BERRY BAKED OATMEAL
This baked oatmeal is a healthy way to start your day. The oat bran and chia seeds add protein and fiber to keep you full to lunch time.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Spray an 8x8-inch glass baking dish with cooking spray.
- Mix oats, brown sugar, oat bran, chia seeds, baking powder, cinnamon, orange peel, and salt together in a bowl. Whisk milk, eggs, honey, butter, and vanilla extract together in a separate bowl.
- Layer strawberries into the prepared baking dish; top with oat mixture. Pour milk mixture over oat mixture and top with blueberries.
- Bake in the preheated oven until lightly browned and set, 23 to 28 minutes.

BLUEBERRY OATMEAL
Oatmeal is a great way to start the day and this is a recipe I have developed over the years. It's delicious, light, and great with milk to help cool it down. You can replace the milk with soy milk, if desired. You can add the blueberries earlier in the cooking process if you like them hotter and plumper.

- Combine water and salt together in a saucepan; bring to a boil. Add oats; cook and stir until halfway tender, 2 to 3 minutes. Stir flax, brown sugar, cinnamon, and vanilla extract into oatmeal; continue cooking until oats are tender, water is boiled off, and desired cereal consistency is reached, 2 to 3 minutes more. Stir milk and blueberries into oatmeal.

- Preheat the oven to 350 degrees F. Grease a 2-quart baking dish or 8-inch square baking pan with the butter.
- For the oatmeal: Stir together the oats, sugar and 1/8 teaspoon salt in a large bowl. Whisk together the almond milk, egg, vanilla and almond extract in a medium bowl. Pour the milk mixture into the oat mixture and stir well to combine.
- For the topping: Stir together the almonds, oats, sugar, butter, flour, cinnamon and 1/8 teaspoon salt in a medium bowl until evenly combined.
- To assemble: Pour the oatmeal into the prepared baking dish. Arrange the berries (including any juices) over the oatmeal. Sprinkle with the topping. Bake until lightly browned and just set, about 50 minutes. Let cool on a rack for 10 to 15 minutes. Serve warm with a dollop of yogurt or a splash of milk if using.

Irish Steel Cut oatmeal is what I use in this recipe not the quick cooking You can use what oatmeal you enjoy just adjust the water to oatmeal ratio. This is super healthy, very low fat, no sodium, and cholesterol free. Important not to overcook so you get that nice nutty flavour with a slightly chewy texture. In the U.S.A., new dietary guidelines recommend that consumers eat at least half their grains as whole grains - for adults this means three or more servings of 16g of whole grains (48g in total) per day. Helping to reduce the risk of heart disease and may prevent certain cancers.

PEEK -A-BERRY BOO COOKIES
This was publish in the Baking Sheet of King Arthur Flour recipe booklet publication. It was a recipe makeover of an original recipe that belonged to Valerie Gardner of Idaho. They are oatmeal cookies with a spoonful of jam in the middle, covered with more oatmeal cookie dough. The jam peeks out of the center of the oatmeal cookie.

- Preheat oven to 375°F; line two cookie sheets with parchment paper.
- Cream together butter and shortening. Add the sugars, and beat until fluffy. Beat in the egg, water and almond extract.
- In a separate bowl, whisk together the flour, baking soda, salt and cinnamon. Add to the butter mixture and mix until evenly combined. Stir in the oats. Scoop by the tablespoon onto baking sheets, make a dent on top with your thumb (or the top of the almond extract bottle, which is the perfect size). Place 1 tsp of raspberry preserves on each cookie. Top with a small amount of cookie dough (1/2 to 1 level teaspoonful, a blob about the size of a peanut M&M candy).
- Bake for 12 to 14 minutes until golden brown around the edges. Remove from the oven and cool on the sheet for 5 minutes before transferring to a rack to complete cooling completely.

- Heat oven to 375 degrees. Butter 8-inch round cake pan or pie plate.
- Mix 2 T. flour, the granulated sugar, lemon juice, and 1/4 t. nutmeg in mixing bowl. Add berries and toss gently to combine. Transfer to buttered pan.
- Place remaining 1/2 cup flour, the oatmeal, brown sugar, and remaining 1/4 t. nutmeg in food processor; process to blend. With machine running, add butter a few pieces at a time. Spoon mixture over berries.
- Bake until top is golden, about 30 minutes. Let cool slightly. Serve warm with whipped cream.
