An easy, excellent (5-minute) Avocado Cucumber Salad with the easiest lime dressing. This cucumber salad disappeared so fast and we all wished there was more of it.

Steps:
- In a medium salad bowl, combine sliced cucumbers, avocado and chopped green onion.
- Drizzle with 2 lime juice, 2 Tbsp olive oil and season with 1 tsp sea salt and 1/8 tsp black pepper or season to taste. Toss salad to coat with dressing and serve.

CREAMY CUCUMBER-AVOCADO SALAD DRESSING
This is from Sunset Magazine. I belong to a CSA so this is perfect because it uses a lot of the produce I am getting right now. So fresh and delicious! Great on salads and steamed vegetables. Zaar is not taking "spring onions" as an ingredient. You can use green onions or spring onions.

- In a small dry skillet over low heat, toast ground cumin 2 minutes or until fragrant, stirring occasionally. Add lemon juice and whisk well. Add oil in a thin, steady stream, whisking until blended. Add salt and pepper to taste. In a large salad bowl, combne greens with 1/4 cup dressing; toss to coat. Place on serving plates. Mix avocado, tomato, cucumber, and onion with dressing; toss to coat. Top each portion of greens with avocado mixture.
