Blue Cheese Guacamole with Toasted Almonds image

Blue cheese is a surefire way to add flavor to any dish. And toasted almonds are the perfect way to add crunchy texture. When they're combined with cool, creamy avocado you get a unique blue cheese guacamole recipe that's guaranteed to please.-Taste of Home Test Kitchen

Number Of Ingredients 5

3 medium ripe avocado, peeled and cubed
2 to 3 tablespoons fresh lime juice
1/2 to 1 teaspoon kosher salt
1/2 cup crumbled blue cheese
1/2 cup sliced almonds, toasted

Steps:

  • In a bowl, mash avocados until almost smooth. Stir in lime juice and ½ teaspoon salt. Let stand 10 minutes to allow flavors to blend. Adjust seasoning with additional lime juice and salt if desired. Top with blue cheese and almonds.

Perfect for an afternoon snack or a light lunch. I came up with this during quarantine cooking, utilizing some leftover asparagus and part of an avocado that needed to be used up. The addition of the pungent blue cheese really enhances the flavors!

1 slice bread
2 teaspoons butter
¼ ripe avocado, smashed
4 cooked asparagus spears
1 tablespoon crumbled blue cheese
1 teaspoon extra-virgin olive oil

Steps:

  • Toast bread and spread with butter. Top with smashed avocado. Lay the asparagus spears horizontally over the avocado, alternating which way they face. Sprinkle with blue cheese and drizzle with olive oil.
