1 pound ground beef (16-20% fat)
1 tablespoon Dijon mustard
2 cloves garlic, minced
2 green onions, chopped
1/2 cup (about 2 ounces) crumbled blue cheese
1 egg
1 tablespoon water
Salt and freshly ground black pepper

Steps:

  • Shape into patties and chill: Shape into patties, about 1/2 inch thick and larger than your bun. Refrigerate at least 30 minutes or until you are ready to cook.
  • Prepare a charcoal or gas grill for cooking over high direct heat: Using tongs and a folded up paper towel dipped in vegetable oil, oil the grill grates. Make sure grill is hot and well oiled before laying down the patties.

1 medium onion, finely chopped
2 large eggs, lightly beaten
3 teaspoons dried basil
2 garlic cloves, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
3 pounds ground beef
8 slices provolone cheese
8 sandwich rolls, split
Lettuce leaves

Steps:

  • In a large bowl, combine the first seven ingredients. Crumble beef over mixture and mix well. Shape into eight patties. , Grill, covered, over medium-hot heat for 5-7 minutes on each side or until a thermometer reaches 160°., Top each patty with a cheese slice; grill 1 minute longer or until cheese is melted. Grill rolls cut side down for 1-2 minutes or until toasted. Top each with a burger and lettuce.

½ cup minced fresh chives
¼ teaspoon hot pepper sauce
1 teaspoon Worcestershire sauce
1 teaspoon coarsely ground black pepper

1 teaspoon dry mustard
12 French rolls or hamburger buns

Steps:

  • In a large bowl, mix the ground beef, blue cheese, chives, hot pepper sauce, Worcestershire sauce, black pepper, salt, and mustard. Cover, and refrigerate for 2 hours.
  • Preheat grill for high heat. Gently form the burger mixture into about 12 patties.
  • Oil the grill grate. Grill patties 5 minutes per side, or until well done. Serve on rolls.

1 1/2 lbs ground chuck
1 teaspoon salt
1 teaspoon fresh ground pepper
1/2 teaspoon liquid smoke
1/2 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder
Tabasco sauce
1/2 cup blue cheese, crumbled
favorite barbecue sauce
6 slices provolone cheese
lettuce
tomatoes
red onion, sliced
6 kaiser rolls or 6 onion hamburger buns

Steps:

  • Fire up the grill.
  • In a bowl, combine the ground beef with salt, pepper, liquid smoke, Worcestershire sauce, garlic powder, and Tabasco.
  • Divide the blue cheese into six portions and the ground beef into six portions.
  • "Hide" one portion of blue cheese in the center of one portion of beef and form a patty.
  • When the six patties are formed, grill them to desired doneness.

To make a barbecue burger, you sprinkle burgers with Stubb's Bar-B-Q Spice Rub. Leave it on long enough for the rub to partially penetrate the meat-a half hour or so will do it.   • Step 1: Line a rimmed baking sheet with plastic wrap. Divide the ground beef into 8 equal balls. Run your hands under cold running, then form the balls into flat patties slightly larger than the diameter of the buns, placing them on the prepared baking sheet.
