This comes from "Seafood Twice a Week". It was my first attempt at cooking fish. It always turns out great and gave me the confidence to try other fish preparations. It's also great for those nights when you're just too tired to cook. The next day, leftovers mashed and mixed make a good halibut-salad sandwich. My favorite is halibut with this preparation, but salmon is good this way, too.

1 1/2 lbs halibut or 1 1/2 lbs salmon fillets
1/2 cup mayonnaise
2 tablespoons red onions, minced (we use more because we LOVE onion)
1 teaspoon dried dill weed (or more)

Steps:

  • Lightly oil or spray a baking dish before placing fish in a single layer.
  • Mix remaining ingredients; spread over fish.
  • Bake at 400 degrees F for 15-20 minutes or until done.

Number Of Ingredients 16

1 tablespoon pareve margarine
2 pounds halibut fillets, skinned and boned
1 pound salmon fillets, skinned and boned
3 tablespoons vegetable oil
4 medium Spanish onions, diced
4 large eggs
2 cups cold water
6 tablespoons matzoh meal
1 tablespoon salt, or to taste
2 teaspoons freshly ground white pepper
2 tablespoons sugar
1 tablespoon fresh lemon juice
2 tablespoons snipped dill, plus more for garnish
2 large carrots, peeled
parsley, for garnish
prepared red horseradish for serving

Steps:

  • Preheat the oven to 325°F. Grease a 12-cup bundt pan with the margarine.
  • Cut the fish into large chunks, and place in the bowl of a food processor. Pulse about 20 times, do not puree, but grind fine. Place in the bowl of an electric mixer.
  • Heat the oil in a large frying pan, and sauté the onions over medium-low heat until soft and transparent. Let cool.
  • To the fish mixture, add the onions, eggs, 2 cups of cold water, matzoh meal, salt, white pepper, sugar and lemon juice. Beat in the electric mixer at medium speed, using a paddle attachment, for about 10 minutes. Add the dill, and grate in the carrots; mix well.
  • Pour the mixture into the greased bundt pan. Smooth the top with a spatula, and cover with foil. Place a large pan filled with water which is almost boiling and comes at least halfway up the sides of the bundt pan.
  • Bake in the oven for 1 hour, or until the center is solid. Cool for 5 minutes, or until mold is cool to the touch. Run a knife around the edges. Place a flat serving plate on top, and then flip over, inverting the mold onto the plate. If the mold does not come out easily, give the plate a shake. You should feel or hear it give.
  • Refrigerate for several hours or overnight. Slice as you would a torte, and serve as an appetizer. Garnish with the parsley and remaining dill, and serve with red horseradish.

My Special Crispy Baked Fish image

I adapted this recipe from Better Homes & Gardens. It is much healthier than pan frying fish and tastes just as good. This recipe works great on any fish fillets. My husband and I fish often and this works well with either frozen or fresh fillets. We have used it with trout, bass, and catfish.

1 lb fish fillet, thawed
1/4 cup milk
1/3 cup flour
1/3 cup Italian seasoned breadcrumbs
1/4 cup parmesan cheese, grated
1/2 teaspoon dill
1 dash black pepper
2 tablespoons butter, melted

Steps:

  • Rinse and pat dry fish. Cut into 4 serving size pieces if needed.
  • Measure thickness of each piece. This will determine cooking time.
  • Create an assembly-type line with milk in one dish, flour in another.
  • In the last dish, combine bread crumbs, parmesan, dill, and black pepper. Add melted butter, stir until forms small crumbs.
  • Dip fish in milk (this helps the flour stick to fish).
  • Then dip in flour.
  • Dip again in milk.
  • Then dip into bread crumb mixture. Press crumbs into fish if not sticking.
  • Place fish on GREASED baking sheet.
  • Bake uncovered at 450 degrees for 5 minutes per 1/2 inch thickness of fish. If the thickest part of fish is 1 inch thick, bake for 10 minutes. Check doneness by inserting fork and if fish flakes easily.
  • I place rings of onion and lemon juice on bottom and top of fish while baking for extra flavor.

