CHEESE SPREAD AKA BOTTOMLESS CHEESE CROCK



Cheese Spread Aka Bottomless Cheese Crock image

I saw this in a very old, old recipe book..the name escapes me. Anyways once this cheese crock is started, you keep it going by blending cheese remnants into it. And if additions keep pace with subtractions, you'll have a cheese spread that lasts almost indefinitely. Store the crock in the refrigerator. Before serving, let cheese soften at room temperature for about an hour.

Number Of Ingredients 6

4 cups shredded sharp cheddar cheese
3 ounces cream cheese
1 1/2 tablespoons olive oil
1 teaspoon dry mustard
1 teaspoon garlic salt
2 tablespoons brandy

Steps:

  • Let cheeses stand at room temperature until soft.
  • Combine cheeses.
  • Add olive oil, mustard, garlic salt, and brandy.
  • Beat until well blended.
  • Pack into container, cover, and refrigerate for about a week before using the first time.
  • Adding to the Crock: Firm cheeses---such as Swiss, Jack, or any Chdeddar types---are fine. Shred and beat in while cheese in crock is soft, adding small amounts of olive oil or cream cheese for good consistency. Also add brandy, dry Sherry, Port, beer, or Kirsch, keeping the total not larger than the original proportion of brandy. Then let mixture age a few days before serving. Use it every week or two, saving part of original mixgture to keep crock going.

When our family and friends get together for holidays or other occasions, I serve this appetizer. It's always a success. If you prefer, try a Swiss cheese spread instead of the cheddar. 1 container (16 ounces) cheddar cheese spread, softened
1 package (8 ounces) plus 3 ounces cream cheese, softened
3 tablespoons butter, softened
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder
Paprika
Snipped fresh parsley
Assorted crackers

Steps:

  • In a medium bowl, combine cheese spread, cream cheese, butter, Worcestershire sauce and garlic powder. Blend thoroughly. Chill at least 3 hours or overnight. Sprinkle with paprika and parsley. Serve with crackers.

1/4 teaspoon(s) instant coffee granules
1 tablespoon(s) hot water
8 ounce(s) pkg. cream cheese, softened
1/4 cup(s) sugar
2 tablespoon(s) sour crean
2 tablespoon(s) brandy
2 ounce(s) pkg. slivered almonds, toasted and chopped

Steps:

  • Dissolve coffee granules in hot water, in a large mixing bowl. Add cream cheese and next 3 ingredients, beat at medium speed with an electric mixer until blended. Stir in almonds. Spoon mixture into an airtight container and refrigerate up to 1 week. Makes 1 1/2 cups. Serve with gingersnaps or sliced apples.

Crackers or toasts (for serving)

Steps:

  • Combine cream cheese, butter, garlic, and salt in the bowl of a food processor. Pulse until smooth. Add parsley and chives and pulse a few times until well combined. Pack mixture into a small bowl, ramekin, or glass jar. Cover and chill at least 30 minutes. Serve with crackers or toasts.

  • Cheese can be made 5 days ahead. Cover and chill.

  • Line flat shallow 1 1/2-cup dish with plastic wrap. In food processor bowl with metal blade or mixer bowl, combine cream cheese, blue cheese, Cheddar cheese and onion; process until well blended. Spoon cheese mixture into lined dish; smooth top. Cover; refrigerate.
  • In small saucepan, combine cranberries, sugar and apple juice concentrate. Cook over low heat until juices flow and cranberries pop, stirring frequently. Cook 3 minutes or until slightly thickened. Remove from heat; cool 5 minutes. Stir in brandy. Cover; refrigerate 30 minutes or until cooled.
  • About 30 minutes before serving time, remove cover from cheese; invert onto small serving plate. Remove plastic wrap. Let stand at room temperature for 30 minutes for best flavor. Before serving, spoon cranberry mixture over cheese. Serve with assorted crackers.
