GARI: JAPANESE PICKLED GINGER



Gari: Japanese Pickled Ginger image

You can easily make Japanese pickled ginger, also called sushi ginger or gari. It will last in the refrigerator for up to a year.

2 pounds fresh young ginger root
2 teaspoons salt
3 cups rice vinegar
2 cups granulated ​sugar

Steps:

  • Gather the ingredients.
  • Wash the young ginger root and scrape off any brown spots with a spoon. Then scrape off all the skin with a scraper or peel the ginger by hand.
  • Slice the ginger thinly and salt the slices. Leave salted ginger slices in a bowl for about 1 hour.
  • Dry the ginger slices with paper towels and put them in a sterilized, heat-resistant container or jar.
  • Mix the rice vinegar and sugar in a pan and bring to a boil until the strong vinegar aroma has evaporated.
  • Pour the hot vinegar and sugar mixture over the ginger slices. If you want to keep the ginger spicy, pour out the liquid after about 1 minute. Otherwise, let the mixture sit for 2 to 3 minutes.
  • Drain the slices in a colander and let them cool by placing them on a paper towel in a single layer. The pickled ginger should change its color to light pink; if you are using old ginger, it might not turn pink naturally.
  • With clean hands, squeeze the liquid out of the slices and place them in a jar.

Homemade Pickled Ginger (Gari) image

Pickled ginger is called gari or amazu shoga in Japanese. It's served with sushi or sashimi and eaten between different kinds of sushi. It helps to clean your taste buds and enhance the flavors. It's also great with Century Eggs - a Chinese delicacy. You can find prepared pickled ginger in pink or white at most Asian markets but I preferred to make my own and share with family and friends.

8 ounces fresh young ginger root, peeled
1 ½ teaspoons sea salt
1 cup rice vinegar
⅓ cup white sugar

Steps:

  • Cut the ginger into chunks and place them into a bowl. Sprinkle with sea salt, stir to coat and let stand for about 30 minutes. Transfer the ginger to a clean jar.
  • In a saucepan, stir together the rice vinegar and sugar until sugar has dissolved. Bring to a boil, then pour the boiling liquid over the ginger root pieces in the jar.
  • Allow the mixture to cool, then put the lid on the jar and store in the refrigerator for at least one week. You will see that the liquid will change to slightly pinkish in few minutes. Don't be alarmed because it's the reaction of rice vinegar that causes the change. Only quality rice vinegar can do that! Some commercial pickled ginger has red coloring added. Cut pieces of ginger into paper thin slices for serving.

SESAME & GINGER SUSHI BOWLS

This vegan packed lunch is full of goodness, using fibre-rich wholegrain rice and protein-rich edamame beans with a tangy tamari and sesame dressing

25g ginger (choose a straight piece that is quite slim), peeled
4 tbsp raw apple cider vinegar , plus 1 tbsp
200g brown basmati rice
320g frozen edamame beans
1½-2 tbsp tamari
2 avocados , destoned and sliced
1 large carrot , shredded into long matchsticks or coarsely grated
50g cherry tomatoes , halved
¼ cucumber , sliced
2 tsp sesame oil
3 tbsp toasted sesame seeds

Steps:

  • Cut the ginger as thinly as you can to make wafer thin slices or finely shred. Put in a bowl with the 4 tbsp vinegar and 1 tbsp water and massage briefly to soften. Set aside.
  • Put the rice in a medium pan and add 600ml water. Bring to the boil, cover and simmer on a low heat for 15 mins. Tip in the edamame beans, but don't stir them in, then cover and cook for 7 mins more. The rice should be tender and have absorbed all the water.
  • Skim the beans off the rice and set aside. Tip the 1 tbsp of vinegar and ½ tbsp tamari into the rice, and stir well. Spoon onto a plate and spread out to cool quickly. Once cool, spoon into four bowls or lunchboxes. Top with the avocado, carrot, beans, tomatoes and cucumber.
  • Spoon the ginger from the vinegar and scatter on top. Add the remaining tamari and sesame oil to the vinegar. Spoon over the sushi bowl and scatter with the seeds. Will keep in the fridge for two days.

This ginger is normally used to cleanse the palate between different types of sushi so you get the full flavor of each piece of sushi.

1/2 lb gingerroot, peeled and sliced very thin
1 tablespoon salt
1 1/4 cups rice vinegar
3 tablespoons water
1/4 cup honey

Steps:

  • Add sliced ginger to a ziplock bag and add salt.
  • Shake well to coat ginger.
  • Place bag in the refrigerator for 3 hours or overnight.
  • Remove ginger from bag and place in a jar with tight fitting lid.
  • Add vinegar, water and honey to a small pan.
  • Simmer for 5 minutes, stir frequently.
  • Let cool for 5 minutes.
  • Pour into jar with ginger.
  • Close jar and store in refrigerator for 3-5 days.
  • Enjoy.

I love pickled ginger and this really does taste (and look) like the ginger that you get in the sushi restaurant. I adapted a recipe from a Fish and 'Shellfish cookbook.

1/2 lb gingerroot
1 tablespoon coarse salt
1 1/4 cups rice wine vinegar
3 tablespoons water
1/4 cup sugar
1 -2 drop red food coloring (optional)

Steps:

  • Peel the ginger and slice it as thin as humanly possible.
  • Rub the sliced ginger with the coarse salt until you do not feel the graininess of the salt.
  • Place ginger in a mixing bowl and refrigerate for several hours.
  • After ginger has sat for several hours, take it out and squeeze out as much liquid as possible.
  • Put ginger in a clean jar.
  • Put the vinegar, water,food coloring, and sugar in a small sauce pan and bring to a simmer.
  • Stir until the sugar is dissolved.
  • Pour over ginger and allow to cool slightly.
  • Seal the jar and allow to"cure" in the refrigerator for at least 3 days.
  • (This allows the flavor to mellow out some... you can use it sooner, but it will have more of a"bite").

  • Peel the ginger with a sharp teaspoon and slice it finely using a mandoline slicer or sharp knife. Add it with ½ tsp salt in a small bowl, mix, and set aside for 5 minutes.
  • Bring a small saucepan with water to the boil. Add salted ginger and cook for 1 minute (up to 5 minutes for less spicy and mild sushi ginger). Drain over a sieve, wait until cool, and squeeze out all excess liquid using your hands. Fill the ginger in a small mason jar.
  • Add rice vinegar, sugar, and salt into the same saucepan. Bring to a boil, switch off the heat, and stir until the sugar has dissolved. Pour it over the ginger and if necessary, press the ginger down with a tablespoon so that it is fully covered with the liquid. Close the lid, let it cool, and refrigerate for at least a few hours before serving.
