I cut this recipe out of the Denver Rocky Mountain News Food Section 30-some years ago. I've made it every Thanksgiving and Christmas since. It's quick and simple to prepare (right on the stove), and a nice addition to a big dinner.

Number Of Ingredients 8

6 tablespoons brown sugar
1/2 cup heavy cream
2 tablespoons butter or 2 tablespoons oleo
1/2 cup pecans, chopped
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 (15 ounce) can yams (Bruce's brand)

Steps:

  • Heat yams, in their liquid, till hot.
  • Keep hot on low heat while you mix up Praline sauce.
  • Mix together the brown sugar, heavy cream, butter/oleo, pecans, salt, cinnamon, and nutmeg in a saucepan.
  • Stir over medium heat till mixture comes to a gentle boil.
  • Keep hot on low burner while you drain liquid off yams.
  • Place yams in serving bowl.
  • Pour hot Praline sauce over yams.
  • Serve and enjoy!

This recipe was on the back of a can of yams. My daughter introduced me to this recipe. It has become a staple of our Thanksgiving dinners.

1 can yam, with juice
1/2 cup brown sugar
1/2 cup coconut
1/2 cup butter, melted
1/2 cup flour
1/2 cup pecans, chopped

Steps:

  • Mix the brown sugar, butter, and flour together until smooth.
  • Slowly add the yam juice, continuing to blend.
  • Add the coconut and chopped pecans.
  • Mix.
  • Place yams into a 9"x7" casserole dish.
  • Put topping over the yams.
  • Bake at 325 degrees for 30 minutes.

I make these every Thanksgiving. So far,it's the best yam casserole I've ever tasted.

Number Of Ingredients 15

two cans (2 lbs, 8 oz. each) yams, drained, or 4 pounds cooked, peeled and sliced fresh yams or sweet potatoes
2/3 cup orange juice
1 tbsp. grated orange rind
5 tbsp. brandy
2 t. salt
freshly ground pepper to taste
1 t. ground ginger
4 tbsp. butter or margarine, melted (1/2 stick)
1/3 cup light or golden brown sugar, packed
3 egg yolks
PRALINE TOPPING:
2/3 cup light or golden brown sugar, packed
1/4 lb. (1 stick) butter or margarine, melted
1 cup chopped pecans, about 4 oz
1 t. ground cinnamon

Steps:

  • 1. In mixing bowl, with mixer, beat yams or sweet potatoes until smooth. Mix in remaining yam casserole ingredients, beating until mixture is light and fluffy. Butter a 12 inch porcelain quiche dish or a shallow 2 quart casserole (7 x 11 inches). Pour in yam mixture, smoothing top evenly. Make praline topping by mixing all ingredients together in small bowl. Spread evenly over yams. May be refrigerated covered overnight at this point. Bake at 350 for 45 to 50 minutes or until golden brown and bubbly. Remove from oven and let stand 10 minutes before serving. Serves 10 to 12 Notes from the cookbook: The most sensational yam casserole I ever had was served to me one Thanksgiving by Alan and Barbara Shefter in Washington, D.C. Thanks to the Shefters, my family, friends and classes have been loving it ever since. The yams are fluffy and creamy, and the praline topping is sweet, nutty, crunchy, and beautifully glazed. If you want more of this delectable casserole, double the recipe but make it in two separate casseroles so that the proportions of the filling to the topping remains correct. 1 (29 ounce) can cut sweet potatoes in light syrup, drained
1/3 cup chopped pecans
1/3 cup coconut
1/3 cup firmly packed brown sugar
3 tablespoons flour
3 tablespoons margarine or 3 tablespoons butter, melted

Steps:

  • Heat oven to 350 degrees.
  • Place drained yams in an ungreased 1/2 quart casserole or baking dish.
  • In a small bowl, combine remaining ingredients; blend well. Sprinkle over yams.
  • Bake at 350 for 35 to 40 minutes or until bubbly.

1/2 cup brown sugar
1/4 cup flour
1/4 cup butter
0.5 (10 ounce) bag miniature marshmallows

Steps:

  • Preheat oven to 350. Drain yams.
  • Place in ungreased 2 quart casserole dish.
  • Mix togehter brown sugar, flour, and butter. Sprinkle on top of yams.
  • Top with marshmellows.
  • Bake at 350 for 35-40 minutes.
