccoli into an even layer in the skillet. (Alternatively, if you feel your skillet is not large enough to easily stir in the broccoli without it spilling out, you can combine the two in a separate bowl, then transfer the mixture back into the skillet.)
- Sprinkle the Panko mixture evenly over the top of the broccoli. Bake until hot and the topping is crisp and light golden brown, about 20-25 minutes. (Tip: For an even crisper topping, place the skillet under your broiler for a few minutes at the end, watching carefully so that it doesn't burn.) Let stand 5 minutes, then serve.

- Heat oven to 425°F.
- Add broccoli and carrots to saucepan of boiling water; cook 2 to 3 min. or until crisp-tender. Drain, reserving 1/4 cup cooking water. Meanwhile, mix next 3 ingredients until blended.
- Return cooked vegetables to saucepan. Add cream cheese mixture and onions; stir until vegetables are evenly coated with sauce, adding reserved cooking water if necessary for desired consistency.
- Spoon into 2-qt. casserole sprayed with cooking spray; top with shredded cheese and bacon. Cover.
- Bake 25 min. or until heated through, uncovering for the last 5 min.

- Preheat oven to 350F.
- Cook the bacon until crispy. Drain and then crumble. Set aside.
- Steam the broccoli until almost tender. They should seem a little undercooked.
- Melt the butter in a medium saucepan. Add the flour and stir until thoroughly mixed. Add in the cream cheese and stir until melted.
- Add the milk and spices. Stir until well heated but do not bring to a boil as that might scald the milk.
- Stir in 1 cup of the grated cheese and remove from the heat.
- Dump the broccoli in a 13x9 baking dish. Pour the cheese mixture over the broccoli. Sprinkle bacon (minus about 2 tablespoons) and sliced green onions (minus about 2 tablespoons). Gently fold so that the broccoli is coated in the cheese mixture and the bacon and green onions are mixed throughout.
- Evenly spread the broccoli in the baking sheet. Sprinkle remaining cheddar cheese, bacon and green onions on top.
- Bake for about 20 minutes or until bubbly and the cheese is melted

- Preheat oven to 375˚F.
- Lightly spray a 3-quart baking dish with cooking oil and set aside.
- Bring a large pot of water to a boil.
- Add broccoli to boiling water and cook for 2 minutes.
- Drain the broccoli; rinse with cold water until completely cooled.Transfer broccoli back to the pot where you cooked the broccoli. Set aside.
- Melt butter in a large saucepan set over medium heat.
- Whisk in the flour to combine; cook for 2 minutes.
- Slowly whisk in the Half & Half; cook and whisk until the mixture starts to thicken.
- Remove from heat and whisk in the gruyere cheese, ½ cup feta, garlic powder, salt, and pepper. Whisk and stir until it's completely combined and melted.
- Pour the cheese sauce over the broccoli; add in the crumbled bacon, and toss to coat.
- Transfer broccoli to previously prepared baking dish; sprinkle with remaining feta, and set aside.
- In a mixing bowl stir together melted butter, crumbs, salt, pepper, and chives.
- Sprinkle over the broccoli.
- Bake for 25 to 30 minutes, or until top is browned and mixture is bubbly.
- Remove from oven and let stand 5 minutes before serving.

- Fill a 6-qt. stockpot two-thirds full with water; add salt and bring to a boil over high heat. I came up with this when I had planned to make a broccoli casserole and discovered that I didn't have any cheese! I went digging through my cabinets for something cheesey. I found a can of nacho cheese sauce. I figured it would work. It was very good in the casserole and just gave a light Kick.

- Cook broccoli until tender. I put it in the casserole dish, covered and microwaved for about 5 minutes added the onion, stirred and cooked until done.
- Drain off excess water.
- Add mushrooms-drained, mushroom soup, and cheese sauce. Mix well.
- Crush Ritz crackers (if you are using melted butter, mix together now) and sprinkle on top (if you are using butter spray, spray the top of the crackers now). The butter or spray help to get the topping crisp.
- Bake in a 350 oven until hot and bubbly and golden, 30-45 minutes.
