3 cups shredded rotisserie chicken
½ cup marinara sauce
8 oz fresh mozzarella cheese, sliced

3 cloves garlic, finely chopped
2 tablespoons fresh parsley, finely chopped
2 tablespoons grated parmesan cheese

Steps:

  • Preheat the oven to 350°F (180°C).
  • Slice the rolls in half lengthwise. Place the bottom half in a 9 x 13-inch (23 x 33-cm) rimmed baking dish. Spread the chicken evenly on top, followed by the marinara, mozzarella, and basil. Top with the remaining rolls.

Steps:

  • Preheat the oven to 350°F (175°C).
  • Combine the beef, salt, pepper, and garlic powder in a 9x13-inch (23x33-cm) rimmed baking dish, mixing thoroughly, then pressing into a flat, even layer. Bake for 20 minutes. Drain the liquid and set the cooked beef aside.

8 brioche slider rolls
1 lb ground turkey, preferably dark meat
¼ cup yellow onion, finely diced
1 large egg
½ teaspoon freshly ground black pepper
2 teaspoons kosher salt
2 teaspoons garlic, minced
½ cup ketchup
½ cup BBQ sauce
½ cup shredded low-moisture mozzarella
8 green olives, small pimiento stuffed, halved crosswise
8 squares of foil, 7 in (17 cm)
9 toothpicks, divided

Steps:

  • Use a paring knife to cut out the center of a slider bun, leaving a ¼-inch (6 mm) border around the edge. Remove the bread from the center of the bun and place it in a food processor. Use your fingers to press the remaining bread to the bottom or sides of the bun to make a mini bread bowl. Set the bread bowl on a baking sheet and repeat with the remaining buns.
  • Pulse the bread in the food processor for 20-30 seconds, until it breaks down into fine bread crumbs. Set aside ½ cup (55 G) of the bread crumbs and transfer the rest, about 1 cup (115 G), to a resealable bag and freeze for another use.
  • Make the meatballs: Preheat the oven to 400°F (200°C). Grease the foil pieces with nonstick spray. Set aside.
  • In a medium bowl, combine the ground turkey, reserved ½ cup (55 G) bread crumbs, onion, egg, pepper, salt, and garlic. Gently mix until well combined.
  • Using a 2-ounce ice cream scoop, scoop 8 meatballs onto the prepared baking sheet and roll into balls. Chill for 30-60 minutes to set.
  • Make the sauce: In a medium bowl, mix together the ketchup and barbeque sauce.
  • Roll the foil squares into strips.
  • Remove the meatballs from the refrigerator. Lay a foil strip over the top of each meatball, down the center. Press the foil down the center of the meatball to create an indentation that resembles a brain.
  • Brush the meatballs with the sauce.
  • Using a toothpick, add some texture to the sides of each meatball by pressing the side of the toothpick into the meat to create grooves and ridges.
  • Bake the meatballs for 18-20 minutes, or until the sauce begins to lightly brown on top and the internal temperature reaches 165°F (75°C).
  • Assemble the sliders: Scoop ½ tablespoon of sauce into the bottom of each prepared slider bun. Top the sauce with 1 tablespoon of grated mozzarella cheese. Gently tuck a meatball into the hole in the bun, making sure only a small amount, about ¼ inch (6 mm), of the meatball is inside the bun. Brush the tops with more sauce.
  • Bake for 10 minutes, or until the sauce has set and the bread is toasted.
  • Cut 8 of the toothpicks in half. Insert the ends of the toothpick halves into the rounded side of the halved olives. Make sure that the toothpicks do not stick out the front, which should look like eyeballs.
  • Remove the sliders from the oven and add the eyes by pushing the ends of the toothpicks with the olives into the side of the sliders. Serve immediately, being careful to remove the toothpicks before consuming.

2 tablespoons everything seasoning blend

Steps:

  • Preheat oven to 375°. Heat a large nonstick skillet over medium heat. In a large bowl, whisk eggs, milk, green onions and pepper until blended; pour into skillet. Cook and stir until eggs are thickened and no liquid egg remains; remove from heat., Spread cream cheese over bagel bottoms; place in a greased 13x9-in. baking dish. 1 pack dinner roll, 12 rolls left intact, not pulled apart

Steps:

  • Preheat the oven to 350° F (180°C).
  • In a large bowl, combine the ground beef, egg, salt, pepper, garlic powder, parmesan, and chopped basil until thoroughly mixed.
  • Take a golf ball-sized amount of the beef mixture and roll it into a ball. Repeat with the rest of the beef mixture, setting the meatballs aside on a plate.
  • Heat oil in a pan over high heat. Sear meatballs on one side for about one to two minutes, then flip. Cook for another one to two minutes, then remove the meatballs from the pan and drain any excess fat.
  • Pour the marinara sauce into the pan and place the meatballs in the sauce. Cook for about eight to 10 minutes, flipping the meatballs in the sauce until the sauce has reduced to a thick consistency. Remove from heat.
  • Cut the 4×3 sheet of dinner rolls in half lengthwise. Arrange the bottom half into a 9×13 inch (23x33 cm) baking pan.
  • Place the meatballs evenly in a 4×3 grid, putting one on each roll. Layer the mozzarella evenly on top. Cover with the top half of the dinner rolls.
  • In a small bowl, combine the melted butter, garlic, basil, and parmesan, stirring until evenly mixed. Pour the garlic butter mixture over the top of the sliders.
  • Bake for 20 minutes until the rolls are golden brown and cheese is melted.
  • Cut into individual sandwiches, and serve.

