BLUEBERRY JELLY
Blueberry jelly is a silky smooth homemade preserve bursting with fresh blueberry flavor.

Steps:
- To extract blueberry juice from fresh blueberries, place them in a saucepan with 1 cup of water per quart of fruit. (This recipe requires 4 quarts of berries and 4 cups water.)
- Slowly bring the mixture up to a simmer, mashing the berries as they cook.
- Simmer the mixture for 10 minutes, until the berries have completely fallen apart and released their juices.
- Strain the fruit through a jelly bag or a colander lined with a double-thick layer of cheesecloth. Allow the bag to drain for at least 2 hours, squeezing if necessary to extract more juice.
- This should yield 4 cups juice. If you have extra, save it for other uses. If you're short, make up the difference with another fruit juice (ie. apple, cranberry, etc) or reduce the recipe.
- Prepare jars & lids. If canning, preheat a water bath canner.
- Place 4 cups of strained blueberry juice into a jam pot. Bring the mixture to a boil and add one box of powdered pectin. Whisk to incorporate and fully dissolve the pectin.
- Boil the pectin/juice mixture for 1 minute before adding sugar.
- Add the sugar, stirring to dissolve.
- Return to a boil and cook 1 minute before lading into prepared jars leaving 1/4 inch headspace.
- If canning, process in a water bath canner for 10 minutes.
- For a refrigerator or freezer jelly, allow the mixture to cool completely on the counter before storing in the refrigerator or freezer.

- In a Dutch oven, mash the blueberries. Stir in sugar, pomegranate juice and lemon juice. Bring to a full rolling boil over high heat, stirring constantly. Stir in pectin. Return to a full rolling boil. Boil and stir for 1 full minute. , Remove from the heat; skim off foam. Stir in crystallized and ground ginger. Ladle hot mixture into 4 hot sterilized half-pint jars, leaving 1/4-in. headspace. Remove air bubbles; wipe rims. Center lids on jars; screw on bands until fingertip tight. Process for 10 minutes in a boiling-water canner.

- Place blueberries in a Dutch oven and crush slightly. Add water; bring to a boil. Reduce heat to medium; cook, uncovered, for 45 minutes. Line a strainer with four layers of cheesecloth and place over a bowl. Place berry mixture in strainer; cover with edges of cheesecloth. Let stand for 30 minutes or until liquid measures 6 cups., Pour juice back into Dutch oven; gradually stir in sugar until it dissolves. Bring to a boil over high heat, stirring constantly. Stir in pectin. Continue to boil 1 minute, stirring constantly., Remove from heat; skim off foam. Ladle hot mixture into six hot sterilized pint jars, leaving 1/4-in. headspace. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 5 minutes. Remove jars and cool.

Steps:
- Wash and clean berries.
- Make a strong tea by placing the mint leaves in a saucepan and adding the water, then bringing to a boil.
- As soon as it begins to boil, remove from heat, cover, and allow to sit steeping for 10 minutes.
- Strain the leaves out and measure ½ cup of the tea
- Crush berries in bottom of saucepan and combine with the mint tea.
- Bring to a simmer over medium heat and simmer for 5 minutes.
- Remove from heat and strain mixture through a jelly bag.
- Measure the captured juice and add sugar.
- Mix well and bring to a boil.
- Add pectin and stir constantly for 1 minute while at a full boil.
- Skim off foam and pour into hot, sterile jelly jars and seal.
- Process 5 minutes in water bath.

BLUEBERRY-LIME JAM
There is a wonderful chain of shops in France, La Chambre Aux Confitures, that is well known for their unique flavor combinations, like peach-lemongrass, strawberry-verbena, and raspberry-geranium, just to name a few. I was inspired by this shop to blend sweet blueberries and tart lime for a new twist on classic blueberry jam.

- Combine the blueberries, sugar, lime zest, 3 tablespoons lime juice and the salt in a medium saucepan or Dutch oven. Toss well and let stand until the sugar dissolves and the blueberries begin to release their juices, about 15 minutes.
- Bring the mixture to a rapid simmer over medium-high heat. Reduce the heat to maintain a low simmer; cook, stirring often and skimming off any foam, until the blueberries are tender and the juices thicken, about 35 minutes. Add the remaining 1 tablespoon lime juice. Remove from the heat and let the jam cool to room temperature, stirring occasionally, about 1 hour.
- Transfer the jam to a jar or other airtight container. Refrigerate until cold and fully jelled, 3 to 4 hours. Store in the refrigerator for up to 2 weeks.

- Prepare for water bath canning. This recipe uses 8-ounce jars, which are not very tall, so I leave my huge enamelware canning pot sit in the cupboard. I pull out a big stock pot instead. You just need a tall pot that allows water to cover the jar tops by 1″. Wash five 8-ounce jars and set them in your pot. Fill pot with enough water to cover the jars with 1″ of water. Bring to a boil over high heat to sterilize the jars. Covering the pot with the lid will speed up the boiling process.
- Put your jar lids in a small pan with enough water to just cover them. Bring to a slow simmer and keep hot until you fill the jars with jam.
- Place a saucer with 5 metal teaspoons in a flat place in your freezer for testing the jam later. Rinse the mint well under cool water and pat it dry with a kitchen towel. Set aside.
- Combine the blueberries, sugar, and lemon juice in a wide nonreactive pan. Place the pan over medium-high heat and cook, stirring constantly, until the juice begins to run from the berries. When the juice starts flowing freely, increase the heat to high. Continue to cook, stirring very frequently, until the mixture boils. Once it reaches a boil, cook it for 10 to 15 minutes more, stirring frequently, and decreasing the heat slightly if the jam starts to stick. Begin testing for doneness after 10 minutes.
