The Recipe for Cheese Crouton image

Follow this recipe to take crunchy homemade croutons one step further by adding a topping of cheese.

1 loaf (8 ounces) of bread (fresh or stale)
1/2 cup olive oil (or more if needed)
1/2 cup cheese (finely grated or more to taste)
Dash salt (to taste)

Steps:

  • Gather the ingredients.
  • Preheat oven to 325 F.
  • Slice the loaf of bread into 1/2- to 1-inch squares.*
  • Put the bread cubes in a large bowl and toss with olive oil, cheese and a few pinches of salt. The easiest way to do this is with your hands, tossing the bread repeatedly so it is evenly covered.
  • Spread the croutons out in one layer on a rimmed baking sheet .
  • The baking time will vary but usually takes about 30 minutes. The croutons should be nicely browned and crispy. Shake the pan several times while the croutons bake to make sure they cook evenly.
  • Let cool.
  • Serve and enjoy!

BLUEBERRY CREAM CHEESE WONTONS

While a little time-consuming at first, these come together quickly once you get the hang of them. Use any flavor pie filling you prefer, but chop any large fruit pieces to make the wontons easier to stuff. Perfect for a crowd!

½ (8 ounce) package cream cheese
48 wonton wrappers
1 cup blueberry pie filling
water as needed
cooking spray
¼ cup powdered sugar

Steps:

  • Cut 4 ounce block of cream cheese in half, then in half again to create 4 pieces. Further cut each piece in half again so you have 8 equal pieces total. Set aside.
  • Working with 6 wonton wrappers at a time, separate them out onto a clean work surface. Divide one of the cream cheese pieces into 6 pieces and place a piece in the middle of each wonton wrapper. Place 1 teaspoon of blueberry pie filling over the top of the cream cheese. Do not overfill, as the mixture may ooze out.
  • Use your finger to lightly wet the 4 edges of each wonton wrapper. Gently fold in half diagonally to make a triangle, then bring up the remaining two corners so all corners join together. Try not to leave excess air in the wonton, which can cause them to burst. Press seams together to ensure a tight seal. Set wontons aside, covered in a damp paper towel, while you finish making the remaining wontons.
  • Preheat the air fryer to 325 degrees F (160 degrees C). Spray the inner basket with cooking spray and place as many wontons in basket as will fit, without overcrowding. Lightly mist wontons with cooking spray.
  • Air-fry for 5 minutes. Remove to a cooling rack and dust with powdered sugar. Let cool while you cook the remaining wontons in batches. Best served slightly warm or at room temperature.

We only use three ingredients here, which is why this works so well. Try to resist the temptation to add salt, pepper, or other spices, as the blue cheese will provide all the punch you need. We're going for pure blue cheese flavor in a buttery, crunchy package, and anything else would just get in the way.

½ loaf fresh bread, cut into 1/2-inch pieces
5 tablespoons unsalted butter, melted and hot, or more to taste
2 ounces frozen blue cheese, grated, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with a silicone baking mat.
  • Place bread cubes in a bowl and drizzle butter over the top. Sprinkle about 1/3 of the blue cheese over the top and stir until bread is coated. Sprinkle another 1/3 of the cheese over the top and stir to coat again. Spread bread cubes out onto prepared baking sheet.
  • Bake in the preheated oven until slightly crisp, about 15 minutes. Toss cubes and sprinkle remaining blue cheese over the top. Bake until browned and crispy, 15 to 20 minutes more.

Yield Makes 40 to 50 hors d'oeuvres

Number Of Ingredients 4

1 pound unsliced good-quality white sandwich bread such as a pullman loaf
3/4 stick unsalted butter, melted
1/4 pound chilled blue cheese (preferably Stilton or Gorgonzola), crumbled
Equipment: a chopstick

Steps:

  • Preheat oven to 400°F with rack in middle.
  • Trim crusts from loaf, then cut loaf into 1-inch cubes. Put cubes in a large shallow baking pan and drizzle with melted butter, gently tossing to coat. Arrange cubes in 1 layer and bake, turning occasionally, until pale golden and crisp around edges but still soft inside, 12 to 20 minutes. Cool croutons slightly in pan on a rack, then poke a hole three fourths of the way through each cube from top using large end of chopstick, making hole about 1/3 inch in diameter. Press about 1/2 teaspoon cheese into each hole, mounding slightly.
  • Just before serving, reheat croutons, cheese side up, in baking pan in a 400°F oven until warm and crisp, about 5 minutes.
