PECAN FUDGE PIE
Steps:
- Preheat the oven to 350°F. Line a 10-inch pie plate with the rolled-out crust.
- Melt the chocolate chips in a double broiler, stirring occasionally. Combine the eggs, corn syrup, butter, vanilla, and salt and stir until thoroughly combined. Gradually add the chocolate to the egg mixture while stirring rapidly. Stir in the pecans. Spread the filling evenly in the crust.
- Bake for 55 minutes, or until set, when a knife inserted in the center comes out clean. Cool on a wire rack for 1 hour before slicing. Serve at room temperature.

AUNT BERNICE'S CORNBREAD
I received this recipe from my cousin Leslie when putting together our family cookbook. The recipe belonged to her grandmother, Bernice Peters Chastain (my grandpa's sister). She said that she originally used white cornmeal, but her family always thought it looked "anemic" so they used yellow cornmeal. I believe this is the perfect southern cornbread recipe! It's actually the only cornbread that my step-son will eat!

Steps:
- Preheat oven to 400°F.
- Combine all ingredients except for 2 tablespoons of shortening; Mix well.
- In an iron skillet, place 2 tablespoons shortening.
- Place skillet in oven for a few minutes, until shortening is melted.
- Remove skillet from oven and pour cornbread batter on top of melted shortening.
- (Don't mix) Bake for 25 minutes, or until top is golden brown.
- ~NOTE~If you don't have an iron skillet, you may use a 8-inch round cake pan, using the same directions.

- Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 5 minutes. Remove foil and set shell aside. Reduce heat to 375°. , In a heavy saucepan, melt chocolate and butter. Remove from the heat; stir in milk and water. Add a small amount of hot chocolate mixture to eggs; return all to the pan.
