BREAKFAST PIZZA SKILLET
I found the recipe for this hearty stovetop dish several years ago and changed it to fit our tastes. When I served it at a Christmas brunch, it was an instant hit. -Marilyn Hash, Enumclaw, Washington

- In a large skillet, cook sausage over medium heat until no longer pink. Add the potatoes, onion, green pepper, salt and pepper. Cook over medium-high heat for 18-20 minutes or until the potatoes are browned. , Stir in mushrooms. Pour eggs over the potato mixture. Arrange tomato slices on top. Sprinkle with cheese. , Cover and cook over medium-low heat for 10-15 minutes or until eggs are completely set (do not stir). Serve with sour cream and salsa if desired.

- Grease a cast iron skillet with the ½ tablespoon of vegetable oil. Spread all of the biscuits around the bottom of the skillet, and up the sides slightly. Make sure to press all of the "seams" together where the biscuits meet, so you end up with one solid dough. Bake in oven for about 20-21 minutes, or until dough is light brown on top.
- While dough is baking, sauté the onions, red bell peppers and mushrooms in ½ tablespoon of olive oil over medium heat until soft. Season to taste with salt and pepper.
- Also while dough is baking, whisk the eggs with the half and half and 1 teaspoon salt and ½ teaspoon black pepper. Melt the butter in a skillet over medium, and then add egg mixture. Cook until eggs are no longer runny.

- Line bottom of seasoned 9" cast iron skillet with 6-8 biscuit dough discs, spreading each out to meet to form the crust. For thinner crust, split 3 biscuits in half lengthwise, stretch, and spread.
- Spread sausage gravy on top of crust, forming a "sauce". (I used this recipe from Poofy Cheeks.)
- Top as desired. I layered mine starting with mozzarella and cheddar cheese, scrambled eggs, tomatoes, peppers, mushrooms, spinach, and topped it all off with some crumbled feta.
