Yield 20 doughnuts.

Number Of Ingredients 13

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
1/2 cup warm 2% milk (110° to 115°)
1/2 cup sugar
1/2 cup shortening
2 eggs
1 teaspoon salt
4-1/2 to 5 cups all-purpose flour
Oil for deep-fat frying
TOPPINGS:
1-1/4 cups confectioners' sugar
4 to 6 tablespoons water
Colored sprinkles and/or assorted breakfast cereals

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the milk, sugar, shortening, eggs, salt and 2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a floured surface; roll out to 1/2-in. thickness. Cut with a floured 2-1/2-in. doughnut cutter. Place on greased baking sheets. Cover and let rise until doubled, about 1 hour., In an electric skillet or deep fryer, heat oil to 375°. Fry doughnuts, a few at a time, until golden brown on both sides. Drain on paper towels., In a shallow bowl, combine confectioners' sugar and water until smooth. Dip warm doughnuts in glaze; decorate as desired with sprinkles and/or cereals.

Number Of Ingredients 11

3 large eggs
2 cups sugar
1 cup heavy whipping cream
1 cup whole milk
1 teaspoon vanilla extract
6 to 7 cups all-purpose flour
4 teaspoons cream of tartar
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground nutmeg
Oil for deep-fat frying

Steps:

  • In a large bowl, beat eggs for 5 minutes. Gradually add sugar; beat 1-2 minutes longer (mixture will be thick and light in color). Add cream, milk, vanilla, 2 cups flour, cream of tartar, baking soda, salt and nutmeg; beat until smooth. Add enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth, 8-10 minutes. Place in a greased bowl, turning once to grease top. Cover and refrigerate for 2-3 hours. , On a floured surface, roll dough to 1/2-in. thickness. Cut with a lightly floured 2-1/2-in. doughnut cutter. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry doughnuts, a few at a time, until browned, about 2 minutes on each side. Drain on paper towels.

Number Of Ingredients 22

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
1/2 cup half-and-half cream
1/4 cup sugar
1/4 cup shortening
1 large egg, room temperature
1 teaspoon salt
1/2 teaspoon ground nutmeg
3 to 3-1/2 cups all-purpose flour
Oil for deep-fat frying
MAPLE FROSTING:
1/4 cup packed brown sugar
2 tablespoons butter
1 tablespoon half-and-half cream
1/8 teaspoon maple flavoring
1/2 cup confectioners' sugar
CHOCOLATE FROSTING:
2 ounces semisweet chocolate, chopped
2 tablespoons butter
1/2 cup confectioners' sugar
2 tablespoons boiling water
1 teaspoon vanilla extract

Steps:

  • In a large bowl, dissolve yeast in warm water. Add cream, sugar, shortening, egg, salt, nutmeg and 3 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch down dough; divide in half. Turn onto a lightly floured surface; roll each half into a 12x6-in. rectangle. Cut each portion into twelve 3x2-in. rectangles. Place on greased baking sheets. Cover and let rise in a warm place until doubled, about 30 minutes. , In an electric skillet or deep fryer, heat oil to 375°. Fry long johns, a few at a time, until golden brown on both sides. Drain on paper towels., For maple frosting, combine brown sugar and butter in a small saucepan. Bring to a boil, stirring to dissolve sugar. Remove from heat; stir in cream and maple flavoring. Add the confectioners' sugar; beat for 1 minute or until smooth. Frost cooled long johns., For chocolate frosting, in a microwave, melt chocolate and butter; stir until smooth. Stir in remaining ingredients. Spread over cooled long johns; let stand until set.

This recipe has converted me from a yeast donut lover, to a cake donut lover. The apple cider was very subtle, but, oh boy, did it add to the amazing flavor!

Number Of Ingredients 13

1 c apple cider
1 c sugar
1/4 c solid vegetable shortening
2 large eggs
1/2 c buttermilk
3 1/2 c all-purpose flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp iodized salt
1/4 tsp nutmeg
enough vegetable oil or shortening to fill 3 inches of a frying pan
1 c cinnamon/sugar mixture to coat donuts

Steps:

  • 1. Boil apple cider in small saucepan until it is reduced to 1/4 cup, 8 to 10 minutes; cool.
  • 2. Beat sugar with shortening until smooth. Add eggs and mix well, then add buttermilk and reduced cider.
  • 3. Stir together flour, baking powder, baking soda, cinnamon, salt and nutmeg in another bowl.
  • 4. Add to liquid ingredients; mix just enough to combine. Transfer dough to lightly floured board and pat to 1/2-inch thickness.
  • 5. Cut with 2 1/2- to 3-inch doughnut cutter; reserve doughnut holes and reroll and cut scraps.
  • 6. Add enough oil or shortening to fill a deep pan 3 inches; heat to 375'F. Fry several doughnuts at a time, turning once or twice, until browned and cooked through, about 4 minutes.
  • 7. Remove to paper towels with slotted spoon.
  • 8. While still warm, shake a few at a time in a paper bag containing cinnamon sugar. Cool on a rack.

BUTTERNUT SQUASH DOUGHNUTS

1-1/4 teaspoons ground nutmeg
1 teaspoon baking powder
1 teaspoon cream of tartar

1/4 teaspoon ground ginger
Oil for deep-fat frying
Confectioners' sugar or additional sugar, optional

Steps:

  • In a bowl, combine the eggs, sugar, squash, buttermilk, butter and vanilla. Combine the dry ingredients; add to squash mixture and mix well. Cover and refrigerate for 2 hours (dough will be very soft)., Turn onto a heavily floured surface; roll to 1/2-in. thickness. Cut with a 2-1/2-in. doughnut cutter. In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. , Fry doughnuts, a few at a time, until golden brown on both sides. Drain on paper towels. Dust with sugar if desired.
