This recipe comes from the Bevo Mill restaurant in St. Louis, Missouri. (It's right up the street from my house). These are very good.

3 3/4 cups all-purpose flour
1/2 cup shredded cheddar cheese
1/3 cup sugar
2 tablespoons baking powder, plus
2 teaspoons baking powder
2 tablespoons dried chives
1 teaspoon salt
5 tablespoons butter or 5 tablespoons margarine, melted and cooled
1/4 cup vegetable oil
1 1/3 cups whole milk

Steps:

  • Preheat oven to 400°F.
  • In large bowl with fork, stir flour, Cheddar cheese, sugar, baking powder, chives, and salt until combined.
  • Add butter and oil and stir just until mixed.
  • Add milk and stir just until mixtture forms a soft dough that leaves side of bowl (do not overmix).
  • Drop dough by 1/4 cups, 1 inch apart, on ungreased large cookie sheet.
  • Bake biscuits about 20 minutes or until golden.
  • Cool biscuits slightly on wire rack to serve warm or cool completely to serve later.
  • Reheat if you like.

2 cups self-rising flour (white lily brand is the best)
1/4 cup salted butter (make sure butter is COLD)
1 cup buttermilk
1 bunch fresh chives
3/4 cup shredded cheddar cheese

Steps:

  • Preheat oven to 500 degrees.
  • Combine flour and butter using a pasty cutter. Look for pea size crumbles of butter.
  • Add chives and cheese.
  • Start adding buttermilk, a little at a time.
  • Using spatula, fold in the buttermilk to start forming a dough ball. It should be a little sticky but not wet and not too dry.
  • You may have to use your hands to shape the ball, just add a little flour dust to them so the dough doesn't stick.
  • On wax paper, sprinkle flour and place dough on it.
  • Knead dough gently 3 or 4 times, then let it rest for a minute or two.
  • Roll dough to 1/4 to 1/2 thick.
  • Cut rounds using biscuit cutter or an empty glass.
  • Place on baking and bake 7-10 minutes or until golden brown on top.

1 cup baking and pastry flour
1 cup all-purpose flour
1 tablespoon baking powder
1 pinch salt
3/4 cup unsalted butter, cold and diced
2 eggs
1/4 cup cream
1/4 cup buttermilk
1/2 cup fresh chives, finely chopped
3/4 cup old cheddar cheese, grated

Steps:

  • PREHEAT oven to 375°F.
  • MIX dry ingredients in bowl. Crumbling butter into mix. Using your hands, work mixture until it resembles cornmeal. Stir in cheese and chives.
  • WHISK egg, cream and buttermilk. Pour into the flour mixture and combine until the dough forms a ball.
  • LIGHTLY flour a work surface and roll out dough anywhere from 1/2-inch to 1-inch thickness. Using a cutter, cut biscuits from dough.
  • ARRANGE on parchment lined baking tray. Bake in oven for 20 to 25 minutes or until golden brown.

1 1/2 cups flour
2 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon cayenne pepper
3 tablespoons shortening
3 tablespoons butter
1 tablespoon chives, chopped
1 cup sharp cheddar cheese
1 1/4 cups cream

Steps:

  • Mix flour, baking powder, salt and cayenne together.
  • Cut shortening and butter into the flour but don't overwork - small butter pieces are fine.
  • Toss in chives and cheddar.
  • Toss in cream until it starts to come together but don't mix too much.
  • Bake at 375°F for 15 - 17 minutes and serve with sea salted butter and maple syrup.