14 -16 ounces salmon fillets (about 1 inch thick, fresh or frozen) or 14 -16 ounces halibut fillets (about 1 inch thick, fresh or frozen)
3/4 cup chopped peeled peaches or 3/4 cup nectarine
1/3 cup chopped peeled kiwi fruits or 1/3 cup fresh apricot
1 tablespoon snipped fresh cilantro
1 tablespoon orange juice or 1 tablespoon apple juice
1 fresh jalapeno pepper, seeded and chopped*
1 teaspoon olive oil or 1 teaspoon cooking oil
1/4 teaspoon lemon-pepper seasoning
nonstick cooking spray
fresh cilantro stem (optional)

Steps:

  • Thaw fish, if frozen.
  • Rinse fish; pat dry with paper towels.
  • Cut into 4 serving-size pieces.
  • For fruit salsa, in a medium bowl, stir together strawberries, peaches, or nectarines; kiwifruit or apricots; the snipped cilantro; the orange juice or apple juice; and jalapeno chile pepper.
  • Set aside.
  • Brush both sides of each fish piece with oil.
  • Sprinkle with lemon-pepper seasoning.
  • Coat the unheated rack of a broiler pan with nonstick cooking spray.
  • Place fish on rack.
  • Broil 4 inches from heat for 8 to 12 minutes or just until fish flakes easily when tested with a fork, turning once halfway through broiling.
  • Serve with the fruit salsa.
  • If desired, garnish with cilantro sprigs. Makes 4 servings.
  • *Note: Because chile peppers contain volatile oils that can burn your skin and eyes, avoid direct contact with them as much as possible. When working with chile peppers, wear plastic or rubber gloves. If your bare hands do touch the peppers, wash your hands and nails well with soap and warm water.
  • Grill Method: Coat the unheated rack of an uncovered grill with nonstick cooking spray. Place fish on rack directly over medium coals. Grill for 8 to 12 minutes or just until fish flakes easily when tested with a fork, turning once halfway through grilling.

3/4 lb boneless skinless chicken breast, cut into 1-inch pieces
1 cup chopped onion
1/2 cup chopped red bell pepper
1/2 cup chopped celery
1/2 cup uncooked white rice
1/2 cup well-drained and slivered canned water chestnut
1/4 cup chopped fresh parsley
1/4 teaspoon ground sage
1/8 teaspoon black pepper
2/3 cup condensed cream of chicken soup, undiluted
1/3 cup buttermilk
1 tablespoon fresh lemon juice
1/8 teaspoon garlic powder

Steps:

  • Preheat oven to 350.
  • Spray 10inch ovenproof skillet with Pam and brown sausage over high heat for about 2 minutes. Set aside on paper towel to allow grease to continue to drain.
  • Wipe out pan and respray. Brown chicken until thoroughly cooked over high heat. Remove chicken with sausage using slotted spoon to leave behind the drippings.
  • Reduce heat to Med-High and add onion, red pepper, and celery to pan sauteeing about 3 minutes or until richly browned and tender crisp.

This is a super easy and uber delicious way to prepare fish. The recipe calls for halibut but other white fishes will do. Enjoy!

1/2 cup mayonnaise
1/2 cup blue cheese dressing (The light version works just as well)
1/2 cup parmesan cheese
1/4 cup chives or 1/4 cup green onion

Steps:

  • 1.Combine mayo, dressing, parmesan cheese and chives in a bowl.
  • 2. Place halibut in baking dish (something with a rim so sauce won't flow off the edge). Smother the halibut with the sauce and top with any remaining amount.
  • 3. Bake the halibut at 325 for about 35 minutes or until fish is flaky but not dry (this is for relatively thick pieces of fish).
