I love this recipe for braised red cabbage with apples. It's simple, and can be made in to a festive winter side dish if you add cinnamon and orange.

1 medium orange, halved
1 medium head red cabbage, cored and diced (1-inch pieces)
2 medium Granny Smith apples, cored and cut into 1-inch pieces
½ medium onion, chopped
¼ cup vinegar
1 teaspoon ground cinnamon
1 teaspoon salt
ground black pepper to taste

Steps:

  • Juice one orange half. Remove and discard the peel from the second half, and cube the flesh.
  • Combine cabbage, apples, onion, vinegar, cinnamon, and salt in a large stock pot over low heat. Add orange juice and chopped flesh, then season with pepper. Cover and simmer, stirring occasionally, until cabbage is tender and has reduced, at least 45 minutes.

This is an adaptation of a classic cabbage dish that I never tire of. The cabbage cooks for a long time, until it is very tender and sweet. I like to serve this with bulgur, or as a side dish with just about anything. You can halve the quantities if you don't want to make such a large amount.

Number Of Ingredients 8

1 large red cabbage, 2 to 2 1/2 pounds, quartered, cored and cut crosswise in thin strips
2 tablespoons canola oil
1 small onion, thinly sliced
2 tart apples, such as Braeburn or granny smith, peeled, cored and sliced
About 1/3 cup balsamic vinegar
1/4 teaspoon ground allspice
Salt
freshly ground pepper to taste

Steps:

  • Prepare the cabbage, and cover with cold water while you prepare the remaining ingredients. Heat the oil over medium heat in a large, lidded skillet or casserole, and add the onion. Cook, stirring, until just about tender, about three minutes. Add 2 tablespoons of the balsamic vinegar and cook, stirring, until the mixture is golden, about three minutes, then add the apples and stir for two to three minutes.
  • Drain the cabbage and add to the pot. Toss to coat thoroughly, then stir in the allspice, another 2 tablespoons balsamic vinegar, and salt to taste. Toss together. Cover the pot, and cook over low heat for one hour, stirring from time to time. Add freshly ground pepper, taste and adjust salt, and add another tablespoon or two of balsamic vinegar as desired.

This is a recipe I have been cooking for years. It's great because it can be made a day or two before and gently reheated with no last-minute bother. It is a perfect accompaniment to venison, goose or pork (and if you have any left over it does wonders for bangers and mash).

2 lb (1 kg) red cabbage
1 lb (450 g) onions, chopped small
1 lb (450 g) cooking apples, peeled, cored and chopped small
1 clove garlic, chopped very small
¼ whole nutmeg, freshly grated
¼ level teaspoon ground cinnamon
¼ level teaspoon ground cloves
3 level tablespoons brown sugar
3 tablespoons wine vinegar
½ oz (15 g) butter

Steps:

  • First discard the tough outer leaves of the cabbage, cut it into quarters and remove the hard stalk. Then shred the rest of the cabbage finely, using your sharpest knife (although you can shred it in a food processor, I prefer to do it by hand: it doesn't come out so uniform). Next, in a fairly large casserole, arrange a layer of shredded cabbage seasoned with salt and pepper, then a layer of chopped onions and apples with a sprinkling of garlic, spices and sugar. Continue with these alternate layers until everything is in. Now pour in the wine vinegar, lastly add dots of butter on the top. Put a tight lid on the casserole and let it cook very slowly in the oven for 2-2½ hours, stirring everything around once or twice during the cooking. Red cabbage, once cooked, will keep warm without coming to any harm, and it will also re-heat very successfully. And, yes, it does freeze well so, all in all, it's a real winner of a recipe.

1 small red cabbage (about 900g)
1 sliced red onion
70g soft light brown sugar
70ml cider vinegar
150ml red wine
a large knob of butter
1 cinnamon stick

Steps:

  • Quarter the red cabbage and remove the core, then finely shred. Tip into a large pan with the red onion, brown sugar, cider vinegar, red wine, butter and cinnamon stick and season well. Bring to a simmer, then cover with a lid, lower the heat and cook for 1 1/ 2 hrs, stirring every so often. Remove the lid and continue cooking for 30 mins until tender. Will keep for two days, or can be frozen for two months. Reheat until piping hot.

A fitting complement to meats, and fish, this is an earthy side dish containing cabbage, apples and grainy mustard. For best results, use Northern Spy, MacIntosh or Cortland apples (about 5).

2 tablespoons unsalted butter
2 cups onions, peeled and finely sliced
4 fresh thyme sprigs
2 1/2 teaspoons salt
1 1/2 teaspoons fresh ground pepper
2 tablespoons pommery grainy mustard
3 cups apples, peeled and julienned
10 cups savoy cabbage, quartered, and finely sliced (approximately 1 small head)
1 cup buttermilk
1 cup whipping cream

Steps:

  • In a large pot over medium-high heat, melt butter. Add onions, thyme and season with 2 teaspoons salt and 1 teaspoons pepper. Cook for 5-6 minutes or until the onions are soft and translucent; add mustard and stir to combine. Add apples and cabbage and stir gently.
  • Add buttermilk and cream, decrease heat to medium and cover. Let simmer for 10-15 minutes or until cabbage is soft but not mushy. Season with remaining salt and pepper and serve.

I adapted this from a recipe I saw at Mediterranean Cooking in Alaska. I had been looking for ideas for red cabbage with mushrooms since I had both on hand. I was intrigued by their recipe, and adapted this one out of that, with some seasoning changes. It is a variation on rotkohl and I served it with (Cottage Ham) Recipe #493933, which paired together perfectly. Bill's German culinary roots were screaming "Ya Buddy"!

16 ounces red cabbage, shredded
1/2 cup chopped shallot
6 ounces white mushrooms or 6 ounces cremini mushrooms, chopped
1 tablespoon olive oil
4 garlic cloves, chopped
2 teaspoons fresh thyme
1/2 teaspoon crushed juniper berries
sea salt
black pepper
1 tablespoon minced fresh chives
1 tablespoon brown sugar
2 tablespoons butter
2 cups pinot noir wine
6 ounces organic fresh blueberries

Steps:

  • Saute the shallots in olive oil until translucent, then add red cabbage and mushrooms and cook until wilted.
  • Stir in the garlic, thyme, juniper, salt, pepper, chives, and brown sugar, top with wine, bring to a boil, lower heat, cover and simmer 30 minutes, Stir occasionally and add a little water if it becomes dry.
  • Remove lid, and stir in blueberries and taste for acidity. Different wines have different acidity and you will achieve a balance by adjusting the brown sugar if needed.
  • Cook over low heat for another 15 minutes or so, stirring frequently.
