James Beard's Onion Sandwich Recipe: image

8 thick slices white bread, (firm-textured)
Butter, (unsalted, room temperature)
1 sweet onion, (peeled and sliced into paper-thin slices*)
Fleur de sel, (coarse salt, or sea salt)
Mayonnaise ((preferably homemade))
4 tablespoons parsley, (finely minced)

Steps:

  • Using a glass (I found that a shot glass works great) or a 2-inch round cookie cutter, cut out 2 to 3 bread rounds from each bread slice; discard trimmings or save to Make Homemade Bread Crumbs.
  • Spread one side of each bread circle with a heavy layer of butter. Place a thin layer of sliced onions over the butter. Lightly season the onions with salt.
  • Assemble the sandwiches with remaining bread slices, pressing lightly to make them adhere.
  • Spread some mayonnaise around the outside rim of each sandwich round. Roll the rim of each sandwich in the minced chives or parsley to coat.
  • Serve immediately or cover and refrigerator for a few hours.
  • Makes 16 to 24 sandwich rounds.
  • Making Sandwiches Ahead of Time:
  • If you need to make tea sandwiches in advance and need to keep them from drying out, cover them loosely with a sheet of wax paper and then place a damp kitchen towel over the wax paper (never place a damp towel directly on top of the bread because the sandwiches will become soggy). Refrigerate.
  • When ready to serve, remove from refrigerator. Uncover sandwiches just before serving.

1/4 cup shredded sharp Cheddar
1/4 cup shredded Gruyere cheese
1/4 cup sliced Robiola cheese
1 tablespoon prosecco
1 teaspoon chopped fresh parsley
1 teaspoon Dijon mustard
1 clove garlic, minced
Four 1-inch-thick slices brioche
2 tablespoons butter, at room temperature
Salt and freshly ground black pepper

Steps:

  • Heat a griddle over medium heat.
  • Buzz the Cheddar, Gruyere, Robiola, prosecco, parsley, mustard and garlic in a food processor until combined but still chunky and spreadable. Spread the mixture among the bread slices. Sandwich 2 slices, spread 1 tablespoon of the butter on the outside of the sandwich and season with salt and pepper. Repeat with the remaining ingredients.
  • Griddle the sandwiches over medium heat until golden brown on the first side. Flip over and continue to cook until the cheese is melted and the exteriors are crispy, about 5 minutes.

  • Spread the rounds with mayonnaise. On half the slices place a very thin slice of raw onion, just the size of the round, and salt it well. Place another slice of brioche on top; roll the edges first in mayonnaise and then in finely chopped parsley.

3 tablespoons sweet paprika
2 tablespoons minced garlic
1 tablespoon packed dark-brown sugar
1 tablespoon ground mustard
3 tablespoons coarse sea salt
1 pork roast (shoulder or rump; about 5 pounds)
Barbecue Sauce for Pulled-Pork Sandwiches
6 brioche rolls or hamburger buns, split

Steps:

  • Stir together paprika, garlic, sugar, ground mustard, and salt in a small bowl. Rub spice mixture all over pork. Cover pork with plastic wrap. Refrigerate at least 3 hours (up to overnight).
  • Preheat oven to 300 degrees. Transfer pork to a roasting pan. Roast until an instant-read thermometer inserted into thickest part of the meat registers 170 degrees and pork pulls away easily with a fork, about 6 hours. Transfer pork to a cutting board; let rest 10 minutes.
  • Set roasting pan over two burners of the stove. Add 1/2 cup water; bring to a boil. Cook, stirring with a wooden spoon to loosen browned bits, until reduced by half, about 3 minutes; reserve for barbecue sauce.
  • Using two forks, shred warm pork into a large bowl. Add half the barbecue sauce, and stir to coat. Spoon pork onto bottom halves of rolls; top with more sauce, and sandwich with tops of rolls.

James Beard took this recipe from his colleagues Irma and Bill Rhode over 60 years ago, but there's something delicate, fresh and unfussy about the sandwich even now. There isn't much to it, so each component really matters: Slice the onions thinly and evenly, season well, and be gentle so you don't squish the bread as you press each sandwich shut. Rolling the edge of the sandwich in chopped parsley (or a mix of parsley and other fresh herbs), gives it a retro styling touch, but it's crucial for flavor, too.

1 loaf challah or brioche, sliced about 1/4-inch thick
1/2 cup mayonnaise
1 to 2 sweet white onions, such as Vidalia
Crunchy sea salt, to taste
1 cup fresh herbs, such as parsley, or a mix of parsley, tarragon and marjoram, chopped

Steps:

  • Using a 1 1/2-inch cutter, cut 24 rounds from the bread and arrange in 12 pairs. Spread each round with mayonnaise.
  • Slice the onions through the equator, evenly and thinly, and put a slice that fits the bread on half the bread rounds. Salt lightly, then cover with a second round of bread.
  • When sandwiches are assembled, spread remaining mayonnaise on a piece of parchment paper, and have the chopped herbs ready in a bowl.
  • Hold a sandwich, and roll the edge in mayonnaise, then in the chopped herbs, covering the edge. Cover and chill for about 1 hour and up to 6 hours before serving.

2 small yellow onions, cut into 24 very thin rounds

3 tablespoons finely chopped fresh flat-leaf parsley, patted dry

Steps:

  • Spread the rounds on one side with mayonnaise and place the rounds mayonnaise-side up on the work surface. On half of the slices place an onion round, just the size of the brioche, and salt it well. Top with the remaining brioche rounds, mayonnaise side down. Roll the edges of each sandwich first in mayonnaise, and then in the chopped parsley.