½ yellow onion, diced
¼ cup fresh parsley, chopped
¼ cup bread crumbs
1 egg
2 cloves garlic, minced
½ teaspoon dried oregano
½ teaspoon dried basil
1 teaspoon salt
½ teaspoon pepper
18 slices bacon
¼ cup BBQ sauce

Steps:

  • In a medium-sized bowl, mix the ground beef, onion, parsley, bread crumbs, egg, garlic, oregano, basil, salt, and pepper until combined. Set aside.
  • Preheat oven to 400°F (200°C).
  • Line two empty ice trays with bacon, overlapping each piece to cover the tray completely.
  • Press the bacon down into each round with two fingers.
  • Spoon some of the meatball mixture into each round and press down to smooth. Make sure to pack the meat down to touch the bottom of the ice tray.
  • Fold the edges of the bacon on top of the ice tray.
  • Flip the ice tray over onto a baking sheet and carefully lift the ice cube tray off of the meatballs.
  • Bake for 20 minutes, or until bacon is just brown.
  • Brush the meatballs with barbecue sauce and bake for 10 minutes, or until the bacon is crispy and meatballs are cooked through.
  • Transfer the meatball sheet to a cutting board and cut the bacon to create single meatballs.
  • Place a toothpick in each meatball.

5 thick-sliced bacon strips, chopped
1 pound uncooked bratwurst links, casings removed
1 large onion, finely chopped
2 garlic cloves, minced
1 package (8 ounces) cream cheese, cubed
1 cup dark beer or nonalcoholic beer
1 tablespoon Dijon mustard
1/4 teaspoon pepper
16 dinner rolls, split and toasted
2 cups cheddar and sour cream potato chips, crushed

Steps:

  • In a large cast-iron or other heavy skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, reserving drippings. Cook bratwurst and onion in drippings over medium heat until meat is no longer pink, breaking into crumbles. Add garlic; cook 1 minute longer. Drain well., Stir in the cream cheese, beer, mustard and pepper. Bring to a boil. Reduce heat; simmer, uncovered, until thickened, 15-20 minutes, stirring occasionally. Stir in bacon. Our baked cheeseburger sliders are some of the cutest and most delicious burgers I've ever seen.

2 pounds ground beef
½ onion (diced)
½ cup barbecue sauce
¼ cup breadcrumbs
½ teaspoon seasoned salt
pepper (to taste)
6 slices cheddar cheese
12 rolls (small Hawaiian rolls)
1 cup dill pickle slices (optional topping)
⅓ cup ketchup (optional topping)
3 teaspoons mustard (optional topping)
2 tomatoes (sliced - optional topping)
1 cup lettuce (shredded - optional topping)

Steps:

  • Heat oven to 400 degrees.
  • In a bowl, combine beef, onion, bbq sauce, bread crumbs, seasoned salt and pepper. Gently press mixture into a 9 x 13 inch baking dish so that it makes one large patty of even thickness. Use the tines of a fork to poke holes throughout the meat.
  • Bake for 30 minutes.
  • When the hamburger is fully cooked, the meat will shrink away from the sides and liquid will accumulate around the edges of the pan.
  • Remove the pan from the oven and carefully drain of the liquid from the pan.
  • Place slices of cheese in a single layer on top of the meat and return pan to oven for about 2-3 minutes or until the cheese starts to melt.
  • Remove from the oven and allow to rest for a few minutes. cut the meat into 2 inch squares (or the size of the buns used), making 12 mini hamburgers.
  • Serve with dill pickles, ketchup, mustard, tomatoes and lettuce.

1 ½ cups shredded mozzarella cheese
3 cups rotisserie chicken, shredded
¾ cup hot sauce
½ cup ranch dressing
2 tablespoons butter, melted

Steps:

  • Carefully slice the pack of dinner rolls in half, being sure to keep the rolls connected as a single units as they are split into tops and bottoms.
  • Remove the top and place the bottom section in a 9x12 inch (23x30 cm) baking dish.
  • Sprinkle the bottom with about 1 cup (100 g) of the shredded mozzarella cheese (make sure it is evenly coated as this will act as a barrier between the sauce and the bread, preventing the rolls from getting soggy).
  • Top the cheese with the shredded rotisserie chicken. Drizzle the hot sauce and ranch dressing evenly over the chicken and spread out evenly with a spoon. Top with remaining mozzarella cheese.
  • Place the top half of the rolls on top and brush evenly with melted butter.
  • Bake in a preheated oven for 20-25 minutes, until the cheese is melty and the rolls have heated through.
  • Remove from oven, cool slightly before transferring to a cutting board.
  • Using a large knife, follow the lines of the rolls, cutting them into 12 individual sliders.
