1 1/2 tablespoons cornstarch
1/3 cup sugar
4 cups boysenberries
1/8 cup water
1 tablespoon butter
1 tablespoon lemon juice
1 cup flour
1 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons soft butter
1 egg, slightly beaten
3 tablespoons milk

Steps:

  • Preheat oven to 350°F.
  • In a saucepan mix cornstarch, sugar, and water. Add berries and cook on medium to medium high heat until mixture is thickened, about 15 minutes. Add butter and lemon juice. Pour into an 8" baking dish.
  • Prepare the batter by mixing all of the batter ingredients and beating with a spoon until the batter is smooth.
  • Drop the batter over the berry mixture. Bake 25-30 minutes at 350°F.
  • Let cool. Serve with whipped cream or ice cream.

My grandparents had what seemed like a mile of boysenberries vines, and I never minded the scratches from picking them 'cause they were so good. One of my favorite memories is the summer my granddaddy wrote Girls'nBerries on each jar we canned. This isn't my grandmother's special recipe I learned as a child, but it's nice since it uses canned berries...fresh boysenberries are so hard to come by anymore. Adapted from a recipe I saw on Mom's Cooking. By the way, I have halved the recipe in a smaller pan and it worked out fine.

1 cup flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup sugar
1 cup milk
1/2 cup butter
2 (15 ounce) cans boysenberries

Steps:

  • Preheat oven to 425 degrees.
  • Whisk together dry ingredients, then add milk and whisk until there are no lumps.
  • Melt butter in a large cast iron skillet over medium high heat. Pour batter into pan but don't stir it.
  • Add all the juice from the 2 cans of boysenberries and 1 1/2 cans of the berries. Don't stir, but do move the berries slightly out from the center with a spoon.
  • Cook for 40 minutes or until done.
  • Use remaining berries as a garnish.

This cobbler is topped with simple biscuit dough that lets the berries shine. Use blackberries or raspberries; a dash of cinnamon rounds out their flavor. Martha made this recipe on episode 704 of Martha Bakes.

1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon coarse salt
4 ounces (1 stick) cold unsalted butter, cut into small pieces
3/4 cup cold heavy cream, plus more for brushing
1/4 teaspoon ground cinnamon
1/2 cup granulated sugar, plus more if needed
3 tablespoons cornstarch, plus more if needed
6 cups (3 pints) blackberries or raspberries
Sanding sugar, for sprinkling
Vanilla ice cream, for serving (optional)

Steps:

  • Preheat oven to 375 degrees. Pulse flour, baking powder, and salt in a food processor (or whisk together by hand in a large bowl) until combined. Add butter and process (or cut in using a pastry blender or two forks) until mixture resembles coarse meal. Transfer mixture to a large bowl, if needed, and add heavy cream in a slow, steady stream, mixing with a wooden spoon until dough just comes together. Pat dough into a square on work surface and cut into 9 equal squares.
  • Whisk together cinnamon, granulated sugar, and cornstarch in a bowl. Add berries; toss gently to coat. Transfer mixture to an 8-inch square baking dish. Top berries with dough squares, spacing evenly. Brush dough with heavy cream and sprinkle with sanding sugar. To catch any juices that may bubble over when baking, place the baking dish on a rimmed baking sheet lined with parchment paper and fitted with a wire rack or lay a piece of foil on the rack below the cobbler. Bake until berries are bubbling in center and biscuits are golden brown, 50 to 75 minutes. If biscuits are browning too quickly, tent with foil. Transfer dish to a wire rack and let cool slightly, about 30 minutes. Serve with ice cream if desired.

¾ teaspoon salt
⅓ cup butter, melted
½ cup white sugar, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread boysenberries in a 7x11-inch baking pan.
  • Mix flour, egg, baking powder, and salt together with a fork to make a crumble. Scatter over berries. Pour melted butter over crumble. Sprinkle sugar on top.
  • Bake crisp until top is browned, 40 to 50 minutes.
