HEALTHIER BLUEBERRY JAM BARS



Healthier Blueberry Jam Bars image

These delicious Blueberry Jam Bars are like a blueberry crumble or blueberry crisp formed into little bars. They are made with an oatmeal crust and loaded with fresh blueberries. It's a healthier dessert recipe that can easily be made vegan + gluten-free + refined grain free. You will LOVE it!

½ cup butter (vegan, if necessary)
¼ cup coconut oil
¼ cup honey
1 ½ cups rolled oats
1 cup all-purpose flour (sub gluten-free, if needed)
½ cup sugar (can use coconut sugar)
A pinch of sea salt
3 cups fresh BC Blueberries
¼ cup sugar or honey (your choice!)
1 tablespoon corn starch
Juice and zest of 1 lemon

Steps:

  • Set your oven to 350 degrees. Line an 8X8 inch baking pan with parchment paper.
  • In a small pot, melt the butter and coconut oil. Pour the honey into the pot.
  • In a large mixing bowl, add the rolled oats, all purpose flour, sugar, and sea salt. Pour the melted butter into the bowl (keep the pot handy) and mix well. Set aside 1 cup of the mix and pour the rest into the prepared baking pan. Press down firmly to create the crust.
  • In the same pot used for the butter, add all the blueberry jam ingredients. Bring to a boil over high heat, then reduce the heat to low. Simmer for 2 minutes, or until the jam thickens. It won't be as thick as jam from your fridge. Pour the jam over the crust and sprinkle the top with the remaining oats you set aside.
  • Bake in your oven for 40 minutes.
  • Let the Blueberry Jam Bars cool in the pan then remove them with the parchment paper and cut into 12-16 bars.

Number Of Ingredients 8

1 cup rolled oats
1 & 1/2 cups all-purpose flour
1 cup firmly packed light brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 cup finely chopped pecans
1 cup cold, unsalted butter, cut into cubes
3/4 cup blueberry (or other flavor) preserves

Steps:

  • Preheat oven to 375°. Grease a 9″x 13″x 2″ baking pan and line with parchment paper.
  • In a large bowl, combine oats, flour, brown sugar, cinnamon, baking soda, and pecans. Add butter and combine with either a mixer or a pastry blender until crumbs form. Set aside 1 & 1/2 cups of crumb mixture.
  • Press remaining crumb mixture into bottom of prepared pan. Bake for 18-20 minutes, until golden.
  • Spread preserves over crust. Drop reserved 1 & 1/2 cups crumb mixture on top of preserves. Bake for 18-20 minutes, until top is golden. Cool completely before removing from pan and cutting into bars.

These Blueberry Jam Cake Bars are quite literally a bar version of cake. They're soft, moist, and the blueberry jam layer in the middle makes them a delicious breakfast or dessert option!

2 1/4 cups (293g) all purpose flour
1 1/4 cups (259g) sugar, divided
1 1/2 tsp baking powder
1 tsp salt
2 1/2 tsp ground cinnamon, divided
3/4 cup unsalted butter (168g), melted
1/4 cup (58g) sour cream, room temperature
2 tsp vanilla extract
1 egg
1/2 cup (164g) blueberry jam
3/4 cup (86g) powdered sugar
1-2 tbsp milk
1/2 tsp vanilla extract

Steps:

  • Preheat oven to 350°F (176°C) and line a 9 inch square baking pan with aluminum foil or parchment paper. 2
  • . Combine flour, 1 cup (207g) of sugar, baking powder, salt and 1 teaspoon of cinnamon in a large mixer bowl. Set aside.
  • . Whisk together melted butter and sour cream in another medium sized bowl.
  • . Add vanilla extract and egg to the butter mixture and whisk until well combined.
  • . Add wet ingredients to dry ingredients and beat until well combined.
  • . Spread about half of the batter into the bottom of the prepared pan.
  • . Spread the blueberry jam into an even layer on top of the batter.
  • . Crumble the remaining batter and drop over the blueberry jam, forming an even layer.
  • . Combine remaining 1 1/2 teaspoons of cinnamon and 1/4 cup (52g) of sugar in a small bowl, then sprinkle over the top of the batter.
  • 0. Bake bars for 20-25 minutes, then remove from oven to cool completely.
  • 1. If you want to add the glaze, combine all ingredients in a small bowl and whisk until smooth. Drizzle the glaze over the bars.
  • 2. Cut bars into squares. They can be stored at room temperature or in the fridge. I loved them both ways.

Nonstick cooking spray, for pan
1/2 cup unsalted butter, chilled
3/4 cup sugar
1 1/2 cups all-purpose flour
1/2 teaspoon ground cinnamon
Pinch kosher salt
1 egg
1/2 heaping cup sour cream
1/3 cup sugar
2 tablespoons lemon juice
1 tablespoon all-purpose flour
4 teaspoons cornstarch
2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
2 cups blueberries

Steps:

  • Preheat the oven to 350 degrees F. Spray an 8-by-8-inch baking pan with cooking spray. Line the pan with parchment paper so that it hangs over on two sides. Spray the parchment.
  • For the crust: In the bowl of a food processor, combine the butter, sugar, flour, cinnamon and salt. Process until the mixture starts to come together and clump, 1 minute. Remove 3/4 cup and reserve; press the remaining crust mixture evenly into the prepared baking pan. Set aside.
  • For the filling: In a medium bowl, whisk together the egg, sour cream, sugar, lemon juice, flour, cornstarch, vanilla extract and cinnamon until smooth. Mix in 1 cup of the blueberries. Pour the filling mixture over the crust, shaking the pan gently to settle the custard and berries. Pour the remaining 1 cup blueberries over the top, spreading them evenly.
  • Take the reserved crust and sprinkle it over the top of the berries, squeezing the mixture in your hands to encourage large lumps.
  • Bake for 1 hour. Let cool. Remove the bars from the pan and cut into 9 pieces. Refrigerate until ready to serve.

Treat yourself to some homemade blueberry jam, the ideal accompaniment to toast, fruit scones or dolloped onto natural yogurt at breakfast time

Yield Makes 2 x 500ml jars

800g blueberries , washed
500g granulated sugar
1 vanilla pod , split lengthways
1 large lemon , juiced

Steps:

  • Put a plate in the freezer for you to test your jam is set later. Sterilise two 500ml jam jars so they are ready to use.
  • Put the blueberries, sugar, vanilla and lemon in a large heavy-based saucepan over a medium heat. Crush the blueberries a little with a potato masher. Bring to the boil, then reduce to a simmer and cook for 30 mins. Skim off any skum that has formed on the top with a spoon and discard.
  • Test the jam is set by spooning a mound on to your cooled plate. Put in to the fridge for 3 mins. If the jam forms a skin and ripples when you push it with your finger, it's ready. If not, return to the heat for 5 more mins then repeat the test. Do this until you reach setting point.
  • Leave the jam to sit for 10 mins off the heat. Ladle into your warm, sterilised jars and seal the lids on top. Leave to cool completely. Will keep for six months unopened in a cool, dry place, or two weeks once opened in the fridge.
