Time 35m

Number Of Ingredients 11

1/2 cup all purpose flour
1 cup coarse breadcrumbs
2 tablespoons smoked paprika
2 1/2 teaspoons seasoning salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper (optional)
4 chicken breasts, cut into thin strips (about 1-inch wide) (You'll end up with about 5 strips per breast)
4 tablespoons butter
vegetable oil cooking spray

Steps:

  • Preheat your oven to 435 degrees Fahrenheit and set aside a sheet pan.
  • In a large bowl or plastic Ziploc bag, add the flour, breadcrumbs, paprika, seasoning salt, pepper, garlic powder, chili powder, and cayenne pepper. Toss or stir well to combine.
  • Add the chicken strips to the flour mixture and toss very well to coat.
  • Add the butter to the sheet pan and place it in the oven to preheat until the pan is hot and the butter is melted.
  • Distribute the butter over the pan using a spoon or pastry brush, and place the coated chicken strips in the butter on the sheet pan.
  • Spray the tops of the chicken strips with the vegetable oil cooking spray just before placing the pan in the oven.
  • Turn the chicken strips after 10 minutes in the oven. Spray with a small amount of additional vegetable oil cooking spray when you turn them, if needed.
  • Bake for another 5-10 minutes, or until both sides are crispy and the chicken tenders are cooked through.
  • Serve immediately with your favourite side dishes!

Baked-Up Fried Chicken, Low Fat image

Categories     High Protein

Time 45m

Yield 6 serving(s)

Number Of Ingredients 10

1/2 cup low-fat buttermilk
1 egg white
6 boneless skinless chicken breasts
1/2 cup all-purpose flour
2 teaspoons salt
2 teaspoons garlic powder
2 teaspoons dried oregano leaves
2 teaspoons chili powder
2 teaspoons baking powder
1 -2 tablespoon olive oil

Steps:

  • . Preheat oven to 450F (230C).
  • Line a rimmed baking sheet with foil and set a wire rack on top.
  • Spray rack with cooking spray.
  • In a large bowl, whisk buttermilk with egg white, add chicken and turn to evenly coat.
  • Measure flour, salt, garlic powder, oregano, chili powder and baking powder into a large plastic bag.
  • Close top and gently shake to evenly mix.
  • Remove chicken, one piece at a time, from buttermilk and shake off excess liquid, then place in bag.
  • Close top and shake gently to evenly coat.
  • Remove from bag, shaking off excess coating, then place on rack, repeat with remaining chicken, one piece at a time.
  • Discard any remaining milk and flour mixtures.
  • Using a brush, lightly dab oil as evenly as possible over coating on chicken.
  • Bake in centre of preheated oven until coating is crisp and golden, about 30 minutes.
  • TIP:.
  • If you have time, let chicken marinate in buttermilk before roasting. This makes it even more tender and adds tang, too! Place chicken and buttermilk mixture in a large plastic bag. Push chicken down into marinade, then squeeze out as much air as possible from bag. Seal tightly with an elastic band as close to chicken as possible. Place in a large bowl. Refrigerate 4 hours or overnight. Then proceed with recipe as written.

LOW-FAT BISQUICK OVEN FRIED CHICKEN

Low-Fat Bisquick Oven Fried Chicken image

I make this about once a week at our house. All three kids like it (and hubby too) and it is one of my own favorites as well. It's such a great alternative to the heavily-fried chicken, but I'm telling you...it tastes JUST as great!

Provided by Debidoo

Categories     Whole Chicken

Time 1h5m

Yield 2 pieces each, 4 serving(s)

Number Of Ingredients 6

2 -3 lbs meaty chicken pieces (we like thighs)
2/3 cup Bisquick reduced-fat baking mix
1 1/2 teaspoons paprika
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter

Steps:

  • Place butter in 13x9 pan. Preheat oven to 425°F and place pan and butter in oven while it's preheating.
  • Combine Bisquick, paprika, salt, and pepper in a large resealable bag.
  • Skin chicken, if desired. Rinse each piece under cold water. Then place in bag, one or two pieces at a time, and shake to coat well.
  • When butter is melted in pan (pan should be hot), place meat in pan, meaty sides down.
  • Bake 35 minutes; turn pieces over and bake an additional 10-15 minutes or until internal temperature reaches 160°F.
  • Excellent with mashed potatoes, biscuits, and green beans!

  • Preheat oven to 425 degrees F. Place a large piece of parchment paper on the rimmed baking sheet (10x15x1") and brush butter over top (there will be a little extra butter, but you need it to crisp up the coating!)
  • *NOTE: If you're working with fresh chicken breasts, you will want to soak them for 15-30 minutes in milk or buttermilk before coating. This will help the coating to stick. I use frozen, thawed chicken breasts so they are already very moist on the outside.
  • Combine all ingredients besides chicken and butter in a large paper or ziploc bag. Add the chicken and shake to coat.
  • OPTIONAL: For extra crispiness, do a double coat -- simply dunk coated chicken in a little bit of buttermilk, and coat once again in the flour mixture. You would need extra coating mixture for this step

  • Place the chicken in a large ziptop bag with the buttermilk and hot sauce. Close the bag, turn until the chicken pieces are fully coated, and refrigerate for at least 2 hours or overnight.
  • Position a rack in the center of the oven. Preheat the oven to 400 degrees F. Coat a wire rack with nonstick spray and place it on a large rimmed baking sheet.
  • Set up your dredging station: Place the flour on a wide, shallow plate. Set a medium bowl beside it (this will be for the buttermilk). In a separate, wide bowl (a pie dish works well), mix the cornflake crumbs, paprika, salt, black pepper, cayenne, garlic powder, onion powder, and poultry seasoning in a shallow bowl until the ingredients are evenly distributed.
  • Remove the chicken breasts from the bag and place them on a clean plate. Pour the marinade into the medium bowl.
